Panini without bread! I recently got a panini maker and am excited to find some healthier recipes to make with it, such as this one from Ellie Krieger's Healthy Appetite T.V. show. For the Valentine's episode she cut the portobellos with heart-shaped cookie cutters. You don't need a panini maker for this recipe!

Number Of Ingredients 6

4 sun-dried tomatoes (not oil-packed)
4 portabella mushroom caps (about 2 ounces each)
1/4 cup crumbled gorgonzola
1 tablespoon olive oil
1 teaspoon olive oil
salt and pepper

Steps:

  • Reconstitute the sun-dried tomatoes by soaking them in boiling water for 10 minutes. Remove the tomatoes from the water and chop them.
  • Slice the stems off of the mushrooms so they can lay completely flat. Slice each cap in half so you have 8 round mushroom slices.
  • Top half of the mushrooms with 1 tablespoon of tomatoes and 1 tablespoon of cheese. Top with remaining mushroom slices. Brush the top side of each "sandwich" with olive oil.
  • Preheat a large, nonstick skillet or grill pan. Place the mushroom sandwiches in the pan carefully, oil side down, and cook for 2 minutes. Brush the top half with oil, flip, and cook for 2 minutes more. Season with salt and pepper, to taste, and serve.

3 medium portabella mushroom caps
2 vidalia onions, sliced
1/2 cup olive oil
4 garlic cloves, minced
salt and pepper, to taste
1 loaf Italian bread

Steps:

  • Mix together oil, salt and pepper, and garlic. Marinate mushrooms and onions with this for about thirty minutes.
  • Grill mushrooms and onions over medium heat until done, brushing on the oil mixture liberally throughout cooking time.
  • Cut the bread open length-wise, brush it with the oil, then lightly toast on the grill.
  • Layer on the onions and mushrooms. Press sandwich together for a few minutes (I usually use a frying pan to weigh it down).
  • Cut into 6 pieces or so and serve.

4 sun-dried tomatoes (not oil-packed), chopped
1/4 cup crumbled gorgonzola cheese
1 tablespoon plus one teaspoon olive oil
Salt and freshly ground black pepper

Steps:

  • Slice the stems off the mushrooms so they can lay completely flat. Slice each cap in half to form 8 round slices.
  • Spray a large nonstick grill pan with cooking spray and preheat over medium high heat.
  • Top the bottom half of the mushrooms with tomatoes and cheese. Cap with remaining mushroom rounds. Brush the top sides of each sandwich with oil. Place mushroom sandwiches in the pan oil side down and cook for 2 minutes. Brush the top with oil, flip and cook for 2 minutes more. Season with salt and pepper and serve.

6 5- to 6-inch-diameter portobello mushrooms, stemmed
1/4 cup olive oil
4 Japanese eggplants (unpeeled), finely chopped
6 tablespoons chopped drained oil-packed sun-dried tomatoes
2 garlic cloves, minced
1/4 cup dry red wine
6 ounces crumbled Gorgonzola cheese
2 tablespoons chopped fresh basil
1/4 cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 375°F. Arrange mushrooms, rounded side down, on large baking sheet. Heat oil in heavy medium skillet over medium heat. Add eggplant, sun-dried tomatoes and garlic. Sauté until eggplant is soft, about 8 minutes. Stir in red wine and simmer until liquid evaporates, about 2 minutes. Remove skillet from heat; stir in Gorgonzola cheese and 1 tablespoon basil. Season with salt and pepper. Spoon mixture evenly into mushroom caps. Sprinkle with Parmesan cheese. Cover mushrooms with aluminum foil. Bake mushrooms for 15 minutes. Remove foil and continue baking until cheese melts, filling bubbles and mushrooms are tender when pierced with sharp knife, about 10 minutes. Sprinkle mushrooms with remaining 1 tablespoon basil and serve warm.

1/2 cup shredded fresh mozzarella cheese (3 ounces)
1/2 cup shredded Fontina cheese (4 ounces)
3 tablespoons asiago cheese (freshly grated) or 3 tablespoons parmesan cheese (freshly grated)
1/2 cup shredded provolone cheese (3 ounces)
8 slices tomatoes, thinly sliced
1 tablespoon fresh basil, chopped
4 ciabatta rolls, halved lengthwise (spread outsides with butter) or 8 slices firm white bread (spread outsides with butter)
8 arugula leaves (optional, but recommended)

Steps:

  • In a small bowl, combine cheeses. Spread the cheese on the bottoms of the ciabatta rolls. Top with tomato slices and brush with olive oil. Sprinkle with basil and add 2 arugula leaves and close the panini.
  • Set a large cast-iron skillet or griddle over moderately high heat. Arrange the panini in skillet and weight them down with a smaller pan (can fill with water if you need more weight). Cook the panini until the outside is crisp and the cheese is melted, 3 minutes per side.
  • Cut panini in half and serve at once.

