2 cups pancake mix
½ cup butter, melted
3 eggs, divided
½ tablespoon dried basil
½ tablespoon dried oregano
½ teaspoon garlic powder
⅓ cup mini pepperoni slice
1 cup shredded mozzarella cheese
1 cup milk, of choice
18 cherry tomatoes, or grape tomato
2 tablespoons heavy cream
2 tablespoons grated parmesan cheese
marinara sauce, for serving

Steps:

  • Preheat oven to 350°F (190°C).
  • In a medium bowl, add the pancake mix, butter, and 1 egg and mix until combined.
  • Press about 1 tablespoon of dough into a greased 12-portion muffin pan.
  • Sprinkle basil, oregano, garlic powder, pepperoni, mozzarella cheese, and tomatoes over the dough.
  • In a large measuring cup, whisk together 2 eggs, milk, and heavy cream. Pour mixture over the other ingredients in each muffin slot. Top with parmesan cheese.
  • Bake 20-25 minutes, or until golden brown.
  • Cool for 5 minutes.
  • Serve with marinara sauce for dipping.

1 package refrigerated pizza dough
1 jar pizza sauce
4 tablespoons butter, melted
1 teaspoon garlic salt
1 tablespoon Italian seasoning
2 cups pizza toppings of choice
2 cups Mozzarella cheese, shredded

Steps:

  • Preheat oven to 375°F.
  • Grease a 12-cup muffin tin with non-stick cooking spray.
  • Unroll the refrigerated pizza crust and slice in 12 even sections using a pizza cutter.
  • Take one piece of the dough and flatten out in the palm of your hand. Press the dough into a muffin cup, pressing it up the sides as much as you can. Repeat until each muffin tin is filled with dough, set aside.
  • In a small bowl, combine the melted butter, garlic salt and Italian seasoning. Using a pastry brush, spread the butter mixture over the dough.
  • Put 1-2 tablespoons of pizza sauce into each dough cup. *If the dough slides down the sides, adjust as necessary.
  • Sprinkle your pizza toppings, except the cheese.
  • Bake the pizza muffins for 15 minutes.
  • Add 1-2 tablespoons of cheese on top of each pizza muffin and continue to bake for 10 minutes or until the cheese is browned and bubbly.

10 tablespoons pizza sauce (such as Ragu® Homestyle)
10 slices pepperoni
10 tablespoons shredded mozzarella cheese, or as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spray 10 muffin cups with cooking spray.
  • Press biscuits, one at a time, between hands to flatten. Place each flattened biscuit in a muffin cup; press into bottom and up sides of muffin cup. Set aside for biscuit to settle and slightly rise, about 5 minutes. Lightly press biscuits into cups as needed.
  • Spoon 1 tablespoon pizza sauce into each biscuit; top each with 1 slice pepperoni and 1 tablespoon mozzarella cheese.
  • Bake in the preheated oven until biscuit is lightly browned and cheese is melted, about 10 minutes. Remove each pizza from tin and place on a cooling rack, about 5 minutes.

Steps:

  • Add the red pesto, grated cheese, cherry tomatoes, pepperoni, spring onion and oregano and mix again.
  • Finally add the flour and mix just enough until all the ingredients have combined.
  • Divide the mixture between the 12 muffin cases. I find it much easier to use an ice cream scoop to do this.
  • Bake the muffins in the oven for 20-25 minutes until a skewer stuck in the middle comes out dry.

  • Whisk together the flour, baking powder, baking soda, salt, and oregano in a medium bowl to combine.
  • In a large bowl, beat the eggs, olive oil, buttermilk, maple syrup, and 1 cup of the marinara sauce, and stir. Add the mozzarella and stir to combine. Slowly stir in the dry mixture until just combined. Do not overbeat.

