PORTUGUESE KALE SOUP

4 tablespoons schmaltz
1 large yellow onion, diced
8 cloves garlic, minced
1 1/2 pounds smoked linguica sausage, sliced into rings
2 1/2 pounds kale, washed, stemmed and cut into chiffonade
2 1/2 pounds kale, washed, stemmed and cut into chiffonade
Kosher salt and coarsely ground black pepper
1 gallon Rich Chicken Broth, heated, recipe follows
12 ounces dried red kidney beans, soaked overnight
2 extra-large Idaho potatoes, peeled and cut to medium dice
7 to 8 drops hot sauce, such as Tabasco
2 whole organic chickens (3 to 4 pounds each), breasts removed for another use
2 pounds yellow onions, chopped
1 pound celery, chopped
3 sprigs thyme
2 to 3 bay leaves
1 carrot, chopped
1 bulb garlic, halved
1 bunch parsley
1 tablespoon whole black peppercorns

Steps:

  • Heat a deep soup pot set over medium heat. Add the schmaltz to render, then add the onions and cover to sweat until soft, 7 to 8 minutes. Add the garlic, then cover and sweat, without browning, until soft, 4 to 5 minutes. Add the sausage and sweat, covered, until the mixture turns amber in color, 4 to 5 minutes. Add the kale, pushing it down to get it all in the pot. Season with salt and pepper. Cook uncovered, stirring occasionally until the kale cooks down by half, is incorporated into the onion-sausage mix and is covered with schmaltz, about 30 minutes.
  • Add the Rich Chicken Broth, stir well, then cover the pot and simmer for 1 hour.
  • Meanwhile, cook the beans. Drain the beans and place in a medium pot. Cover with fresh cold water, then cover and bring to a boil. Reduce the heat to medium-low and simmer until tender, 25 to 30 minutes.
  • Drain and add the beans to the soup. Add the potatoes to a medium pot set over medium-high heat and cover with cold water. Cook until almost cooked through (the potatoes will continue to cook after they're drained). Drain the potatoes then lay them out in single layer on a sheet tray and refrigerate to stop the cooking process.
  • When cool add the potatoes to the soup, bring back to a simmer and add the hot sauce. Serve hot.
  • Place the chickens in a large stockpot and add enough water to cover, about 2 gallons. Bring to a boil, skimming the scum as it surfaces.
  • When all the scum is removed and the stock is boiling add the onions, celery, thyme, bay leaves, carrots, garlic, parsley and peppercorns. Bring back to a boil, lower the heat to a slow boil, then cover and simmer until the flavor develops, 4 to 6 hours.
  • Cool the stock and refrigerate overnight allowing the flavors to marry.
  • Remove the fat (schmaltz) from the top of the broth to use in the kale soup. Strain the broth and use as you please! Yield: 1 1/2 gallons

HEARTY PORTUGUESE KALE SOUP

This is a very flavorful soup that is a comfort food for my family. The recipe was given to me by my Portuguese mil over 30 yrs ago. Her mother had passed it on to her. This soup is easily stretched to make more servings. The Chorizo gives the broth a good base for adding another can of beans or more pasta or a little water. Soul warming for a cold night, serve with a warm crusty bread. A great next day soup. Freezes well.

1 tablespoon olive oil
1 lb chorizo sausage (fresh not dried)
1 quart chicken broth
1 large onion, roughly diced
4 large potatoes, cubed
1 bunch kale, stemmed washed & chopped (abt. 1 lb.)
1 1/2 cups ditalini
1 (15 ounce) can dark red kidney beans
fresh ground black pepper
salt (optional)

Steps:

  • Remove casing from sausage and cut into smaller than bit sized pieces.
  • Heat oil in a heavy soup pot; saute the sausage& onion just until the fat is rendered, about 3 to 5 minutes.
  • Drain on paper towels.
  • Add other ingredients except kale,& pasta.
  • Bring to boil and simmer 10 minutes.
  • Add kale, and pasta and simmer about 8 minutes until both are tender.
  • Taste for seasoning- depending on how spicy your sausage is, add salt and pepper to taste.
  • Serve piping hot.

