3/4 cup chopped onion
1 tablespoon olive oil
2 garlic cloves, minced
4 cups reduced-sodium chicken broth
2 medium potatoes, peeled and cubed
1/4 teaspoon salt
1/4 teaspoon pepper
1 bunch kale, trimmed and chopped
1 can (15 ounces) cannellini beans, rinsed and drained
1/2 pound reduced-fat fully cooked Polish sausage or turkey kielbasa, sliced

Steps:

  • In a large saucepan or Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the broth, potatoes, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender. , Using a potato masher, mash potatoes slightly. Add the kale, beans and sausage; cook over medium-low heat until kale is tender.

2 tablespoon olive oil
8 ounce bulk Italian sausage
2 onions, chopped (about 2 cups)
1 teaspoon dried oregano, crushed
1 teaspoon fennel seeds
Kosher salt and freshly ground black pepper
2 Yukon Gold potatoes (1 lb), cut into 1-inch pieces
8 cup chicken stock from Whole Poached Chicken with Bonus Stock, or purchased chicken stock
1 bay leaf (optional)
1 15-16 ounce can cannellini beans, rinsed and drained
1 large bunch kale, stemmed and leaves torn (10 to 12 cups)
2 tablespoon red wine vinegar
Grated Parmesan cheese

Steps:

  • Heat oil in an 8-quart stock pot or Dutch oven over medium-high. Add sausage and break it up with a wooden spoon into bite-size pieces. Let sausage pieces cook without stirring until brown on the bottom, 2 to 3 minutes. Using tongs, flip sausage pieces over and leave them until cooked through and golden brown, 2 to 3 minutes more.
  • Transfer sausage to a plate lined with paper towels, leaving the fat and oil behind in the pan. Cover sausage with aluminum foil to keep in any moisture; set aside.
  • Return pot to medium and add onions, oregano, fennel seeds, 1 teaspoon salt, and 1 teaspoon pepper. Cook, stirring often, until the onions are translucent and soft, 10 to 12 minutes. Add potatoes, stock, and, if desired, bay leaf. Cover and bring to boiling over high heat, then reduce to a simmer and cook until potatoes are fork-tender, 8 to 10 minutes.
  • Stir in beans, kale, and reserved sausage. Cook until beans are heated through. Fish out bay leaf, stir in vinegar, and season with salt and pepper.
  • Serve with a pile of freshly grated cheese on top.

1 pound kale, stems and center ribs discarded and leaves very thinly sliced

  • Prepare the kale and set it aside. In a medium pot. boil sliced potatoes until tender. Drain and set aside. In a large pot, crumble and brown the Italian sausage. Drain as much as the fat as you can. Stir in the red pepper flakes, oregano, chicken broth, milk, and half-and-half. Simmer for 30 minutes.Give it a taste and adjust seasonings as needed. 1 cup onion, diced

1 Thai red chili pepper, minced

1 baking potato, diced

1 (15 ounce) can Rotel tomatoes & chilies
3 bay leaves
1 teaspoon dried thyme
1/2 teaspoon saffron (adds great flavor) (optional)

Steps:

  • Crumble sausage in a large soup pot or dutch oven, cast iron if you have it, and cook over medium heat until no longer pink. Stir in onion, garlic and chili pepper and cook until translucent taking care not to let them brown. Depending on your sausage, you may need to add a bit of extra virgin olive oil.
  • Add the kale and chicken stock- it will cook down rapidly so don't panic if it overwhelms your pot at first. Just give it a few minutes.
  • When the kale has cooked down a bit, add the tomatoes, potato, bay leaves, thyme and saffron. Let the soup simmer for about 30 minutes or until the potato is tender and the kale is cooked to the consistency you like.
  • Ladle into soup bowls and enjoy with crusty bread.

There are several varieties of kale but the one I used for this soup is called Lacinato Kale which is also known commercially as Dinosaur Kale, Tuscan Kale and Cavolo Nero. You may substitute some other variety but since each variety has a distinct flavor, your choice will affect the overall taste of the soup.Will sweet sausages work for this recipe? Yes, but I recommend substituting potato for the sweet potato because sweet sausages and sweet potato together might overpower the savory flavors in the soup.

4 cups chicken bone broth
1 large sweet potato
1 stalk celery
2 Spanish sausages
1 large bunch kale
1 tablespoon fried shallots
salt (to taste)
pepper (to taste)

Steps:

  • Pour the broth into a pot and start heating.
  • While waiting for the broth to boil, peel the sweet potato and cut into half-inch cubes.
  • Thinly slice the celery.
  • Cut the sausages into half-inch thick rings.
  • Cut the kale leaves horizontally into three to four pieces.
  • When the broth boils, add the sweet potato cubes, celery, sliced sausages, fried shallots and a sprinkle salt and pepper. Stir.
  • When the broth reaches boiling point once more, lower the heat, cover the pot and simmer for 15 minutes.
  • Taste the broth. If it needs more salt and pepper, add just enough to acquire a good balance.
  • Serve the kale, sweet potato and sausage soup at once.
