1 ½ tablespoons fresh rosemary
2 teaspoons garlic salt
½ teaspoon dried thyme
¼ teaspoon freshly ground black pepper
3 pounds boneless pork loin roast

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large, resealable plastic bag, mix rosemary, garlic salt, thyme, and pepper. Place pork roast in the bag, seal, and toss until thoroughly coated with the garlic salt mixture. Transfer to a medium baking dish.
  • Cook pork roast 1 hour in the preheated oven, or to an internal temperature of 145 degrees F (63 degrees C).

2 tablespoons Dijon mustard
1 tablespoon apple cider
One 6-bone pork roast, loin and rack of ribs separated
2 tablespoons smoked paprika
Kosher salt and freshly ground black pepper
Olive oil, for drizzling
2 carrots
2 parsnips
2 Yukon gold potatoes
2 turnips
1 head garlic, separated into cloves with skins on
Small bundle thyme
2 tablespoons all-purpose flour
1 cup apple cider
Fresh flat-leaf parsley, finely chopped

Steps:

  • Preheat the oven to 450 degrees F.
  • For the pork: Mix together the mustard and apple cider and brush all sides of the pork loin and ribs with the mixture. Liberally sprinkle the pork loin and ribs with the smoked paprika, 1 tablespoon salt and 2 tablespoons cracked black pepper. Add some oil to a cast-iron skillet or roasting pan, then place the rack of ribs, curved-side down, in the skillet and place the loin, fat-side up, on top of the ribs. Roast until the internal temperature of the loin reaches 145 degrees F, about 30 minutes.
  • While the pork begins to roast, cut the carrots, parsnips, potatoes and turnips into wedges using an oblique cut: Place a vegetable on a cutting board and hold your knife at a 45-degree angle to the vegetable. Cutting roughly 1-inch slices on the diagonal, roll the vegetable a quarter turn toward you each time you make a cut so you're cutting point to point until the vegetable is completely cut. Add the carrots, parsnips, potatoes, turnips, garlic and thyme to the skillet with the pork roast. Drizzle with some olive oil and sprinkle with salt and pepper. Return the skillet to the oven and continue to cook until the loin reaches 145 degrees F.
  • Transfer the pork loin to a cutting board to rest and tent with foil. Return the skillet to the oven and cook until the ribs and vegetables are cooked through, about 30 minutes.
  • Remove the skillet from the oven, transfer the vegetables to a platter and transfer the ribs to a cutting board.
  • For the pan gravy: Heat the same skillet over medium heat. Add the flour and whisk until it absorbs the fat in the skillet. Slowly whisk in the cider and 1 cup water and bring to a simmer, whisking constantly to smooth out any lumps, until the sauce thickens slightly, about 2 minutes. Stir in the parsley and set aside.
  • Cut the rack of ribs into individual ribs and scatter over the roasted vegetables. Slice the pork loin and shingle onto the platter. Spoon the pan gravy over the top and serve.

PORK ROULADE WITH ROASTED RED POTATOES

One 1 1/2-pound pork loin
1 bunch broccoli rabe
1 cup breadcrumbs
3 links sweet Italian sausage, casings removed
1/2 cup grated Parmesan
1 egg
4 ounces caul fat
4 ounces prosciutto, cut into long slices
Olive oil, for cooking
Roasted Red Potatoes, for serving, recipe follows
5 red potatoes, quartered
1/4 cup grated Parmesan
1 clove garlic, chopped
Chopped fresh rosemary, for sprinkling
Salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Butterfly the pork loin and pound it out to an even thickness of 1/2 to 3/4 inch.
  • Add the broccoli rabe to a large pot of boiling water and cook until just tender, 2 to 3 minutes. Submerge the broccoli rabe in a bowl of ice water until cooled, then wring it out to remove as much water as possible. Roughly chop and add to a medium bowl.
  • To the broccoli rabe, add the breadcrumbs, sausage, Parmesan and egg; stir to combine. Lay a large piece of caul fat out on a large, flat work surface. Lay about 6 prosciutto slices in the middle, slightly overlapping. Arrange the flattened out pork loin on top of the prosciutto. Set the sausage mixture on the pork loin and shape it into a neat, even log. Wrap 2 pieces of prosciutto around each end of the log and fold the prosciutto that's underneath up and around the pork. Roll the pork loin around the filling and into a log, wrapping the caul fat around it in an even layer. Tie with butcher's twine to secure.
  • Coat a pan with olive oil and place it over medium-high heat. Sear the pork roulade until golden brown on all sides. Transfer to a baking dish and bake 10 minutes (reserve the fat in the pan for the Roasted Red Potatoes). Flip the roulade and continue to bake until the internal temperature registers 150 degrees F, about 10 minutes more. Let rest for 5 minutes, then remove the string. Slice and serve with Roasted Red Potatoes.
  • Preheat the oven to 375 degrees F.
  • Put the potatoes in a large bowl along with the fat from searing the roulade. Add the Parmesan, garlic, rosemary and some salt; toss to coat. Spread the potatoes out on a baking sheet and bake until tender, 20 to 25 minutes.

KALAKAUA ROYAL CROWN PORK ROAST

This recipe is named in honor of King Kalakaua of Hawaii when Hawaii was a Kingdom and not a state. He was a lover of good food and I think he would have enjoyed this crown roast of pork. This recipe comes from a really old cookbook, dated 1901, so it has been around in this form for a long time. I hope everyone will enjoy it. It has been modified for todays kitchens. Marinade time not in time calculations.

