Categories     Pork

Time 35m

Yield 4 serving(s)

Number Of Ingredients 12

4 (4 ounce) boneless pork chops, select a thicker cut and trim all visible fat
salt & freshly ground black pepper
2 teaspoons canola oil or 2 teaspoons corn oil
3 tablespoons cider vinegar
2 tablespoons sugar (I think you can do this with Splenda by adding it closer to the end of the preparation)
2/3 cup white wine, dry would be best
1 cup reduced-fat chicken broth
1 firm ripe bosc pears or 1 Anjou pear, peeled, cored and cut lengthwise into eighths
1/4 cup fresh ginger, peeled and cut into thin julienne strips
6 scallions, trimmed and sliced into 1/2 inch lengths
2 teaspoons cornstarch
2 teaspoons water

Steps:

  • Season porkchops with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add pork and cook until browned and just cooked through, two to three minutes per side. Transfer to a plate and keep warm. Pour off fat from the pan.
  • Add vinegar and sugar to the pan and stir to dissolve the sugar. Cook over medium-high heat until the syrup turns dark amber, 10 to 20 seconds. Pour in wine and bring to a simmer while stirring.
  • Add broth, pears and ginger to the wine-vinegar sauce bring to a simmer. Cook, uncovered, turning the pears occasionally, for 4 minutes. Add scallions and cook until the pears are tender, about 2 minutes more.
  • Mix together the water and cornstarch into a slurry and add to the pan. Stir until the sauce thickens. Reduce heat to low and return the pork and any accumulated juices to the pan; turn to coat with the sauce.
  • Serve immediately.

PORK CHOPS WITH PEAR SAUCE

Pork Chops with Pear Sauce image

I created this recipe because I have found that many pork recipes have little flavor, are too spicy, or just require too much work. My husband and I prefer sweet food rather than spicy or sour, hence a new pork recipe was born. This is delicious when served with rice and green vegetables as side dishes.

FILIPINO PORK INASAL RECIPE BY TASTY

Filipino Pork Inasal Recipe by Tasty image

Inasal, or inihaw, is a style of Filipino barbecue that features pork, chicken, or beef marinated in cane vinegar, soy sauce, calamansi or another citrus juice, garlic, ginger, lemongrass, spices, sugar and/or banana ketchup, and sometimes even Sprite or Coke! The meat is grilled over wood, charcoal, or on a gas grill and can be served as a snack, or as a complete meal with rice and vegetables alongside. Calamansi is a tiny citrus fruit grown in the Philippines-it's floral and tart when green and becomes a bit sweeter as it ripens and turns yellow.

Categories     Appetizers

Time 5h

Yield 4 servings

Number Of Ingredients 15

¼ cup sugar cane vinegar, such as Datu Puti, Marca Pina or Silver Swan, plus more for serving
½ cup soy sauce, such as Lauriat, Datu Puti, Silver Swan
4 tablespoons lemon juice, fresh calamansi juice
1 tablespoon fresh ginger, minced
1 tablespoon garlic, minced
2 stalks lemongrass, cut into 2-inch (5 cm) pieces and smashed
½ cup dark brown sugar
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 lb pork loin roast, shoulder/butt, or belly (with more meat than fat), sliced into strips about 2 inches (5 cm) long, 1 inch (2.54 cm) wide, and ¼ inch (6 mm) thick
1 tablespoon achiote
¼ cup canola oil, or grapeseed oil, plus more for grilling
¼ cup banana ketchup, such as UFC brand or Jufran
short grain rice, steamed, for serving
16 bamboo skewers, soaked (wrap exposed tips in aluminum foil to prevent burning)

Steps:

  • In a large bowl, mix together the cane vinegar, soy sauce, calamansi juice, ginger, garlic, lemongrass, sugar, salt, and pepper. Stir until the sugar and salt have dissolved.
  • Add the pork to the bowl with the marinade and toss with your hands or spatula to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  • Make the basting sauce: In a small bowl, stir together the annatto powder, canola oil, and banana ketchup.
  • Preheat the grill to medium heat.
  • Thread 4-5 pieces of marinated pork (about 2 ounces) onto each skewer.
  • Use a clean cloth or paper towel dipped in canola oil to lightly grease the grill grates. Place the pork skewers on the grill and cook for 5-6 minutes per side, brushing with the basting sauce after turning, until the internal temperature is between 145°F and 160°F, 10-12 minutes total.
  • Serve the pork inasal hot with steamed rice and cane vinegar, if desired.
  • Enjoy!

ROAST PORK WITH PEAR SAUCE

Roast pork with pear sauce image

You know pork's good with apple sauce, but have you tried it with pears? The sauce is also good with game or duck

Provided by Barney Desmazery

Categories     Lunch, Main course

Time 2h10m

Number Of Ingredients 7

2kg loin of pork , on the bone
2 tbsp sunflower oil
25g butter
4 ripe pears , peeled, cored and chopped into chunks
1 tbsp fennel seeds
150ml perry or dry cider
2 tbsp golden caster sugar

Steps:

  • Heat oven to 240C/fan 220C/gas 9. Dry the skin of the pork with kitchen paper, then rub with the oil and season generously with sea salt. Sit the pork in a roasting tin, then roast for 20 mins. Reduce the heat to 190C/fan 170C/gas 5 and continue to roast the pork for 1 hr 20 mins until cooked and skin has turned to crisp crackling. If the skin isn't crisp enough, turn the oven back up to 240C/fan 220C/gas 9 for a further 10 mins.
  • While the pork is roasting, make the pear sauce. Heat the butter in a saucepan and sizzle the pear chunks and fennel seeds together until they start to brown. Add the perry or cider and sugar. Bubble everything down until the perry is reduced and has become sticky and caramelised, and the pear is tender and starting to collapse. If the pears don't break down, use a potato masher to mash into a rough purée. Serve the sauce in a bowl alongside the pork with your favourite side dishes.
