1/4 cup all-purpose flour
Coarse salt and ground pepper
1 1/2 pounds pork tenderloin, trimmed, and sliced on the bias into 1/2-inch-thick medallions
1 to 2 tablespoons olive oil
1 small clove garlic, minced
3/4 cup fresh orange juice (about 3 oranges)
1 tablespoon fresh lemon juice
1 tablespoon capers, drained and rinsed (optional)

Steps:

  • In a shallow dish, whisk together flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Place pork slices on a clean work surface, and press with the heel of your hand until each is about 1/3 inch thick. Lightly dredge pork in flour mixture, turning to coat completely; tap off excess.
  • In a 12-inch nonstick skillet, heat 1 tablespoon oil over medium-high heat. Working in batches so as not to crowd pan, add pork; sear until browned, about 2 minutes per side. Transfer to a platter. Add more oil to skillet, if needed. Cover with foil.
  • Add garlic; cook, stirring, until fragrant, about 1 minute. Add capers, if desired, and citrus juices. Bring to a boil, stirring up any browned bits from bottom of pan. Cook until sauce is slightly thickened, 2 to 3 minutes. Season with salt and pepper, as desired. Serve sauce over pork.

1/4 cup reduced-sodium soy sauce

4 bone-in pork loin chops (7 ounces each)
1 tablespoon cornstarch

Steps:

  • In a small bowl, combine the first seven ingredients. Pour a scant 1 cup into a large bowl. Add pork chops; turn to coat. Cover and refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade for sauce., Drain and discard marinade. On a lightly oiled grill rack, grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. 4 Pork (from the hip, each 200 grams)
1 Tbsp clarified butter
1 Red onion (finely chopped)
2 Tbsps Brandy
300 milliliters Orange juice
1 Tbsp grainy Mustard
1 Tbsp liquid honey
1 Tbsp Worcestershire sauce
1 Orange (thinly sliced)
salt
freshly ground peppers
2 carrots
150 grams Snow peas
2 Tbsps butter

Steps:

  • Season the meat with salt and pepper and sear in in a pan in clarified butter over high heat for about 3 minutes on each side. Remove from pan, wrap in aluminum foil and keep warm.
  • Sauté onion in the butter that remains in the pan. Pour in brandy, bring to a boil and add orange juice, mustard, Worcestershire sauce and honey. Return to a boil, add orange slices and cook until syrupy over high heat. Season with salt and pepper.
  • Peel carrots and cut into slices. Rinse snow peas and cut off ends. Blanch carrots in boiling salted water for 4 minutes. Then add snow peas and cook another 4 minutes. Drain, rinse in cold water and drain.
  • Heat vegetables in a pan in 2 tablespoons melted butter, stirring to coat. Season with salt and pepper.
  • Add the meat to the sauce with accumulated juices, heat through and serve with the vegetables.

1 tablespoon brown sugar
1/2 teaspoon ginger

Steps:

  • Coat pork chops in seasoned flour.
  • Heat butter in large frying pan and brown chops well on both sides.
  • Arrange in casserole dish.
  • Combine sugar, ginger, grated rind and the juice of the oranges and pour over chops.

2 pounds country-style pork ribs, or boneless steaks cut from shoulder, about 3/4 to 1 inch thick
Salt and pepper
1 1/2 cups freshly squeezed orange juice
1/4 teaspoon cayenne, or to taste
1 teaspoon ground cumin
1 shallot, minced
Vinegar or fresh lemon or lime juice, if necessary
1 teaspoon grated orange rind
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat oven to 450 degrees or heat broiler, adjusting rack so that it is about 4 inches from heat source. Put an ovenproof skillet large enough to hold pork in one layer on stove top and turn heat to high. Sprinkle meat with salt and pepper. Brown meat quickly on both sides, then transfer skillet to oven or broiler.
  • Meanwhile, combine orange juice, cayenne, cumin and shallots in a small saucepan and turn heat to medium. Cook, stirring, until it reduces to about 1/3 cup; taste and add salt as necessary, a touch more cayenne and cumin if you like, and some vinegar or lemon juice if sauce lacks acidity.
  • If broiling, turn meat once; if roasting, don't bother. When meat is firm but not tough and a little pink in center (about 10 minutes if broiling, 15 if roasting), remove it to a platter. Combine orange rind with parsley. Spoon sauce over meat, then top with orange rind-parsley mixture. Serve.

