PORTOBELLO MUSHROOM CHEESEBURGERS

Large portobello mushrooms are perfect burger material, just the right size for a meaty and satisfying meal. I like them best with Gruyère cheese on top.

1 tablespoon red wine vinegar or sherry vinegar
Salt
freshly ground pepper to taste
1 garlic clove, green shoot removed, minced or pureed
3 tablespoons extra virgin olive oil
4 large portobello mushrooms, stems removed
1 6-ounce bag baby spinach
4 1/2-ounce slices cheddar or Gruyère cheese
Whole grain hamburger buns and the condiments of your choice
condiments of your choice

Steps:

  • Whisk together the vinegar, salt, pepper, garlic and olive oil. Toss with the mushroom caps in a wide bowl. Rub the marinade over the tops of the mushroom caps and place them on a baking sheet, rounded side up. Let sit for 15 minutes. Don't rinse the bowl, because you'll use any oil and vinegar residue to dress the spinach.
  • Bring a large pot of water to a boil, salt generously and blanch the spinach for 20 seconds. Transfer to a bowl of ice water, drain and squeeze dry. Chop coarsely and toss in the bowl with the residue of the marinade. Set aside.
  • Prepare a medium-hot grill, heat a heavy skillet over medium-high heat, or preheat an electric grill or panini pan on medium-high. Season the mushrooms as desired with salt and pepper. Place the mushrooms on the hot grill or pan, rounded side down. Cook them for about 6 to 8 minutes, depending on the thickness, until lightly browned, and moist. Turn over and cook for another 6 minutes. Turn over for a minute to reheat the top, then flip back over and place the cheese on top. Continue to cook until the cheese melts. If using a panini grill, cook 6 to 8 minutes. Open the grill and place the cheese on top. Wait for it to melt. Place a mound of spinach on the bottom half of each hamburger bun and place the mushrooms, rounded side up, on top of the spinach. Top with your choice of condiments and serve.

All the flavors of French onion soup are piled high on a tender portobello mushroom and sandwiched between English muffins. These are the ultimate meatless burgers!

2 tablespoons butter
2 medium onions, thinly sliced
1 tablespoon plus 1 teaspoon fresh thyme leaves or 2 teaspoons dried thyme leaves or Italian seasoning blend
Kosher salt and freshly ground black pepper
1 tablespoon plus 1 teaspoon Worcestershire sauce
4 English muffins or hamburger buns, split
4 medium portobello mushroom caps (about 1 pound), stems removed
2 tablespoons olive oil or neutral oil
1/2 teaspoon garlic salt, or 1/8 teaspoon garlic powder and heaping 1/4 teaspoon kosher salt
1 cup shredded Gruyere, Swiss or Cheddar cheese (about 4 ounces)
1/3 cup mayonnaise
1 clove garlic, finely grated
1/2 cup crispy fried onions, such as French's (or crushed corn chips, pretzels or potato chips)

Steps:

  • Preheat the broiler. Line a rimmed baking sheet with aluminum foil.
  • Melt the butter in a medium skillet over medium-low heat. Add the sliced onions, 1 tablespoon fresh thyme or 1 1/2 teaspoons dried, 1/2 teaspoon kosher salt and a few grinds of pepper. Cook, stirring occasionally, until the onions are deep golden brown and caramelized, about 15 minutes. If the skillet gets too brown, add 2 tablespoons water and scrape the brown bits from the bottom of the skillet with a wooden spoon; continue to cook until all the water has evaporated. Add 1 tablespoon of the Worcestershire and stir until completely absorbed, about 1 minute more.
  • Meanwhile, place the muffins or buns on the prepared baking sheet and broil until toasted and browned along the edges, 1 to 2 minutes. Set aside for serving.
  • Put the mushroom caps, gill-side up, on the same baking sheet. Broil until they release their juices and soften slightly, about 6 minutes. Flip the mushrooms, brush the tops with the oil and season with the garlic salt. Broil until lightly browned and the juices have cooked off, about 6 minutes more. Top each mushroom with 1/4 cup cheese, then return to the broiler until the cheese melts, 1 to 1 1/2 minutes.
  • While the mushrooms are broiling, stir together the mayonnaise, garlic, remaining 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme and 1 teaspoon Worcestershire in a small bowl until smooth. Season with a pinch of kosher salt and pepper. Spread on the inside of the toasted muffin or bun tops. Place 1 portobello mushroom on each muffin or bun bottom. Layer with the caramelized onions and crispy fried onions, then close the burgers and serve.

