Animal-style skillet potatoes are diced potatoes cooked with a touch of Thousand Island dressing and topped with melted cheese and fragrant caramelized onions, a dish inspired by In-N-Out's (in)famous animal-style fries! Now, you can have the flavors of In-N-Out in the comfort of your own home - perfect as a side dish for breakfast, lunch or dinner!

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 medium yellow onion, finely chopped
4 tablespoons olive oil, divided
1/3 cup thousand island dressing
3 slices American cheese

Steps:

  • First, start caramelizing the onions: heat 2 tablespoons oil in a large skillet over medium heat for 1-2 minutes. Place the onions in the skillet and let cook, without stirring, for 5-8 minutes, until the bottom sides have started to brown. Once the bottom sides have started to brown, reduce the heat to low and continue cooking, stirring occasionally, until the onions are thoroughly browned, about 20 minutes.
  • After the onions have been cooking for about 15 minutes, start cooking the potatoes. Heat remaining 2 tablespoons oil in a separate skillet over medium heat for 1-2 minutes. Add potatoes and cook, covered, until the potatoes are easily pierced with a fork, about 15 minutes. Stir occasionally.
  • Stir the Thousand Island dressing into the potatoes and stir gently to coat. Tear each slice of cheese into four pieces and place on top of the potatoes. Place the lid on the skillet and cook 1-2 minutes, until the cheese has melted.
  • Top with caramelized onions and serve.

½ cup mayonnaise
½ cup sour cream
2 teaspoons prepared mustard
1 tablespoon ketchup
1 ½ teaspoons Worcestershire sauce
½ cup diced onion
salt and pepper to taste

Steps:

  • Mix together the mayonnaise, sour cream, mustard, ketchup, Worcestershire sauce, onion and salt and pepper. Refrigerate until ready to toss with potatoes.

This is an old Pennsylvania Dutch recipe I've always served as a side dish. The simple addition of onion and celery gives the potatoes a special flavor, and the parsley adds color.

1 large onion, finely chopped
2 to 3 celery ribs, finely chopped
6 tablespoons butter, cubed
2 slices white bread, torn
3 cups mashed potatoes
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 350°. In a large saucepan, saute onion and celery in butter until tender. Remove from the heat. Stir in the bread, potatoes and parsley. Spoon into a greased 1-qt. casserole. , Bake, uncovered, until top is lightly browned, 45 minutes.

1 (20 ounce) package Simply Potatoes Red Potato Wedges
1 cup caesar salad dressing, divided
2 romaine lettuce hearts, trimmed, cut in half lengthwise
1/2 cup shredded parmesan cheese
4 ounces pancetta or 4 ounces bacon, cooked and crumbled

Steps:

  • In 2 quart microwave-safe bowl combine Simply Potatoes and water. Cover; microwave on HIGH 5 minutes or until potatoes are fork tender. Drain water; place in large bowl. Pour over 1/2 cup salad dressing; stir to coat.
  • Heat grill to high. Place potato wedges and lettuce, cut sides down, on grill rack coated with cooking spray. Cook until grill marks appear, about 2 minutes per side.
  • Place lettuce on platter; drizzle with remaining salad dressing. Top with potatoes; sprinkle with Parmesan and pancetta.

  • In a medium saucepan mix all ingredients together.

1 teaspoon butter

  • In a saucepan, combine mustard, flour, butter, eggs, sugar, water and vinegar. Cook over medium heat stirring often until mixture becomes thick and smooth. Remove from heat and allow to cool.
  • Combine dressing mixture with creamy salad dressing, mix well. Fold into cooked potatoes.

1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1/2 cup salted butter
6 slices day old bread, shredded
1 1/2 tablespoons bell seasoning
1 (10 1/2 ounce) jar onion gravy

Steps:

  • Make the potatoes as directed on package.
  • Cube butter and add to potatoes, mix until melted. Add Shredded Bread and Bell Seasoning. Mix by hand.
  • Place in deep baking dish. Pat down with finders. Make several deep slits in potato mix but inserting butter knife and moving side to side. Add the gravy to top of potato mix and let gravy get down in those slits.
  • Bake uncovered 30-40 minutes. Potatoes will be nice and fluffy, Golden brown top,.
