This is ground beef and onions covered with tater tots, creamy mushroom soup and shredded Cheddar cheese. Even picky eaters love it!

1 pound ground beef
1 onion, chopped
salt and pepper to taste
½ (32 ounce) package tater tots
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup milk
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium-high heat, brown the ground beef with the onions. Drain excess fat, and season with salt and pepper to taste.
  • Spread the beef mixture evenly over the bottom of a 2 quart casserole dish. Arrange tater tots evenly over beef layer. In a small bowl, stir the soup into the milk until smooth; pour over tater tot and beef layers. Sprinkle Cheddar cheese evenly over the top.
  • Bake in preheated oven for 30 to 40 minutes, until cheese is bubbly and slightly brown.

1 sweet potato, diced
1 pound sausage
½ cup chopped onion
½ red bell pepper, diced
1 cup sliced fresh mushrooms
1 cup torn kale leaves
salt and ground black pepper to taste
5 eggs
⅓ cup water
1 teaspoon dried thyme, or to taste
1 green onion, diced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat olive oil in a large skillet over medium heat. Add sweet potato; cover and cook, stirring occasionally, until tender, 8 to 10 minutes. Transfer to a large bowl.
  • Cook and stir sausage in the same skillet over medium-high heat until crumbled and browned, about 5 minutes. Add to the sweet potato in the bowl.
  • Cook and stir onion and red bell pepper in the same skillet until tender, about 3 minutes. Season with salt and pepper. Add mushrooms and kale; cook until kale softens, about 3 minutes more. Transfer to the bowl.
  • Whisk eggs, water, thyme, salt, and pepper together in a small bowl. Stir into the sausage mixture. Pour into a large baking dish.
  • Bake in the preheated oven until sweet potato starts to brown, 20 to 25 minutes. Let stand for 5 minutes. Garnish with green onion.

garlic salt

aluminum foil

Steps:

  • Skin and dress young possum, sprinkle with salt and pepper, worcestershire sauce and garlic salt and place into large stockpot or roasting pan.
  • Preheat oven to 350°F.
  • Put potatoes around possum and add 1 inch water.
  • Completely cover pan with foil.

  • Place in a hot oven and bake until taters are fork tender light brown, and juices from possum has cooked away.

3 pounds sweet potatoes, peeled and cubed

1 cup sour cream
1/4 cup shredded Colby-Monterey Jack cheese
1/3 cup 2% milk
1/4 cup shredded Parmesan cheese

TOPPING:
1 cup shredded Colby-Monterey Jack cheese
1/2 cup chopped green onions

Steps:

  • Place russet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 10-15 minutes. , Meanwhile, place sweet potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 10-15 minutes. Drain; mash with half of the cream cheese and sour cream and all of Colby cheese. , Drain russet potatoes; mash with the remaining cream cheese and sour cream.
