Honey-Mustard Pork with Spinach & Smashed White Beans image

Drizzle the quick honey-mustard pan sauce over the pork and beans in this 30-minute dinner for a comforting, healthy weeknight meal.

1 ¼ pounds pork tenderloin, trimmed
½ teaspoon salt, divided
½ teaspoon ground pepper
3 tablespoons extra-virgin olive oil, divided
1 pound mature spinach, chopped
2 cloves garlic, minced
1 ½ teaspoons chopped fresh sage
¼ teaspoon crushed red pepper
2 (15 ounce) cans low-sodium cannellini beans, rinsed
¾ cup low-sodium chicken broth, divided
3 tablespoons honey
2 tablespoons whole-grain mustard

Steps:

  • Preheat oven to 425 degrees F.
  • Season pork with 1/4 teaspoon salt and pepper. Heat 1 tablespoon oil in a large ovenproof skillet over medium-high heat. Add pork and cook, turning often, until browned on all sides, 3 to 5 minutes total. Transfer the pan to the oven. Roast until an instant-read thermometer inserted in the center registers 145 degrees F, 12 to 15 minutes.
  • Meanwhile, heat 1 tablespoon oil in a large pot over medium-high heat. Add spinach and 1/8 teaspoon salt; cook, stirring, until wilted, 2 to 3 minutes. Transfer to a bowl; cover to keep warm.
  • Heat the remaining 1 tablespoon oil in the pot over medium heat. Add garlic, sage and crushed red pepper; cook for 30 seconds. Add beans, 1/2 cup broth and the remaining 1/8 teaspoon salt. Mash with a potato masher until almost smooth. Reduce heat and cook, stirring often, until hot, about 5 minutes. Remove from heat and cover.
  • Transfer the pork to a clean cutting board and let rest for 5 minutes. Add honey, mustard and the remaining 1/4 cup broth to the pan (the handle will be hot). Bring to a boil over medium-high heat, scraping up any browned bits. Reduce heat and simmer until thickened slightly, 1 to 2 minutes.
  • Slice the pork. Serve with the spinach, mashed beans and sauce.

1 pork steak , trimmed of fat
1 tbsp olive oil
1 small onion or shallot , chopped
1 garlic clove , crushed
half a 410g can haricot beans in water, rinsed and drained
125ml vegetable stock
1 tbsp chopped coriander

Steps:

  • Grill the pork for 12-15 mins, turning once until browned and cooked through. Heat the oil in a small pan, add the onion or shallot and fry for 3 mins until softened. Add the garlic, fry for 1 min more, then tip in the beans and stock and simmer for 5 mins. Roughly mash with a potato masher or fork, then stir in the coriander. Serve with the pork.

1 pound small fingerling potatoes
2 cloves garlic
Kosher salt
4 1/2-inch-thick boneless pork loin chops (5 ounces each)
2 teaspoons chopped fresh sage
Freshly ground pepper
1 tablespoon extra-virgin olive oil
1 large red onion, cut into 1/2-inch wedges
2 Granny Smith apples, cut into 1/2-inch pieces
3/4 cup apple cider
1/4 cup buttermilk

Steps:

  • Put the potatoes and garlic in a saucepan, cover with cold water and season with salt. Cover and bring to a boil, then uncover and continue cooking until tender, about 15 minutes. Cover and set aside.
  • Meanwhile, rub both sides of the pork chops with the sage, and salt and pepper to taste. Heat a large cast-iron skillet over high heat, then add 1 teaspoon olive oil and sear the chops until golden on both sides, about 5 minutes total. Transfer to a plate. Wipe out the skillet and add the remaining 2 teaspoons olive oil. Add the onion and apples and cook over medium-high heat until lightly browned, about 5 minutes. Season with salt and pepper and stir in the cider.
  • Return the chops to the skillet. Cover and cook, turning once, until just cooked through, 4 to 5 minutes. Drain the potatoes, reserving 1/4 cup liquid. Return the potatoes to the pan; add the buttermilk and mash, adding cooking liquid as needed. Season with salt and pepper. Serve with the pork chops, onion and apples. Drizzle with the pan juices.