Several of my friends are vegetarians, so I came up with this recipe last summer when I was having a barbecue. They are so good, even carnivores will devour them. If you can find Portuguese muffins, their sweet flavor makes for a delicious bun option.

Juice of 1 lemon (2 to 3 tablespoons)
1/4 cup extra virgin olive oil
2 tablespoons worcestershire sauce
2 teaspoons fresh thyme leaves
1/4 teaspoon garlic powder
6 portobello mushrooms, wiped clean and stems removed
6 portobello mushrooms, wiped clean and stems removed
Kosher salt and freshly ground black pepper
6 slices Muenster cheese (or Swiss, white cheddar, provolone-your choice)
6 Portuguese muffins or brioche hamburger buns, buttered and toasted
1 1/2 cups loosely packed arugula
1 tablespoon olive oil
1 medium Vidalia onion, thinly sliced
1/4 cup water
Kosher salt and freshly ground pepper
1/2 cup mayonnaise
2 tablespoons jarred chopped pimentos, drained
1 tablespoon red wine vinegar
1 garlic clove, minced
1 tablespoon minced flat-leaf parsley
Kosher salt and freshly ground black pepper

Steps:

  • For the burgers: In a shallow baking dish, use a whisk to combine the lemon juice, olive oil, Worcestershire, thyme, and garlic powder. Place mushrooms in the marinade, cover, and refrigerate for at least 1 hour. Turn over the mushrooms, cover again, and refrigerate at least another hour. (Mushrooms can marinate for several hours.)
  • For the onions: In the meantime, make the onions. In a skillet, heat the olive oil over medium heat. Add the onions and cook about 5 minutes, stirring occasionally. Add the water, cover, and reduce heat to low. Cook 20 to 30 minutes, stirring occasionally, until the onions are golden brown. Remove the pan from the heat. Season the onions with salt and pepper. Set aside.
  • For the aioli: Combine all ingredients in a small bowl. Refrigerate until serving time.
  • To finish the burgers: Preheat oven to 450 degrees F. Remove mushrooms from marinade and season with salt and pepper on both sides. Place the mushrooms on a baking sheet, gill sides up. Bake for 5 minutes. Remove from the oven and arrange cheese and caramelized onions on the gills of each mushroom and bake another 5 minutes, until the cheese is melted and bubbly. Place 1 mushroom on each muffin and garnish with aioli and arugula. Serve immediately.

2 tablespoons brown spicy mustard
3 tablespoons balsamic vinegar
1/2 cup olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon hot sauce
4 portobello mushroom caps
4 slices Gouda cheese
1/2 cup mayonnaise
4 hamburger rolls
1 red onion, sliced
4 leaves butter lettuce
1 tomato, sliced

Steps:

  • Combine marinade ingredients. Place caps into a baking dish and pour marinade over top. Use a brush to make sure all caps are covered with the marinade. Set aside and let marinate up to 2 hours.
  • Remove the portobellos from marinade (do not discard marinade) and place gill side down on a preheated gas, electric or charcoal grill over medium-high heat. Grill 3 to 4 minutes per side. Top each cap with cheese 2 minutes to melt before they are finished grilling.
  • In a medium bowl combine 1/2 cup mayonnaise and 2 tablespoons of the marinade.
  • Spread the flavored mayonnaise onto each bun and top with portobellos. Serve with sliced onion, lettuce and tomato.

I created this for Ready Steady Cook and wanted to call it "Guilt Free Cheeseburger" because it is low carb and gluten free,,,but unless it's fat free and vegetarian it's not without sin. But then I never claimed to be completely virtuous. The relish can be made well in advance and can be stored in the fridge for up to a week. I love the flavour of chilli but I don't like the heat to overpower the taste so I have only used mild chilli flakes, however if you prefer you can increase the amount or even use a hotter chilli. *Only use the stalks of the mushrooms in the main meat mixture, the actual mushrooms are the bun.

8 large portabella mushrooms
1 garlic clove, crushed
3 tablespoons olive oil
1 bunch arugula leaf, washed
garlic oil (Retained from mushrooms )
540 g beef tips (stewing steak)
1 ounce coriander, chopped
4 ounces swiss cheese, cubed
8 portabella mushrooms, finely chopped (stalks only)
1 onion, chopped
1 tablespoon Dijon mustard
1 egg yolk, free-range
1 tablespoon olive oil
salt & freshly ground black pepper
1 cup barbecue sauce, gluten free (such as HP Honey Flavour Mild BBQ Sauce)
3 tablespoons olive oil
1 teaspoon dried mild red chili peppers, flakes (such as aji panca Chile )
2 tablespoons Worcestershire sauce
2 large vidalia onions, sliced
2 garlic cloves, crushed