2 tablespoons (2 turns around the pan) extra-virgin olive oil
3 medium white waxy potatoes, like yukon golds, peeled and diced
2 medium onions, chopped
4 to 6 cloves garlic, chopped
2 bay leaves, fresh or dried
1 pound kale, coarsely chopped
Coarse salt and pepper
1 (15-ounce) can garbanzos (chick peas), drained and rinsed
1 can diced tomatoes
1 pound diced chourico, casing removed
1 quart chicken broth
Warm, crusty bread

Steps:

  • Heat oil in a deep pot over medium high heat. Add potatoes and onions, cover and cook 5 minutes, stirring occasionally.
  • Add garlic, bay leaves, and kale to the pot. Cover pot and wilt greens 2 minutes. Season with salt and pepper. Add beans, tomatoes, chourico, and broth to the pot and bring soup to a full boil. Reduce heat back to medium and cook 5 to 10 minutes longer or until potatoes are tender.
  • Serve soup with hunks of crusty bread and butter.
  • Cook's Note: If you are in Mystic, ask for cherise (phonetic pronunciation), if you want to sample the chourico.

1 tablespoon sweet paprika

  • Place the first 20 ingredients in a 7-qt. slow cooker. Cook, covered, on low 7-9 hours or until vegetables are tender. Remove bay leaves and orange and lemon zest strips., Transfer 4 cups soup to a blender; cool slightly. Cover; process until smooth. Return to slow cooker; add green onions, cilantro and parsley. Heat through., Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary.

1/4 cup olive oil
1 small onion, thinly sliced
1 clove garlic, thinly sliced
2 large leeks, washed, trimmed and roughly chopped
4 medium white potatoes, roughly chopped
3 large carrots, peeled and cut tiny pieces
1 medium turnip, peeled and roughly chopped
2 cups squash or pumpkin, roughly chopped
1 dry bay leaf
8 cups chicken broth
4 cups baby spinach, washed
1 can (540 ml or 19 fl oz) white kidney beans, rinsed
2 tsp coarse sea salt
1 tsp freshly ground black pepper
Extra olive oil for drizzling over each bowl of soup when serving - optional

Steps:

  • Heat the olive oil on medium high in a dutch oven or other large heavy pot.
  • Add the onions and garlic and sauté until the onions start to soften.
  • Add the leeks and continue to sauté and stir until the leeks reduce to half the volume.
  • Add the potatoes, 2/3 of the carrots, turnip, squash, bay leaf, half the beans, salt and pepper.
  • Turn the heat up to high. Once the soup starts to boil, reduce the heat to medium low, cover and let simmer for 20 minutes.
  • Use a hand blender to puree the soup until smooth.
  • Add the carrots and remaining beans, cover, and continue to simmer on medium low for 10 minutes.
  • Add the spinach, cover and turn off the heat. The spinach will wilt into the soup.
  • Leave the pot covered for about 10 minutes.
  • Uncover, stir and serve. Add a drizzle of olive oil to elevate the dish a little. Enjoy!

1 pound smoked sausage, sliced
1 medium head cabbage, chopped
6 potatoes, peeled and cubed
2 (15 ounce) cans kidney beans
2 cups ketchup
1 (10.5 ounce) can beef consomme
2 ⅔ quarts water
2 teaspoons garlic powder
2 teaspoons ground black pepper
1 teaspoon salt
½ cup vinegar

Steps:

  • In a large pot over medium heat, cook onions in oil until just tender. Stir in sausage and cook 5 minutes more. Place cabbage, potatoes, beans, ketchup, consomme and water in the pot. Season with garlic powder, pepper and salt. Bring to a boil, then reduce heat and simmer 30 to 45 minutes.
  • Stir in vinegar and simmer 1 hour more. Add more water if needed.

2 fat onions, finely chopped
4 cloves garlic, crushed
60ml/2¼fl oz olive oil
1 chorizo sausage
6 large potatoes
1.5 litres/2 pints 13fl oz good vegetable or chicken stock
salt and freshly ground black pepper, to taste
2 bay leaves
large bunch of greens or cabbage
smoked paprika and olive oil, for dressing

Steps:

  • Gently fry the onions and garlic in the olive oil until softened and translucent.
  • Chop the chorizo into small chunks and add to the pan with the onion.
  • Fry the onions and sausage for a few more minutes and then add the diced potatoes. They will absorb all the flavour from the sausage.
  • Transfer the mixture to a large pan, add the stock, seasoning and bay leaves, and cook until the potatoes are soft.
  • Meanwhile, very finely chop the cabbage (alternatively, buy a cabbage-shredding machine from the market as we did).
  • When the potatoes are ready, mash them into the broth to make a thick base. Blanch the greens in boiling water for one minute to take off any bitterness, drain, then add to the simmering broth.
  • Add as much cabbage as the broth will support - if you want heavy soup add loads of greens, if lighter, add less.
  • Simmer for a few minutes. The soup will go the colour of jade.
  • Mix the smoked paprika with some olive oil to make a dressing, and swirl this red magic into the vibrant green soup. Serve with some rustic country bread.

