POTATO AND CHEESE MINA (PASSOVER MATZO PIE)



Potato and Cheese Mina (Passover Matzo Pie) image

This simple & delicious recipe is from New York's much-loved "Capsouto Frères Restaurant". Mina is a traditional Sephardic Passover pie. It can be prepared a day in advance and kept refrigerated. Reheat in 325ºF oven for 10-15 minutes.

1 idaho potato
6 eggs
salt and pepper
1/4 teaspoon ground nutmeg
6 ounces grated parmesan cheese (about 1 1/2 cups of freshly grated cheese)
3 matzos
2 eggs
1/4 cup milk
3 tablespoons olive oil
warm water, salted

Steps:

  • Peel and dice potato. Place in a medium pot with enough cold water to cover. Bring to boil and cook until soft. Strain and pass potato through a food mill. Set aside to cool.
  • In a large bowl mix mashed potato with 6 eggs, seasonings, and 4 ounces cheese.
  • Preheat oven to 350ºF. Beat two eggs in a large bowl with milk and 1 Tablespoon olive oil. Place warm salted water in a hotel pan or other container large enough to fit whole matzo board. Briefly soak each matzo in water. Dry each matzo and then dip into egg mixture. Heat a large sauté pan with olive oil. Sauté both sides of one matzo until golden brown. Repeat with remaining matzo. Leaving one piece of sautéed matzo in hot pan, place half of potato and cheese mixture on top, then place second piece of matzo over filling. Cover with remaining half of mixture. Place last matzo on top and sprinkle with 2 ounces of cheese. Bake for about 15-20 minutes or just until set. Remove from pan and allow to cool slightly. Serve warm.

  • Preheat oven to 350°F. Butter bottom and sides of a 3-qt. rectangular baking dish; set aside. In a large skillet melt 3 tablespoons butter over medium. Add leeks, shallots, and a pinch of salt. Cook about 10 minutes or until softened, stirring occasionally. Add spinach, garlic, and oregano. Cook 2 to 3 minutes or until spinach is wilted. Remove from heat; let cool slightly.
  • In a medium bowl whisk together three eggs, the cottage cheese, feta, milk, lemon zest, 1/2 tsp salt, and a generous amount of black pepper.
  • Fill a shallow baking dish with warm water. Dip 3 sheets of matzo in water; let matzo soften 2 to 3 minutes. Shake off excess water. Arrange matzo sheets in bottom of prepared baking dish, breaking matzo to fit if necessary. Cover with half the cheese mixture then half the leek mixture. Repeat with three more softened matzo sheets and remaining cheese and leek mixtures.
  • Soften remaining three sheets of matzo; arrange on top. In a small bowl whisk remaining egg; brush over top.

  • 1. Make the filling first: wash the spinach and remove any hard stems. Drain and squeeze the excess water out, then put the spinach in a pan with a tight-fitting lid. Steam for a minute or two, until the leaves collapse into a soft mass. (You might need to do this in batches.) Mix the spinach, including the green juice, with 3 eggs (beaten) and the cottage cheese. Season with salt, pepper and nutmeg.
  • 2. For the crust: dip 4 – 5 matzo squares in the milk until only just softened and fit 2 layers on the bottom and sides of a 30 cm (12 inch) shallow oiled baking dish. Cover with the spinach filling. Soak the remaining matzo sheets in milk and arrange in 2 layers on top. Beat the remaining eggs with what is left of the milk and pour all over the pie.

  • Preheat oven to 350 degrees F and grease a 9x9 square baking dish. If the artichoke hearts are whole, halve them. Heat the olive oil in a large skillet over medium/high heat. Sauté the artichokes hearts until browned, then remove from heat and set aside.
  • In a large mixing bowl, combine cottage cheese, spinach, scallions, dill, lemon zest, and crushed red pepper. Crumble feta cheese in slowly, a handful at a time, tasting as you go-- the filling should be creamy and tasty with a hint of salt and tang. Fetas vary in saltiness level, I sometimes use the whole amount listed in the ingredients-- other times, I only add half. You don't want to add too much and risk an over-salty dish. If you add all the feta and it's not salty enough, add more salt to taste. Once filling has a good flavor balance, beat two of the eggs and stir those in as well. Mix until well combined.
  • Soften your matzo by placing each sheet in a dish of water until it just begins to soften, but does not become mushy.
  • Place the softened matzo on a dish towel for 5 minutes, then check to make sure that it is slightly bendable. If not, you may need to soak it a little longer.
