SLOW ROASTED DUCK WITH CRISPY SKIN



Slow Roasted Duck with Crispy Skin image

Crispy slow roasted duck is served with a raspberry orange port sauce. It's a simple, yet impressive, dinner recipe perfect for holidays and celebrations. Great for Christmas, Easter, Thanksgiving, and more!

1 navel orange
1 whole duck
kosher salt and black pepper
1/2 cup ruby port
1/2 cup raspberry jam
2 tbsp balsamic vinegar
2-3 dashes chipotle powder

Steps:

  • Heat the oven to 300F.
  • Cut three thick slices off the orange. Quarter up any remaining orange.
  • Stuff the quartered orange into the duck and place the slices down the middle of the roasting pan.
  • Trim off excess fat from the duck. Tie together the legs with kitchen twine and sprinkle it all over with salt and pepper. Then prick the skin with fork.
  • Place the duck, breast side up, on the orange slices. Put it in the oven and roast for 3 - 3 1/2 hours, or until the meat is fork tender.
  • Raise the heat to 425F and roast for 15-20 minutes, or until the skin is golden brown.
  • Remove the duck from the oven and let it rest while you make the sauce.
  • In a medium sauce pan, combine the port, raspberry jam, and balsamic vinegar with the orange slices which were under the duck. Add a couple of dashes of chipotle powder.
  • Bring to a boil and cook the sauce for 5-8 minutes, or until the sauce is thick and can coat a spoon. Taste and adjust the seasonings by adding a little kosher salt, pepper, and another dash of chipotle if needed.
  • Arrange a fine mesh sieve over a bowl and pour the sauce into the sieve to strain out the orange slices.
  • Transfer the sauce to a serving container. Carve the duck and serve it with the sauce.

1 pork tenderloin
2 canned chipotle peppers with adobo sauce, seeded and chopped
1 tablespoon adobo sauce
2 tablespoons fresh lime juice
3 tablespoons honey
2 large garlic cloves, pressed
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 teaspoons ground cumin
1 tablespoon cilantro, chopped plus more for garnishing
2 tablespoons peanut oil

Steps:

  • Place the pork and marinade in a large resealable plastic bag, refrigerate and marinate for 4 to 6 hours or overnight. Bring the meat to room temperature. Preheat grill to medium-high and cook pork, turning occasionally, until inside temperature reaches 145 degrees. Remove pork, cover with foil and let rest until temperature rises to 150 degrees. Slice pork, serve with warm sauce drizzled on top; garnish with chopped cilantro and fresh raspberries.

Pour the cooked raspberries, the jam, and Framboise into the bowl of a food processor fitted with the steel blade and process until smooth. Chill.

1 1/2 cups sugar, divided
3 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sunflower oil
2 tablespoons Kahlua or other coffee flavored liqueur
2 tablespoons pure vanilla extract
7 large egg whites
1 teaspoon cream of tartar
Nonstick cooking spray or oil to brush on baking pan
Port Wine and Raspberry Sauce, recipe follows
1 cup fresh raspberries 1 1/2 cups nonfat yogurt 1/4 cup port wine 2 tablespoons sugar (optional)

Steps:

  • Preheat oven to 325 degrees. Into a large mixing bowl, sift together the flour, 1 cups of the sugar, the cocoa powder, baking powder, baking soda, and salt. Make a well in the center and add the oil, Kahlua and vanilla. Do not mix. In another bowl, beat the egg whites and cream of tartar until white and foamy. Slowly add the remaining 1/2 cup sugar and continue beating until stiff peaks form. Do not overbeat. Mix 1/4 of the egg whites until well incorporated into the flour mixture. Gently fold in the remaining egg whites using a rubber spatula. Spray a 9-inch tube pan with nonstick cooking spray, or brush the inside with oil. Dust with flour and tap out the excess. Pour the batter into the prepared pan. Bang the mold on the counter to remove any air bubbles. Bake for 55 minutes, or until the top feels springy, or until a cake tester inserted into the center comes out clean. Cool the cake upright on a wire rack for 1 hour. Loosen the sides with a small, thin knife. Remove the cake from the pan and allow it to cool. Wrap airtight, or serve immediately with a light sifting of confectioners sugar accompanied by the Port Wine and Raspberry Sauce.
  • In a food processor, blend all the ingredients until very smooth. Strain, if necessary.

2 teaspoons olive oil
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1 teaspoon salt
1 teaspoon pepper
SAUCE:
1 shallot, finely chopped
1 teaspoon olive oil
1-1/2 cups port wine or grape juice
1 cup reduced-sodium chicken broth
1 cup fresh or frozen blueberries
1/2 cup dried cherries
1/2 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed

Steps:

  • Rub pork with oil; sprinkle with rosemary, salt and pepper. Place on a rack in a shallow roasting pan. Bake at 425° for 20-30 minutes or until a thermometer reads 145°., Meanwhile, in a small saucepan, saute shallot in oil. Stir in the remaining sauce ingredients. Bring to a boil; cook until liquid is reduced by half. Cool slightly. Transfer to a blender; cover and process until blended. , Let pork stand for 5 minutes; slice and serve with sauce.

I found this recipe on Allrecipes and am posting it for future reference. It's a quick and easy recipe and the sauce looks a little tangy (not overly sweet).

1/2 teaspoon dried thyme, crushed
1/2 teaspoon dried sage, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
4 (4 ounce) boneless pork chops
1 tablespoon butter
1 tablespoon olive oil
1/4 cup seedless raspberry jam
1 tablespoon orange juice
2 tablespoons white wine vinegar
4 sprigs fresh thyme (optional)

Steps:

  • Preheat oven to 200 degrees.
  • In a small bowl, combine crushed thyme, sage, salt, and pepper. Rub evenly over pork chops.
  • Melt butter and olive oil in a nonstick skillet.
  • Cook pork chops for 4 to 5 minutes on each side, turning once.
  • Remove from skillet and keep warm in preheated oven.
  • In the skillet, combine raspberry jam, orange juice, and vinegar.
  • Bring to a boil, and cook for 2 to 3 minutes, or until sauce is reduced to desired consistency (sauce will thicken as it cools).
  • Spoon sauce in a pool onto a serving plate, and top with pork chops.
  • Garnish with sprigs of thyme.

  • Reserve a few raspberries for garnish; press remainder through fine sieve. Add puree to red currant mixture in saucepan and heat gently.
  • In a small bowl mix cornstarch with a little of the war sauce. Return to saucepan and cook, stirring until sauce thickens; add pepper.
  • Serve hot.