1/4 cup extra-virgin olive oil, divided
1/2 pound chouriço or linguiça (smoked Portuguese sausages) or kielbasa, cut into 1/2-inch pieces
1 medium onion, chopped
2 garlic cloves, minced
1 pound russet (baking) potatoes, peeled and cut into 1-inch pieces
6 cups water
1 pound kale, stems and center ribs discarded and leaves very thinly sliced
Accompaniment: piri-piri sauce or other hot sauce

Steps:

  • Heat 1 tablespoon oil in a 5-quart heavy pot over medium-high heat until it shimmers, then brown sausage, stirring often, 2 to 3 minutes. Transfer with a slotted spoon to a bowl. Add 2 tablespoon oil to fat in pot and cook onion and garlic with 1/4 teaspoon each of salt and pepper over medium heat, stirring often, until browned, 7 to 8 minutes.
  • Add potatoes, water, and 1 teaspoon salt and simmer, covered, until potatoes are very tender, 15 to 20 minutes. Mash some potatoes into soup to thicken, then add kale and simmer, uncovered, until tender, about 5 minutes. Stir in sausage and cook until just heated through, 1 to 2 minutes. Drizzle with remaining tablespoon oil and season with salt and pepper.

1 lb portuguese sausage, diced or cubed (i prefer the hot ones)
3 can(s) kidney beans or2 1/2 - 3 cups dried small red beans, soaked in water overnight and drained
2 large potatoes, cubed
3 large carrots, diced
1 medium round (yellow/spanish) onion, chopped
1 c celery, chopped
1 medium cabbage head, chopped or cubed
1 can(s) crushed tomatoes (16 ounces)
1 can(s) tomato sauce (16 ounces)
1 c macaroni, uncooked
3 clove garlic, minced (or granulated if desired)
1 Tbsp sugar
salt and pepper, to taste

Steps:

  • 1. Boil ham hocks in 2 quarts water until tender (save stock). Cut meat from the bones.
  • 2. Bring ham stock to a boil and add the cut meat and all the remaining ingredients except the cabbage. Simmer for 1 hour, stirring frequently.
  • 3. If too thick, add a little water. Lastly, add the cabbage, cook until tender.

9 ozs andouille sausages (I often like to use turkey sausage for a healthier dish)
1 tbsp olive oil
1 medium onion, chopped
3 carrots, peeled and sliced
3 garlic cloves, minced
3 medium potatoes, chopped
2 cups butternut squash, peeled and chopped
4 cups chicken stock
2 1/2 cups of water
1 bunch of kale (at least 4 cups) stems removed & coarsely chopped
1 14.5 oz can red kidney beans
pinch crushed red pepper flakes
salt to taste

Steps:

  • Heat a large soup pan with oil spray. Add the sausages and cook for 5 minutes or so to brown, stirring occasionally. Remove the sausages and set aside to cool. When they have cooled, slice the sausage in half lengthwise, then cut into semi-circles 1/2 inch thick. Set aside.
  • Heat the olive oil on medium in the soup pan, then add the onions. Sauté for 5 minutes, then add carrots and sauté a few more minutes.
  • then the butternut squash and garlic. Cook for a minute or two.
  • after the potatoes have been cooking for a couple of minutes, add the chicken stock and water. Bring the liquid to a boil, then reduce to simmer on medium for 15 minutes.
  • After 15 minutes the veggies should be starting to get soft. Use a sturdy spoon to smash some of the potato and butternut against the side of the pot, to thicken the soup. Stir in the kale in a few batches, to allow some to cook down a bit to create more room. Add salt to taste and a pinch of red pepper flakes.
  • Stir in the sausage and the kidney beans. Cook for another 5 to 10 minutes to let all the flavors meld. More cooking time is great, too, if you've got the time! When it's cooked to your liking, serve with a crusty bread and glass of Portuguese wine to round things out.

3 lbs rump roast (size is an estimate)
2 (4 ounce) cans tomato sauce
2 cups red wine
3 -4 small white onions
3 -4 stalks celery & leaves
3 -4 cabbage leaves
1 head garlic
2 tablespoons pickling spices, tied in a cheesecloth
water, to cover all
salt and pepper
fresh mint leaves (optional)
Portuguese bread

Steps:

  • Combine everything and add enough water to cover all.
  • Let cook slowly all day (at least 8 hours).
  • Remove cheesecloth bag and discard.