We love sun-dried tomatoes and I got this recipe off a package of them. I haven't made it yet but it sounds great. It is one of those great out of the pantry meals that I am trying to accumulate.

4 boneless skinless chicken breasts
3 tablespoons black olives or 3 tablespoons Greek olives, chopped
2 tablespoons fresh parsley, chopped
3 tablespoons extra virgin olive oil
1/4 cup pine nuts
4 marinated artichoke hearts, diced
2 teaspoons capers
1 small onion, diced
1 cup sun-dried tomato, sliced
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
fresh ground black pepper
freshly grated parmesan cheese
1/4 cup flour
1 lb linguine
2 cups chicken broth
4 garlic cloves, thinly sliced

Steps:

  • Roast pine nuts at 400 degrees for 8-10 minutes. Shake the pan a few times to prevent burning.
  • Dredge chicken in flour. Heat olive oil in a skillet and add the dredged chicken. Cook each side until golden brown. Set chicken aside and keep warm.
  • Prepare linguini according to package directions while the chicken is cooking.
  • Saute garlic and onions until tender. Stir sun-dried tomatoes, capers, olives, artichokes, parsley and pine nuts into skillet. Add oregano, basil and ground pepper. Pour in chicken broth and bring to a slow boil, stirring occasionally. Add chicken breats and continue to cook for 30 more seconds. Serve over linguini and sprinkle with parmesan cheese.

2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 teaspoons sea salt
2 large portabella mushrooms, cut into 1/4 inch slices
1 red bell pepper
1 loaf ciabatta, halved and split lenghtwise
12 leaves arugula
4 tablespoons vegan mayonnaise

Steps:

  • Preheat oven to 350.
  • in a small bowl, combine 1 tablespoon of the olive oil with vinegar and salt.
  • Place the mushroom slices on a baking sheet and brush with the mixture.
  • Roast until the mushrooms are fork-tender, about 20 minutes.
  • Brush the red pepper with the remaining tablespoon of olive oil.
  • Hold the pepper with a long fork over an open flame, or roast under the broiler, turning often, until the skin gets black on all sides.
  • This will take about 7 to 10 minutes over the flame and about 10 minutes in the broiler.
  • Put the pepper in a paper bag and close tightly to steam it.
  • When the pepper is cool enough to handle, peel off the skin and remove the seeds and stem.
  • Slice the pepper into strips.
  • To assemble the sandwiches, spread the ciabatta halves with mayo.
  • Layer with the arugula leaves and read pepper slives, and top with the portobello slices to cover the length of the sandwiches.
  • Spread the remainder of the mayo on the other sides of the bread and serve immediately.

2 large portobello mushrooms
1 (8 ounce) bottle Italian-style salad dressing
1 tablespoon minced onion
1 ½ teaspoons minced garlic
¼ cup butter
1 stalk celery, diced
½ cup crab meat, fresh or canned
20 buttery round crackers, crushed
⅔ cup Italian blend shredded cheese, divided

Steps:

  • Preheat your oven's broiler. Clean mushrooms, and remove stems, reserving them for later. Marinate the mushroom caps in Italian dressing for 15 minutes. Remove from marinade, and place into a baking dish.
  • Broil at least 6 inches from heat for about 10 minutes. Check occasionally to make sure they do not burn. Turn off the broiler, and preheat the oven to 400 degrees F (200 degrees C).
  • Melt butter in a skillet over medium-high heat. Chop reserved mushroom stems. Sautee onion, garlic, mushroom stems and celery until tender. Add the crabmeat, and heat until cooked through, about 5 minutes. Transfer the skillet mixture to a medium bowl, and mix in crackers, 1/3 cup of the cheese blend, and mix until well blended. Use some of the Italian dressing marinade to hold the mixture together if necessary. Pack the crab mixture into the cavities of the mushrooms. Season with salt and pepper to taste.
  • Bake for 10 minutes in the preheated oven. Remove from the oven, and sprinkle remaining cheese over the tops, then return to the oven for 3 minutes, or until cheese has melted.