Steps:

  • Preheat the oven to 425 degrees F.
  • To make the relish; sauté the onions in the oil over a medium heat.
  • When the onions have softened, approximately 10 mins, add the garlic and sauté for another ten mins, stirring occasionally.
  • Add the chilli flakes, bbq and Worchester sauce mix and continue to cook on a medium heat for a further 5 minutes.
  • Season to taste and set aside.
  • Wipe clean the mushrooms of any debris(don't wash).
  • Remove stalks and set aside for the burgers.
  • Combine the oil and garlic together.
  • Brush the mushrooms inside and out with the garlic oil (any remaining oil should be kept to dress the Arugula).
  • Place the mushrooms CAP SIDE UP on a baking sheet and bake for about 20 to 25 minutes.
  • Meanwhile, preheat the grill to hot.
  • Place the steak in a food processer or mincer and process until finely minced.
  • Place minced steak, chopped onion, mushroom, mustard, egg yolk, olive oil and seasoning in a large bowl and stir to combine.
  • Using your hands, shape into four equal-sized patties, make a slight indentation in the centre of the patty And place about an ounce of cheese in the indent, bring the mixture around to cover the cheese and reflatten slightly ensuring all the cheese is covered. Repeat with the remaining patties.
  • Cook the burgers under the grill for 15 minutes, or until cooked through, turning once.
  • To assemble, place a mushroom CAP SIDE DOWN on a serving dish.
  • Lightly dress the arugula in the garlic oil retained from the mushrooms, take a small handful and place on the mushroom.
  • Add a burger, then relish and top with another burger CAP SIDE UP.
  • Repeat with remaining burgers and serve hot with salad and fries.

2/3 cup low-fat plain yogurt
3 tablespoons prepared horseradish
4 tablespoons extra-virgin olive oil
3 medium-large red onions, thinly sliced (about 2 pounds)
2 sprigs fresh thyme
Kosher salt and freshly ground black pepper
1 cup red wine
1/4 cup honey
1/4 cup red wine vinegar
1 garlic clove, crushed
2 tablespoons balsamic vinegar
4 large portobello mushrooms, (about 1 pound) stemmed
Lettuce leaves
4 whole grain buns, or whole wheat English muffins, split and toasted

Steps:

  • Put the yogurt in a paper towel-lined strainer set over a bowl, set aside to drain and thickened, about 60 minutes. Discard the watery liquid. Whisk the horseradish into the thickened yogurt.
  • Meanwhile, heat 2 tablespoons of the olive oil in a medium skillet, over medium heat. Add the onions, 1 thyme sprig, and season with salt and pepper, to taste. Cook, covered, until the onions have wilted, about 10 to 15 minutes, (give them a stir every now and then with a wooden spoon to prevent them from sticking). Add the red wine, and simmer over high heat until most of the wine gets absorbed into the onions. Add the honey and red wine vinegar and simmer gently until the onions get jam-like, about, about 15 minutes.
  • Preheat a stove top grill pan over medium-high heat. Whisk the remaining 2 tablespoons oil, garlic, and balsamic vinegar in a bowl. Strip and add the leaves from the remaining sprig of thyme. Coat the mushroom caps all over with the flavored olive oil. Grill the mushrooms, turning as needed, until tender but not mushy about 3 to 4 minutes per side. Season with the salt and pepper.
  • Sandwich the mushroom between the buns, top with some of the onion jam, some lettuce, and a dollop of the horseradish cream. Serve warm.

  • Clean and slice the onions. Melt the butter on medium-high heat and add the sliced onions. Sautée for about 10 minutes, stirring constantly to prevent the onion from frying; it should just sweat and get soft. Set the water to boil.
  • After 10 minutes, add the sugar and stir for a couple of minutes. Then pour in the Balsamico and stir until it has evaporated (another couple minutes). Pour in the boiling water, close the lid, lower the heat to medium and let simmer for 15 minutes, checking from time to time.

  • Clean the portobello mushrooms and remove the stems. Place them on a baking sheet gill side up. Drizzle the tops the olive oil and use your hands to rub on the bottoms. Then place them back on the sheet gill side up and sprinkle with garlic powder, smoked paprika, kosher salt and several grinds of black pepper. Rub them until evenly coated.
  • Place the mushrooms directly on the grates gill side up, and grill 10 to 14 minutes until tender and juicy. Liquid will pool in the cap. Flip the mushrooms (this drains the liquid into the grates). Then top with the add cheese slices and cook for an additional 2 to 3 minutes until melted. Tip: Step up your burger and grill the burger buns for about 1 minute on one side until lightly toasted!