1 1/2 pounds boneless country-style pork ribs, patted dry
Coarse salt and ground pepper
3 teaspoons extra-virgin olive oil
1 3/4 cups low-sodium chicken broth
3 tablespoons all-purpose flour
Chili powder
2 sweet potatoes (1 pound), peeled and cut into 1-inch pieces
1/2 cup sour cream
2 teaspoons sugar
3 garlic cloves, thinly sliced
1 pound green beans, trimmed

Steps:

  • Season pork with salt and pepper. In a large straight-sided skillet, heat 1 teaspoon oil over medium-high. Add pork and cook until browned on both sides, about 7 minutes total. Whisk together broth, flour, and 1/2 teaspoon chili powder and add to skillet. Bring liquid to a boil; reduce to a rapid simmer, cover, and cook 30 minutes. Uncover and cook until pork is tender and sauce is thickened, about 20 minutes.
  • Meanwhile, in a medium pot, bring sweet potatoes to a boil in salted water over high. Reduce to a rapid simmer and cook until tender when pierced with a knife, 20 minutes. Drain potatoes and return to pot; mash until fluffy and almost smooth. Stir in sour cream and sugar, season with salt and pepper, and keep warm over low heat.
  • In a large skillet, heat 2 teaspoons oil over medium-high. Add garlic and cook until fragrant, 30 seconds. Add green beans and 1/4 cup water, cover, and cook 3 minutes. Uncover and cook, stirring occasionally, until crisp-tender and water is evaporated, 2 minutes. Season with salt and pepper and serve with pork, sauce, and sweet potatoes sprinkled with chili powder.

Like other commonplace ingredients, beans too often fail to get their culinary due. Prepared with a little care, they can be as good in their own way as caviar, with subtly distinct, satisfyingly earthy flavors and a texture perfectly pitched between tenderness and chew. This recipe provides a classy twist on the typical view of pork and beans and even includes the use of that ubiquitous green, kale.

1 pound white or cannellini beans, soaked overnight or quick-soaked
1 tablespoon olive oil
1 pound boneless pork butt, cut into 1-inch cubes
1 onion, sliced
12 to 15 peeled whole garlic cloves
1 cup chopped tomatoes
2 cups thinly sliced kale or mustard greens
2 tablespoons grainy mustard
2 teaspoons kosher salt
1 teaspoon black pepper
About 1 quart chicken stock

Steps:

  • Drain and rinse the soaked beans, then heat the oven to 350.
  • Heat the oil in a 6-quart Dutch oven or other large, heavy pot over medium-high until hot but not smoking. Add the pork and brown well on all sides, about 10 to 12 minutes. Remove the pork from the pot, add the onion and sauté, stirring occasionally until translucent, 5 to 7 minutes. Add the garlic and sauté, stirring frequently, 1 minute.
  • Add the pork, along with the beans, tomatoes, greens, mustard, salt and pepper and enough chicken stock to cover. Stir well and bring the mixture to a simmer.
  • Cover and transfer the pot to the oven and bake until the beans are tender, 2 1/2 to 3 hours, checking every half-hour or so after the first hour and adding water as needed if all the liquid has been absorbed.

I made up this recipe a couple of nights ago and didn't measure anything as I went along. It was so tasty that I thought I would post it here. All the measurements are approximations, so adjust them as you see fit. My sauce was thin but not watery which made for a lighter texture. I think this would be a great crock pot recipe too! I served this dish with a Romaine and Mandarin Orange Salad with a light Ginger dressing, Sesame Green Beans and Steamed Rice. Enjoy!

4 -6 pork chops
1 tablespoon vegetable oil
1 cup chicken broth
1/4-1/3 cup bottled black bean garlic sauce
1/4 cup water
1 tablespoon cornstarch

Steps:

  • In a large pan, brown both sides of pork chops in oil.
  • Stir together chicken broth and Garlic Black Bean Sauce and add to pan.
  • Cover and simmer for 45 minutes.
  • Transfer chops to a serving dish, leaving sauce in the pan.
  • Stir together water and corn starch; add to sauce and cook until thickened a bit.
  • Pour thickened sauce over chops and serve.
