DANISH BREADED PORK PATTIES
This traditional dish is in Danish called Karbonader or sometimes Krebinetter. I have always called them Krebinetter. However, I must confess after having searched around the internet I think the most common name for this dish is Karbonader. The word Karbonader can't be translated into English but they can be called Danish Breaded Pork Patties. I am not sure if this dish was originally invented in Denmark. However, it has always been a popular and traditional dish on the Danish dinner table.

Steps:
- 1. Start by dividing the meat into 5 portions of about 100 g each (or 1/5 lb each) and shape them into circular thick patties. 2. In a deep plate; beat the egg together with the water. 3. In a second plate; mix the bread crumbs together with salt and pepper. 4. Now dip the pork patties in the egg mixture and then in the breadcrumbs. Make sure the entire patty is covered with breadcrumbs. One time should be enough but if you like a thicker layer of breading - then repeat this step one more time. 5. On a frying pan; add the butter and fry the breaded pork patties for about 5-8 minutes. Flip them over from time-to-time.
FRIKADELLER - DANISH MEATBALLS
Recipe for frikadeller - Danish meatballsFrikadeller is Danish meatballs, and probably one of the most traditional Danish dinner recipes. You can serve frikadeller with potatoes and gravy, baked root vegetables, a salad or the sides you like the best.

- All ingrediens for the meatballs (all except butter and oil) is mixed in a bowl.
- The meatballs are shapes in the desired size and fried in a pan on middle heat in a mix of oil and butter for approx. 10-12 minuts. Turn them over when half of the time is up.
- They should be nicely brown but not burned.
- Serve with boiled potatoes and stewed cabbage or on a piece of rye bread.

DANISH FRITTERS
These tasty little morsels are similar to a pikelet or flapjack and a fantastic use for leftover rice. My 19 month old daughter likes these with cream cheese but they are also good with jam or honey. Would make a great healthy lunchbox treat too!

DANDELION FRITTERS
These wild springtime blossoms have a mild, slightly bitter flavor.

- When picking dandelions, pinch blossoms off from top of stems. Fill a medium bowl with 4 cups of cool water. Add 1 teaspoon salt and lemon juice. Place dandelions in the bowl and push them down into the water several times to clean them. Drain dandelions upside down on paper towels.
- In a medium bowl, sift together flour, cornmeal, remaining 1/4 teaspoon salt, pepper, and chile powder. Add thyme, and mix well. In a small bowl, whisk together egg and milk. Pour egg mixture into flour and stir until well combined to form a batter.
- Pour 1 inch of oil into a 9-inch cast-iron skillet. Heat oil to 375 degrees. Gently dip each flower into batter. Carefully place in hot oil; do not crowd. Fry until golden, about 2 minutes, turn, and fry 1 more minute if necessary. Drain on paper towels. Salt lightly. Serve hot as hors d'oeuvres or a side dish.

- Apple Cream - Æblecreme:.
- Beat egg white until stiff, then fold in applesauce.
- Whip cream and fold in, then sprinkle cinnamon and nutmeg over the mixture.
- Rum Sauce:.
- Beat the eggs until lemon-colored and frothy, now add the powdered sugar gradually, beating continually until all sugar is used.
- Whip cream and add with the rum to the above mixture, folding in gently at first and then beating well.
- Fritters:.
- Peel, core and slice apples and place in a bowl and pour the cognac over them and cover tightly.
- Beat the egg yolk and mix with the milk and sugar, make sure to mix really well.
- Sift the flour into the egg-yolk mixture and add the salt and baking powder and stir well.
- Beat egg white until stiff and fold into the egg yolk mixture.
- Dip the apple slices in the batter and fry in deep fat heated to 365 degrees for 2 to 4 minutes, or until golden brown on both sides.
- Dust with powdered sugar while warm.
- To make these fritters even more delicious, serve them topped with Rum Sauce or Apple Cream.