Portuguese linguica, cabbage, and pinto beans come together in a traditional Portuguese soup. This recipe is from my grandmother's grandmother, straight from Portugal. You will not find a more delicious Portuguese soup recipe! This recipe will feed 4 adults easily. It serves well alone or with a good bread.

1 pound dried pinto beans
2 ham hocks
1 large onion, diced
water to cover
7 ounces linguica sausage (such as Silva®), sliced
1 small head cabbage - quartered, cored, and thinly sliced
1 large potato, cubed
1 (8 ounce) can tomato sauce
salt and ground black pepper to taste

Steps:

  • Place beans in a large pot and cover with water. Soak 8 hours to overnight.
  • Drain and rinse beans and return them to the pot. Add ham hocks and onion. Add enough water to cover ham hocks. Bring to a boil, reduce heat to a simmer, and cook until beans are tender, 1 to 2 hours.
  • Remove ham hocks from soup and separate the meat from the bones. Return meat to the pot and discard bones. Add sausage, cabbage, potato, and tomato sauce to the pot. Bring to a simmer and cook until cabbage is softened, 30 to 45 minutes. Season with salt and pepper.

1.5 pounds smoked ham hocks (about 4 pieces)
1 large onion, diced
2 large carrots, diced
2 large potatoes, diced
2 15-ounce cans kidney beans
1 15-ounce can diced tomatoes
1 15-ounce can tomato sauce
1 10-ounce Portuguese sausage stick
1 small head of cabbage (napa or green), chopped
1 cup macaroni pasta, uncooked

Steps:

  • First, make the ham hock stock: put the ham hocks in a large pot with 2.5 quarts of water. Bring the water to a boil, then turn the heat down to low. Put on a lid on top, and let cook on low for 1.5 hours.
  • Remove the ham hocks to a cutting board and let cool. Once cooled, cut off the meat and skin from the bone. Dice the meat and skin into small pieces and set aside.
  • Skim the fat off the top of the ham hock stock. Bring the stock back to a boil and add in the cans of diced tomatoes and tomato sauce.
  • Bring the soup back to a boil, and add the diced ham hocks back in. Then add the diced onions, carrots, and potatoes.
  • Bring the soup back up to a boil, and add in the kidney beans, Portuguese sausage, cabbage, and macaroni noodles.
  • Let the soup cook on medium-low heat for another 30 minutes. Season to taste with salt and lots of pepper. Enjoy!

1/2 onion, minced
2 clove garlic, minced
8 c water
1 packet poultry seasoning, or bouillon
1/2 c long grain rice
1/2 lemon
2 Tbsp olive oil

Steps:

  • 1. In a large pot, boil your chicken breast over med/high heat. Once chicken is just about done, remove from water and shred with a fork. Add the poultry seasoning to your pot. Place the chicken back in.
  • 2. Saute your onion & garlic in olive oil until onion is translucent. Cook over medium heat, being careful not to burn your garlic.
  • 3. Add the onion & garlic mixture, along with your rice to the pot and allow to cook until rice is expanded and tender.
  • 4. Add salt & pepper to taste. Add juice of half a lemon. Serve & enjoy!

2 to 3 large russet potatoes

2 medium sized white onions
(2 cups / 220 grams), peeled and diced into 3 cm ( 1.2 inches) cubes
4 large carrots
(2 ½ cups / 420 grams), peeled and diced into 3 cm ( 1.2 inches) cubes
6 cups
(1 ½ liters) water
2 medium sized white or savoy cabbages
(10 cups / 680 grams), roughly cut into strips
1 ½ cups (320 grams)
cooked cannellini beans
½ teaspoon
sea salt
olive oil
to taste

Steps:

  • In a large pot over high heat, bring the water to a boil. Once boiling, add the turnips, potatoes, onions and carrots to the pot. Decrease the heat to a simmer, add the salt and cook, covered, from 15 to 20 minutes, or until the vegetables are tender.
  • With the help of an immersion blender, purée all the ingredients until totally smooth - you're looking for a creamy and slightly thick broth here. Have a taste and add a bit more salt if necessary. Now, add the cabbage strips to the pot and cook for additional 5 minutes, or until the cabbage is cooked through but still holding some texture.
  • When the cabbage is cooked, turn off the heat and add the cooked cannelini beans to the soup.
  • Serve the soup in bowls and drizzle a little olive oil over each serving. Perfect along with a good slice of crusty bread.
