Caribbean Jerk Chicken and Pineapple Salsa is just the dish you need to transport you to somewhere tropical even if you can't quite yet get there in real life. Starting with a sweet/spicy/tangy marinade and ending with a delicious, slightly spicy pineapple salsa, this dish is delish start to finish!

4 boneless skinless chicken breasts (pounded to even 1/2 inch thickness - see note)
steamed white rice for serving (optional)
⅓ cup olive oil
juice of 2 limes (2-3 tablespoons)
2 teaspoons minced garlic
2 tablespoons soy sauce
1 teaspoon onion powder
½ teaspoon nutmeg
3 teaspoons allspice
½ teaspoon crushed red pepper flakes
1 tablespoon honey
1 cup diced pineapple
½ onion (diced)
handful cilantro (roughly chopped)
1 jalapeno (diced, optional)
juice of 1 lime
2 teaspoons honey
salt to taste

Steps:

  • In a medium bowl stir together all marinade ingredients. Add the chicken, toss to coat. Cover and chill for 30 minutes.
  • While the chicken is marinating, combine all salsa ingredients in a bowl and toss to combine. Optional: combine in a blender or food processor and give it a few pulses. Chill until ready to use.
  • Use tongs to transfer chicken to a preheated grill or skillet over medium heat (discard marinade) and cook for 6-8 minutes on each side until cooked through.
  • Serve chicken with pineapple salsa.

Can't be in the tropics but you'll feel like you are when you're enjoying this salsa made with tropical fresh sweet mangoes, papaya, crisp red peppers and ginger mixed with aromatic spices and herbs topping the grilled jerk chicken that is well seasoned with the same mixture of herbs and spices.

2 lbs chicken breasts
1 teaspoon olive oil
1 lime, juice and zest of
2 1/2 ounces minced red onions
2 -3 garlic cloves
1 tablespoon grated gingerroot
1/3 cup minced fresh parsley or 1/3 cup minced fresh cilantro
1/2 tablespoon fresh thyme leave
1/2 teaspoon grated nutmeg
1/4 teaspoon hot red pepper flakes
1/4 teaspoon scotch bonnet pepper, minced (optional)
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon cumin
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1 lb diced fresh papaya (two cups)
1 mango, peeled cored and diced
1/2 cup diced red pepper

Steps:

  • Mix the Spice Mixture in a mini food processor pulsing to a chunky mixture. Or finely chop all together.
  • Coat chicken with 1 1/2 tablespoons of mixture rubbing in and marinade for 1/2-1 hour in refrigerator.
  • Add the rest of the spice mixture to the salsa ingredients. Chill.
  • Heat grill to medium high.
  • Rub the chicken with the oil.
  • Place on hot grill and cook 4-5 minutes pre side till done. Depending on how thick the breasts are. May be pan fried or broiled as well.
  • Plate chicken and top generously with salsa.
  • Serve with rice or on a bed of salad greens.

2 medium chicken breasts, boneless and skinless
2 tablespoons prepared jerk seasoning
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons olive oil
4 cups sushi rice, prepared according to package directions
4 sheets of nori (seaweed)
2 tablespoons black sesame seeds (or substitute regular sesame seeds)
1/2 mango, sliced into strips
1/2 avocado, sliced into strips
1/4 English cucumber, peeled and sliced into very thin strips
2 tablespoons pickled ginger
Jamaican steak sauce (recommended: Pickapeppa Sauce)

Steps:

  • Rub the chicken breasts with the jerk seasoning, salt, and the black pepper. In a medium saute pan, add the olive oil, and place it over high heat. When the oil is almost smoking, add the chicken breasts, turn the heat down to medium-high and continue searing on both sides until the chicken is golden brown and thoroughly cooked, about 4 to 5 minutes per side. Transfer the chicken from the pan to a cutting board and let the chicken cool. When it's cool enough to handle comfortably, slice the chicken breasts into 1/4-inch strips.
  • Cover a bamboo mat or sheet of foil with plastic wrap. Place a sheet of nori on top. With water-moistened hands, spread 1 cup of the cooked rice evenly on top of the seaweed leaving about a 1/4-inch border at the top and bottom edges. Press the rice firmly on the nori. Leaving the plastic wrap in place on the mat, turn the sushi layer over so that the seaweed faces up and the rice faces down.
  • Arrange 1/4 of the chicken strips, mango and avocado slices, and cucumber on top the seaweed so the ingredients form a neat narrow row that aligns with the edge of the nori square closest to you. Roll the bamboo mat forward (making sure the plastic wrap stays with the mat), pressing the ingredients inside the cylinder-shaped sushi. Press the bamboo mat firmly with both hands to shape the sushi, and then remove the mat. Repeat the process with remaining ingredients to make three more rolls. Place the sesame seeds on a plate. Roll the sushi in the sesame seeds until coated. Using a sharp serrated knife, moistened with water, cut the sushi rolls into 1-inch rounds. Serve the rolls with soy sauce and wasabi or with the Avocado Tzatziki.

This is a great Caribbean shrimp dish that I wanted to get on Zaar for the Caribbean. This recipe comes from Walter Scheib, former White House Chef. The warm fruit salsa is a perfect accompaniment & adds to the flavor of this wonderful dish.