1 cup mozzarella cheese (shredded, plus extra for sprinkling)
1/2 cup mini pepperonis
1/2 cup sausage (cooked, crumbles)
1 cup pizza sauce ( or marinara sauce)

Steps:

  • Preheat oven to 400 degrees and spray a mini muffin tin generously with cooking spray. Remove pizza crust from tube and unroll it. When unrolled, the dough will be in a smallish rectangle. Cut in half and roll the first half out on a lightly floured surface to approx. 10" x 14". The dough will be very thin. Using a 3 1/4" cutter, cut 12 circles out of the dough. Place a circle in the muffin tin creating a fluted edge that sticks up a bit above the top of the cup. Repeat with the remaining 11 circles then repeat the entire process with the remaining dough. You will now have dough in all 24 cups.
  • In a large bowl, stir together the shredded mozzarella, pepperoni, sausage and pizza sauce until well combined. Spoon about a heaping tsp of filling into the center of each pizza crust, dividing the entire amount evenly among the cups.
  • Bake 10-12 minutes or until cheese is melted and crust is golden brown. Remove from oven and allow to cool 5 minutes before serving. Enjoy!

Made with my 10 minute no knead no rise pizza dough, these Easy Pizza Muffins are perfect little snacks. Eaten warm or cold, they are great to pop into lunch boxes.

½ Tablespoon instant dry / fast acting yeast
½ Tablespoon sugar
¾ cup warm water 110°F / 32°C
¾ teaspoon salt
1 Tablespoon oil
2 cups all purpose flour
1 to 2 tablespoons cornmeal / polenta or semolina for dusting baking trays. (optional SEE NOTE 1)
Grated cheese and filling of your choice SEE NOTE 2
2 teaspoons oil
1 small onion diced
1 small red or green bell pepper diced
1 can diced or pureed tomatoes or 3 tomatoes peeled and finely chopped or blended until smooth
1 teaspoon tomato paste OR thick tomato sauce / ketchup
¼ teaspoon cayenne pepper
1 teaspoon mixed dried herbs use your favourite mix SEE NOTE 1
Salt to taste

Steps:

  • FOR THE PIZZA DOUGH
  • Start by making the pizza dough.
  • Warm the water in the microwave or kettle. It should not be boiling, just lukewarm. Add in the oil and mix
  • In a large bowl, sift in the all purpose / cake flour. Add in the instant / fast acting yeast, sugar and salt and stir to combine.
  • Make a well in the center of the dry ingredients and pour in the warm water and oil mixture.
  • Using a spoon or your hands, just mix together, to form a soft dough. Do not knead the dough, just gather it together until it is well combined and soft.
  • Leave covered to rest for 10 minutes. During this time, I usually prepare the toppings and sauce for the pizza muffins. You can either use bottled pizza sauce, make your own, or try out my favorite pizza sauce recipe.
  • Grease the muffin tin with a little butter.
  • After 10 minutes, roll out your pizza dough to about 5mm thick. Using a 3 ½ inch / 10cm cutter, cut 12 rounds from dough. Line each mold of the greased pan with dough rounds, pushing into pan to come 3/4 up side of each mold.

  • Preheat the oven to 375 degrees F and grease a standard muffin tin well with nonstick spray.
  • Add the milk, carrot, cheeses, butter, pepperoni (reserving the 2 tablespoons), and egg to a medium bowl. Stir together.
  • Stir in the flours, baking powder, baking soda, pizza seasoning, and salt.
  • Divide batter among the prepared muffin tin, using about 1/4 cup in each. Top each with pepperoni.

Baking powder 1 ¼ tsp
Mozzarella cheese 8 oz
Tomato puree ½ cup
Extra virgin olive oil to taste
Oregano to taste

Steps:

  • When making pizza muffins , your first job is to take care of the dough 1 : Combine flour, baking powder, and salt 2 , then slowly add the water and mix with your hands 3 .
  • Always knead by hand 4 and when all the water is absorbed, transfer the dough to a pastry board and roll it into a ball 5 . Your next job is the filling: Cut the mozzarella into cubes 6 ,
  • then pour the tomato passata into a bowl and season with oil 7 , salt 8 , and oregano 9 . Stir to combine the flavors.
  • Go back to your ball of dough, sprinkle a little flour over the work surface and roll out into a slightly oval shape 10 with a rolling pin. Your aim is to achieve a thickness of approximately ½ inch (1 cm) 11 . Begin to spread the tomato passata over the surface of the dough with a spoon 12 , adding approximately 2 tablespoons to each side.
  • Once you have added all the topping, fold the pastry over starting from the side closest to you 13 and roll it up (14-15).
  • Transfer the roll to a chopping board and cut 12 mini rolls using a large, very sharp knife. (16-17). Grease a mold for 12 muffins 18 .