ONE-POT PORK WITH ORANGE, OLIVES & BAY



One-pot pork with orange, olives & bay image

A Provençal-style pork casserole with vibrant citrus flavours, sweet shallots, new potatoes and sundried tomatoes

85g sundried tomato in oil, roughly chopped, plus 2-3 tbsp oil from the jar
1kg pork shoulder , cut into chunky cubes
2 tbsp plain flour , seasoned
400g shallot (see tip, below)
1 onion , thinly sliced
3 bay leaves
few thyme sprigs
5 garlic cloves , thinly sliced
400ml red wine
strip of zest and juice from 1 orange
350ml chicken stock
400g can chopped plum tomato
800g large new potato , peeled & halved or cut into fat slices, depending on size
70g pack dry black olive

Steps:

  • Heat 1 tbsp of the sundried tomato oil in a large, flameproof casserole dish. Toss the pork in the flour, tap off any excess, then brown it in 2 batches, transferring to a large bowl once golden and crusted. Use a splash more oil for the second batch if needed.
  • Tip 1 tbsp oil, shallots, onion, bay leaves and thyme into the pan and fry for 5 mins until golden here and there. Stir in the garlic and sundried tomatoes, cook for 1 min more, then tip onto the pork.
  • Splash the wine and orange juice into the dish, add the orange zest and boil hard for 5 mins. Add the meat and onions back in.
  • When ready to cook, heat oven to 160C/140C fan/gas 3. Stir the stock, canned tomatoes, potatoes and olives into the casserole, then bring to a simmer. Prod the potatoes as far under the surface of the liquid as you can. Cover, leaving a slight gap to one side, then cook in the oven for 2½ hrs, or until the meat is tender enough to cut with a spoon. Spoon away any excess fat and let the stew rest for a few mins before ladling into shallow bowls.

1 -1 1/2 lb pork tenderloin
seasoning salt, to taste
1/2 cup orange juice
1/4 cup chicken broth
2 tablespoons ketchup
1 tablespoon honey
1 teaspoon orange zest
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon arrowroot (optional)

Steps:

  • Preheat oven to 425 degrees, season the pork tenderloin with seasoning salt, place in roasting dish and place in preheated oven; back for 20 to 25 minutes or until meat thermometer registers 160 degrees.
  • Remove meat from oven and cover with foil, allow to stand while making sauce.
  • In a small skillet, add the juice, broth, ketchup, honey and orange zest; bring to a boil, reduce heat and simmer for 10 to 15 minutes or until liquid is reduced by half.
  • Slice the pork in 1/4 inch slices, add to sauce with the rosemary and simmer for 4 to 5 minutes or until meat is nicely glazed.
  • If desired, mix the 1/4 teaspoon arrowroot starch in a small amount of water and add to sauce to thicken slightly.

Kosher salt
4 dried guajillo chilies or other medium-heat dried red chiles, stemmed and seeded
1 tablespoon honey
1 teaspoon dried marjoram or Mexican oregano
Pinch ground cinnamon
Pinch ground cloves
Freshly ground black pepper
3 to 4 cloves garlic
2 organic or blood oranges, zested and juiced
1 small onion, chopped
2 1/4 cups chicken stock or water
1 tablespoon butter
1 1/4 cups white long-grain rice
Kosher salt
1/2 cup frozen green peas, thawed
Two 14-ounce cans black beans
Freshly ground black pepper
1/2 teaspoon ground cumin
Corn tortillas, for serving
Pickled Onions, for serving, recipe follows
Cilantro leaves, for garnish
1 cup red wine vinegar
1 tablespoon kosher salt
1 teaspoon sugar
1 red onion, sliced into rings
1 teaspoon coriander seeds
2 bay leaves
1 fresh chile pepper, Fresno or jalapeno, sliced

Steps:

  • For the pork: Place the pork in a Dutch oven with just enough water to cover and sprinkle with salt. Bring to a boil, and then reduce the heat and simmer, 20 to 30 minutes. Place the dried chiles in a small pot with 1 1/2 cups of the pork cooking water and simmer until softened, 5 to 10 minutes. Transfer to a food processor and puree with the honey, marjoram, cinnamon, cloves, some black pepper, garlic, orange zest and juice and onions. Add the puree to the Dutch oven with the pork and simmer 20 minutes. Remove and shred or chop the pork. Continue cooking the sauce until thickened to desired consistency, and then return the pork to the pot. Keep warm over low heat until ready to serve. For the toppings and sides: Boil the chicken stock with the butter, and then stir in the rice. Sprinkle with salt, if using water. Cover, reduce the heat and cook 15 minutes. Stir in the peas, and cook 2 to 3 minutes longer. Turn off the heat and fluff with a fork. Meanwhile, heat the black beans and season with salt, black pepper and cumin. Char the tortillas in a dry skillet. Serve the pork with the sauce and tortillas, for wrapping. Serve the beans in small cups or atop the pork, with the rice, peas and Pickled Onions alongside. Garnish with cilantro leaves. Cook's Note: Cool and cover for a make-ahead meal. Bring to room temperature before reheating over medium heat.
  • Bring the vinegar, salt, sugar and 1 cup water to boil. Place the onions, layered with the coriander, bay leaves and chiles, in a small container, and pour the hot vinegar on top. Allow to cool, then cover and chill at least 2 hours and up to 2 days before using.