1/3 cup olive oil
2 tablespoons garlic, chopped
1 tablespoon gingerroot, chopped
2 tablespoons lime juice
2 teaspoons dark rum
2 teaspoons lime zest
1/4 cup cilantro, chopped
1/4 cup Italian parsley, chopped
1 teaspoon chili paste
2 teaspoons cumin
1 teaspoon coriander
salt and pepper, to taste
16 large shrimp, peeled & deveined
1 tablespoon olive oil
1 tablespoon garlic, chopped
1 teaspoon jalapeno, chopped
2 ounces julienne red onions
2 ounces julienne tomatoes
2 ounces sliced mangoes
2 ounces sliced pineapple
2 ounces sliced bananas
1/2 tablespoon cumin
1/2 tablespoon coriander
1 ounce lime juice
hot sauce (to taste)
1/4 cup cilantro, chopped

Steps:

  • In a large bowl- combine all ingredients except shrimp & set aside.
  • Go ahead & preheat your grill to medium heat.
  • Toss shrimp in baste mix & grill on lightly oiled grill. Turning once, cook 4 minutes on each side.
  • Baste shrimp once more before serving.
  • Serve on top of warm fruit salsa.
  • Warm Fruit Salsa:.
  • In sauté pan over medium heat- sauté oil, onions, garlic and jalapeños for 2- 3 minutes.
  • Add fruit and tomatoes, cooking for 2 - 3 minutes, don't stir or over-mix as fruit will break up.
  • Add cumin, coriander, lime juice & hot sauce. Cook 1 - 2 minutes, the fruit should be warm, not mushy.
  • Add chopped cilantro when ready to serve.
  • Serve on top of warm fruit salsa.

4 (8 ounce) mahi mahi fillets (can sub tilapia or cod)
2 tablespoons canola oil
caribbean jerk seasoning (I used Dry Jerk Seasoning)
1 cup fresh pineapple, diced
1 cup fresh mango, diced
1 cup fresh papaya, diced
1/4 cup finely chopped cilantro
1 tablespoon grapefruit juice, can sub lime juice
1 tablespoon white rum
1 scotch bonnet peppers or 1 habanero pepper
1/4 cup finely chopped red onion
1 -2 teaspoon honey
1 garlic clove, finely minced
salt and pepper
8 soft flour tortillas or 8 soft corn tortillas
2 avocados, thinly sliced with
1/2 lime, juice of
2 cups red cabbage, finely shredded
1 cup jicama, finely julienned
2 cups sour cream
1 teaspoon fresh lime juice
1 teaspoon fresh lime zest
cilantro (to garnish)

Steps:

  • Brush fillets with canola oil and sprinkle evenly both sides, with jerk rub seasoning.
  • *Use 1 teaspoons seasoning per side per each fillet. More or less to taste.
  • Rub into fish evenly to coat.
  • Place fillets on hot grill and grill 3-5 minutes per side or til done and flakes easily with a fork.
  • Warm tortillas on grill.
  • Cut fillets into chunks, or coarsely shred with a fork.
  • Divide fish evenly onto 8 warmed tortillas.
  • Top each with fruit salsa, a slice of avocado, shredded cabbage, jicama, and top with lime sour cream.
  • Lime sour cream:.
  • Mix sour cream, lime juice and zest in small bowl.
  • Garnish with additional cilantro if desired.
  • *Note: If scotch bonnet or habanero peppers are too hot for your tastebuds, a red jalapeno can be substituted! They are actually quite mild.

2 tablespoons brown sugar
2 tablespoons reduced-sodium soy sauce
1 envelope Italian salad dressing mix
1 teaspoon dried thyme
1 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
4 chicken leg quarters

Steps:

  • In a large resealable plastic bag, combine the first seven ingredients. Remove skin from chicken; if desired, use a sharp knife to cut through the leg quarter joints. Add chicken to marinade; seal bag and turn to coat. Refrigerate at least 2 hours., Drain chicken, discarding marinade. Place chicken on greased grill rack; cook, covered, over medium heat 35-45 minutes or until a thermometer reads 170°-175°, turning occasionally.

This is a great recipe from Crisco (slightly modified). The recipe should be started about 45 minutes to an hour before the grill is ready to allow enough marinade time (not included in prep time).

1 (8 ounce) can pineapple tidbits
1/4 cup vegetable oil
2 tablespoons lime juice
1 teaspoon garlic, minced
1/4 teaspoon crushed red pepper flakes
1 teaspoon sugar
4 chicken breast halves (boneless, skinless)
1/4 cup red pepper, diced
1/4 cup red onion, minced
1 small jalapeno pepper, minced
2 tablespoons cilantro, chopped
salt and pepper, to taste

Steps:

  • Drain pineapple juice into a 1-cup measuring cup. Add oil, lime juice, garlic, red pepper flakes and sugar. Mix well to make the marinade. Place chicken in a large resealable food storage bag. Pour all but 1 tablespoon of marinade over the chicken. Seal bag. Refrigerate 30 to 45 minutes.
  • To make salsa, combine pineapple, red pepper, red onion, jalapeño pepper, cilantro and reserved 1 tablespoon marinade in a medium-sized serving bowl. Toss well. Season with salt and pepper to taste.
  • Heat grill to medium. Remove chicken from marinade. Discard marinade. Season chicken with salt and pepper. Grill, turning once, for 10 to 15 minutes or until cooked through and juices run clear. Serve with pineapple salsa.
