PORK BURGERS WITH BACON MARMALADE

- Make the bacon marmalade: Cook the bacon in a large nonstick skillet over medium-high heat until almost crisp, 5 minutes. Pour out half of the drippings, add the onion to the skillet and cook, stirring, until the onion browns, 10 more minutes (add a splash of water if the onion sticks). Stir in the hot sauce, sugar, vinegar, and salt and pepper to taste.
- Form the pork into four 4-inch-wide patties; season with salt and pepper. Heat the olive oil in a large skillet over medium-high heat, then add the patties and cook 4 to 5 minutes per side, topping each with a slice of cheese about 3 minutes before they're done.
- Spread the bacon marmalade on the bun bottoms and top each with some lettuce, a patty, a tomato slice and a bun top.
- Drizzle the remaining lettuce and the chopped tomato with olive oil and vinegar, and season with salt and pepper; toss. Serve with the burgers.

- Set the oven to Gas Mark 7 or 220°C. Put the pork into a bowl and add the onion, mustard and seasoning. Chop 4 sage leaves and mix together with the pork to evenly combine.
- Line a baking tray with a non-stick Teflon sheet. Divide the pork into 4 and shape into burgers directly on the lined baking tray. Wrap a rasher of bacon around each burger and top each one with a sage leaf.
- Bake for 25 mins until pork is well cooked and the bacon crispy. (There's no need to turn them while they're cooking.)
- Add the chips to the oven and cook according to the packet instructions.
- Meanwhile, mix together the white and red cabbage with the carrots and salad cream. Stir to combine. Serve the burgers with the chips and coleslaw. To freeze this dish, open-freeze burgers before cooking. Once frozen, line with parchment paper and put into a freezer bag for up to 3 months. Cook them in the oven from frozen for 35 mins.

Steps:
- Fry bacon until done but not crisp, add minced garlic half way through cooking bacon. Drain fat and set aside.
- In a bowl mix eggs, rosemary, thyme and pepper until blended.
- Add pork, shallot, onion, and the rest of the ingredients including the bacon/garlic, but not the cheese.
- Mix thoroughly and form patties.
- BBQ on medium for 10-12 mins per side.
- Top with cheese and your favorite toppings on a bun.
- * I mixed mayo, mustard and some finely chopped red onion together to spread on the bun -- delicious!

- Start by heating a sautee pan over high heat with 1 TBSP olive oil. When the oil shimmers, add in the onion and cook for 3 minutes. Reduce the heat to medium, add a pinch of salt and the shallots. Stir and continue to cook for 4-5 more minutes. Remove and add the shallots and onions to a mixing bowl.
- In the same mixing bowl, add in all the remaining burger ingredients. Mix well by hand until all the ingredients are incorporated.
- Form eight pork burgers and take them to the grill. Cook on one side for 7-8 minutes. Flip and cook on the other for 7-8 minutes or until cooked through.