1 (8 lb) pork crown roast (14 to 16 ribs)
salt and black pepper, to taste
1 1/2 tablespoons lemon juice
2 tablespoons parsley, chopped
1 garlic clove, minced
1 tablespoon olive oil
1 teaspoon fresh basil, chopped
2 tablespoons onions, minced
1/2 cup butter
1/4 cup onion, chopped
1/2 cup celery, chopped
1 garlic clove, minced
4 cups breadcrumbs
1 egg, well beaten
1 tablespoon sherry wine or 1 tablespoon red wine
1/4 tablespoon fresh sage, chopped
1/4 teaspoon thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup macadamia nuts, chopped
3/4 cup chicken broth

Steps:

  • Season meat with salt and pepper. Combine lemon juice, parsley, garlic, oil, basil and onion. Make slits on inside of roast and fill with marinade. Rub roast with remaining marinade.
  • Use aluminum foil to cover tips of the ribs and place a large aluminum foil ball in the cavity of the roast to help keep its shape and allow to the roast to cook faster.
  • Allow 2 hours marinade time in refrigerator and 30 minutes of counter time to allow roast to return to room temperature before you start to cook it.
  • During the 30 minutes of counter time wait or can be made 1 day ahead (cover and chill), start the dressing by melting the butter and sauteing the onions and celery. When onion is translucent, take the saute mixture and mix with the remaining ingredients. Butter 13x9x2-inch baking dish. Transfer stuffing to prepared dish. Cover with foil.
  • Preheat oven to 350°F General cooking time is 1 ¼ hours to 1 ¾ hours for an 8 lb roast but it is recommended that you use a meat thermometer. When the internal temperature reaches 140° to 145° the roast can be removed from the oven.
  • Add the stuffing to oven about 20 minutes after you start the roast cooking. Bake 45 minutes. Uncover and bake until golden brown on top, about 10 minutes longer.
  • Allow the roast to rest on the counter for 10-15 minutes before serving. Allow one to two ribs per serving.

This really is the best pork roast I've ever eaten. I use fresh rosemary from my herb garden but dried will work. Even though the Marsala is optional, it's just not the same without it, in my opinion.

3 lbs pork loin roast, about
1/3 cup honey
1/3 cup Dijon mustard
1/4 teaspoon garlic powder
1/2 teaspoon rosemary
1 cup water, divided
1/2 beef bouillon cube
salt and pepper
2 -3 tablespoons marsala (highly suggested) (optional)
1 tablespoon cornstarch
3 tablespoons water

Steps:

  • Preheat oven to 400 degrees.
  • Place pork roast in a shallow metal pan.
  • Combine honey and Dijon mustard.
  • Coat top and sides of roast with this mixture.
  • Sprinkle garlic powder and rosemary over entire coated surface.
  • Roast meat for 15 minutes at 400 degrees, remove from oven and add 1/3 cup water to the bottom of the pan.
  • Reduce heat to 325 degrees and roast meat for 35 minutes per pound or until meat thermometer reaches 175 degrees.
  • Check roast occasionally and add a little more water to pan to keep honey drippings from scorching.
  • When meat is done, remove from oven and place on carving board.
  • Scrape pan and pour juices into a saucepan.
  • Add 1/2 cup water, 1/2 beef bouillon cube, salt and pepper to taste.
  • Add Marsala, if desired, and simmer long enough to cook away the alcohol smell.
  • Combine cornstarch and 3 Tablespoons water, add to sauce and cook until thickened.
  • Slice pork roast and serve with sauce.

1/2 cup port wine or grape juice
3 tablespoons orange juice concentrate
1 (17-ounce) can pitted dark sweet cherries drained and syrup reserved
1/3 cup walnuts broken halves

Steps:

  • Preheat oven to 325°. Place roast, fat-side up, on a rack in a shallow roasting pan. Sprinkle meat lightly with salt and pepper. Insert meat thermometer into center of roast without touching bone. Roast, uncovere d, until meat thermometer reaches 170° (about 1 1/2 to 1 3/4 hours).Meanwhile, in a small saucepan, combine cornstarch, sugar, cinnamon and cloves. Gradually stir in port or grape juice, orange juice and cherry syrup until smooth and blended. Cook and stir over medium heat until mixture boils and is thick and shiny. Stir in cherries and heat through. Cover and remove from heat.Transfer roast to a heated platter. Reheat sauce if necessary and stir in walnuts. Serve sauce separately.

Original poster's comment:Really yummy! This is a recipe adopted in the 2005 rush. I haven't tried it, but from the ingredients I agree with the reviewer's comment about bland so.... when I make it, these are the changes I will probably make: subtitutions would be hoisin for catsup, snow peas for beans. Additions would be minced or sliced ginger, mirin or sherry for part or all of the liquids, crushed chilis in the marinade.

2 tablespoons catsup
1 teaspoon crushed garlic
1 onion, sliced
1/2 teaspoon salt
1/2 cup water
1 (20 ounce) can sliced pineapple, drained and reserve syrup
1/2 lb string bean, cut into 3 inch
pineapple syrup
soy sauce
pepper
2 tablespoons brown sugar

Steps:

  • Marinate pork chops for 1 hour.
  • Grill and brush with oil until brown; set aside.
  • Sauté garlic and onion in a skillet.