¼ cup heavy cream (2 fl oz/60ml)
1.80 oz cherry tomatoes (50g)
⅓ cup defatted almond flour (1.4 oz/40g)
2 tbsp melted butter (1.1 oz/30g)
2 eggs
1 tsp baking powder
1 tsp basil
½ tsp oregano
⅛ tsp garlic powder

Steps:

  • Preheat your oven to 350°F/180°C.
  • Dice the tomatoes and put them in a large bowl. Cut the mini pepperoni into small slices and save about 5 pepperoni slices per muffin - these will be used to decorate the pizza muffins before baking. Add the remaining pepperoni slices to the large bowl as well.
  • Add the dry ingredients to the bowl and mix well.
  • Now add the remaining ingredients for the muffins and mix everything with a spoon or spatula until you get an even dough.
  • Add 6 paper or silicone muffin liners into a muffin pan. Distribute the muffin batter evenly among the muffin liners. ☝︎ A silicone muffin pan is even better as you don't need muffin liners at all and it is also super easy to clean.
  • Place the pepperoni slices you set aside in step 2 on top of your pizza muffins.
  • Bake for approx. 15 minutes in your preheated oven.
  • Let the finished low carb pizza muffins cool slightly before enjoying them.
  • Storage:
  • Store the keto pizza muffins in an airtight container in the fridge - the muffins will keep for about 2-3 days before they start to dry out a bit. Tip: You can freeze these muffins! To do so, wrap them tightly with a layer of plastic wrap and then a layer of aluminum foil and place them in your freezer. Let them defrost at room temperature for a few hours once you're ready to eat them.

  • In a medium bowl, whisk together eggs and milk, and stir into dry ingredients just until combined. Mix in 1 c. cheese and additional ingredients.

Steps:

  • Preheat oven to 350℉ and line a muffin tin with 12 paper liners.
  • Place grated carrot and zucchini in a clean kitchen towel or paper tower and squeeze out as much moisture as you can.
  • To a large bowl, add carrot, zucchini, chopped spinach, egg, oil, milk, and tomato paste. Whisk to combine. Mix in garlic powder, dried oregano, baking powder, baking soda, and salt.
  • Add flour and mix in with a large spoon or rubber spatula. Mix in 3/4 cup of shredded mozzarella and most of the pepperoni, leaving some to decorate the top of the muffins.
  • Evenly divide the muffin batter between the muffin tin. Top each muffin with a sprinkle of the remaining ½ cup of cheese and a few pieces of pepperoni, if using.
  • Bake until a toothpick interested into the center of the center of a muffin comes out clean, 18 to 22 minutes.
  • Allow muffins to cool in the pan for 5 minutes then transfer to a cooking rack to cool completely. Store muffins in an air-tight container in the fridge for up to 5 days or in the freezer for up to a month.

  • Place in a preheated oven and allow to bake for 20-25 minutes or until a skewer inserted comes out clean.
  • Remove from the oven then allow to cool for 5 minutes and carefully remove the muffins from the pan. Allow to cool for another 10-20 minutes then serve warm.

Steps:

  • Preheat the oven to 220C/Fan200C/Gas 6.
  • Mix all Dry Ingredients togeather in a big bowl:
  • Flour, Baking Powder & Salt.
  • Mix all Wet Ingredients togeather in bowl/jug (I prefer using a jug, as easier for pouring later on): Veg Oil, Milk & Eggs
  • In a separate bowl mix all Pizza ingredients: Pizza Topping, Grated Cheese, Dried Oregano, Black Pepper & Fresh Basil.
  • Then roughly mix the Wet & Pizza Ingredients in with the Dry Ingredients. Do not over mix the Ingredients. Muffin mix is suppose to be lumpy & goopy & it should fall off the spoon in globs.
  • Once mixed spoon into muffin cases, fill fairly high up the cases but do make sure you have enough Muffin Mix for 12. Bake for 20mins on top shelf.
  • Remove from oven after 20mins & start placing the toppings on. Spread some Pizza topping on the muffin, then place a slice of tomato on top & finish with a small cube of cheese. Repeat for all 12 muffins & return to the oven for 5 mins/until cheese has melted.
  • Once cooked, leave in tray for 5mins to cool then transfer to a cooling rack for 10/15mins. I prefer to serve mine while still warm but can be served at room temp.
