PORK TERRINE
Need an easy starter for your Christmas Day guests? This is an excellent recipe as you can make it up to 2 days ahead

- Put the pork, garlic, thyme and brandy in a bowl, cover and leave to marinate for a few hours or overnight in the fridge. Heat the oven to 180c/fan 160c/gas 4 and butter a terrine mould or loaf tin.
- Starting with the base and sides, line the mould with strips of bacon making sure they are slightly overlapping and leave the ends hanging over the edge. This will be the top when you turn it out so do it as neatly as you can. Line the ends of the mould.
- Break up the sausage meat with a fork then put it in the bowl with the marinated pork, sage, chives and olives and season well. mix throughly. Fry a small piece of the mix and check seasoning. Add more if it needs it.
- Fill the lined dish with half of the pork mixture, pressing it down into the corners.
- Arrange the cornichons in 3 rows down the centre.
- Pack the remaining pork on top and then flatten and stretch the bacon over so the top is neatly covered. Trim any ends. cover with buttered foil and wrap the whole terrine in a double layer of clingfilm.
- Put the terrine in a roasting tin, half fill with boiling water and bake for 1 hour. Leave to cool completely then chill overnight. For a firmer texture press the terrine as it chills using a board with some tins stacked on top.
- Release the terrine by unwrapping then dipping the dish briefly in hot water and turning it out onto a plate or board. Serve with more cornichons.

HAM HOCK TERRINE
Cured slow-cooked pork is a great foundation for a coarse pâté style starter and can be made in advance

- Put the ham hocks in a large pan with the stock ingredients. Cover with cold water. Set pan over a high heat and bring to the boil. Reduce heat to a simmer, cook for 2 and a half to 3 hrs or until the meat falls from the bone. Leave to cool in the pan.
- Grease a 1-litre terrine mould or loaf tin with the oil, then line with cling film. Remove the hocks, then strain the stock through a fine sieve into a pan. Set aside.
- Shred the ham, leaving some large chunks, removing as much fat and sinew as possible. In a large bowl, mix the ham with the mustard and parsley. Press the mixture into the prepared terrine.
- Bring the reserved stock back to a rapid boil and reduce by half. You should have about 600ml/1pt liquid remaining. Remove from the heat. Meanwhile, soak the gelatine in cold water for 5 mins to soften. Remove from the water, then squeeze out any excess liquid. Add the gelatine to the hot stock and stir well.
- Pour enough of the stock over the ham to just cover. Tap terrine firmly on a hard surface to knock out air pockets, then cover with cling film. Chill for 3-4 hrs or overnight. To serve, remove from the mould and carve into chunky slices. Serve with caper berries and toast.

MARY BERRY'S STICKY SOY AND GINGER PORK FILLET
The flavourful marinade does all the hard work in this sticky soy and ginger pork fillet recipe from Mary Berry.

- To make the marinade, measure all the ingredients into a dish and mix well. Trim any sinew from the fillet and discard. Sit the fillet in the marinade, season with salt and black pepper and turn to coat until all the fillet is covered. Leave to marinate for a few hours in the fridge. Preheat the oven to 220°C/200°C fan/Gas 7 and line a small roasting tin with non-stick baking paper. Removed the fillet from the marinade (reserving the marinade to use later) and sit it in the roasting tin. Roast in the oven for 25-30 minutes, until golden brown and cooked through. Remove the fillet from the roasting tin and set aside on a board to rest. Cover with foil and leave for 5 minutes before carving. Place the reserved marinade in a small saucepan and place over a medium heat. Bring to a simmer, stirring occasionally. Carve the pork into slices and arrange on a platter. Pour the hot marinade over the top and scatter with the spring onions, red chilli and coriander. Serve with rice or noodles. Mary's tips: Can be marinated up to 8 hours ahead. if serving cold can be roasted up to 4 hours ahead. Freezes well raw in the marinade.
SUMMER FRUITS TERRINE OR BODACIOUS BERRIES IN WINE JELLY!
This is one of my favourite recipes, when the soft fruit season arrives, I try to make this at least once......and it is STUNNING if served as the finale to a dinner party. This is an unashamed copy of a recipe by Delia Smith, with very few modifications of my own, as she gives such great ideas and suggestions on how to make this elegant and LOW fat dessert. The directions may seem long-winded, but they are really just useful tips on how to weight the terrine down overnight. Serve this in slices with a red berry coulis and crème fraîche or cream. Fruit juice can be used if this is being served to children or to anyone who does not drink alcohol - I suggest a red fruit juice.

- In addition to the ingredients, you will also need two 2 lb (900 g) loaf tins, 7½ x 4¾ inches x 3½ inches deep (19 x 12 cm x 9 cm deep), preferably non-stick but anyway with a good surface.
- First, prepare the fruit: remove the stalks and halve the strawberries if they are any larger than a quail's egg. Then mix the fruits together in a large bowl, being very gentle to avoid bruising them.
- In a small saucepan heat half the rosé wine until it begins to simmer, then whisk the sugar and gelatine into it. Make sure that everything has dissolved completely before adding the remaining wine and the lime juice. Then pour the liquid into a jug and allow it to cool. While that is happening, lay the mixed fruit in one of the loaf tins - and it is worth arranging the bottom layer with the smallest, prettiest-shaped fruit as this will be on top when the terrine is turned out.
- Next, pour all but 5 fl oz (150 ml) of the liquid over the fruit. Now lay a sheet of clingfilm over the tin, place the other tin directly on top, then put two unopened tins of tomatoes or something similar to act as weights into the top tin and put the whole lot into the fridge for about 1 hour, or until it has set. Then warm up the remaining 5 fl oz (150 ml) wine mixture and pour it over the surface of the terrine. Re-cover with clingfilm and return to the fridge overnight to set firm.
- When you are ready to serve, turn out the terrine by dipping the tin very briefly in hot water and inverting it on to a plate. Use a very sharp knife (also dipped first into hot water) to cut it into slices. Serve with red berry coulis, chilled pouring cream, crème fraîche or Greek yoghurt.

- Gently heat the oil in a pan over a low heat and soften the shallots for 8 minutes, then cool. Mix with all the other ingredients except the whole bacon rashers. Fry a little piece in a pan, then taste and adjust the seasoning as necessary.
- Preheat the oven to 160°C/fan140°C/gas 3. Stretch each bacon rasher with the back of a knife to a length of about 28cm.
- Line a 1.2 litre terrine or loaf tin with the bacon, overlapping the slices and leaving the ends hanging over the sides. Fill with the mixture, making sure it gets into the corners (it will dome slightly above the tin).
- Bring the bacon up to enclose the filling. Cover the tin with lightly oiled foil, tightly scrunching it around the sides. Put the terrine in a deep roasting tray and fill with boiling water to come halfway up the sides of the terrine. Bake for 1 hour-1 hour 15 minutes. Remove the foil, drain any excess juices and return to the oven for a further 15 minutes. The terrine should be firm, the juices should run clear when pierced with a skewer and a thermometer probe inserted into the centre should reach 65°C.
