PORK AND BEANS
Here's an updated take on a campfire favorite. Pork chops simmer alongside saucy beans.

Steps:
- In medium bowl, mix barbecue sauce, vinegar, brown sugar and beans; set aside.
- In 12-inch nonstick skillet, heat oil over medium-high heat. Sprinkle salt and pepper over pork; place in skillet. Cook about 6 minutes, turning once, until both sides are browned.
- Reduce heat to medium. Stir in bean mixture. Cook 3 to 5 minutes or until pork is no longer pink in center.

PORK-N-BEANS CAKE

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour five 16 ounce cans OR two 8 x 4 inch loaf pans.
- In a large bowl, mix sugar, oil, eggs, and beans until smooth.
- In a separate bowl combine flour, cinnamon, baking powder, and soda. Add to bean mixture, stirring just until combined. Stir in raisins and vanilla. Fill cans 2/3 full with batter, or divide batter into prepared loaf pans.
- Place cans or pans on a baking sheet. Bake for 45 to 50 minutes, or until a tester inserted in the center of the cake comes out clean. Cool completely on wire racks before removing bread from cans or pans.

PORK N BEANS CAKE (SPICE CAKE) - EASY
I have never seen a Pork N Beans Cake recipe. I got this from my late Uncle and it tastes like a Spice Cake when completed. I had my doubts, but it is a very good and great cake to fool people with when they try it. Very easy to make great for company functions.

Steps:
- Preheat oven to 350°F.
- Combine flour, baking soda, baking powder, cinnamon, and salt together.
- Combine the above mixture with eggs, sugar, and oil in a large mixing bowl.
- Beat at medium speed for 2 minutes.
- Mash drained beans and pineapple to the mixture. You could use a blender for this part and probably would be better to get a smooth bean mixture.
- Bake 30-35 minutes until toothpick test comes out clean.
- Cool for 25 minutes.
- Topping:.
- Mix all ingredients except 1/2 of the pecans; spread between layers, or if a bundt cake style, over the whole thing.
- Once icing on top, sprinkle remaining pecans.

Steps:
- Preheat oven to 350°F.
- Sift together flour, baking soda, cinnamon, apple pie spice,salt and baking powder.
- Add eggs and oil.
- Blend until smooth.
- Blend pork and beans with mixer until smooth.
- Add crushed pineapple and pork and beans to batter and blend.
- Pour into greased Bundt pan.
- Bake for 40 to 45 minutes.
- Cool and frost with cream cheese frosting.
- Frosting: Blend butter, cream cheese, sugar and vanilla until smooth.
- Spread on cooled cake and sprinkle with pecans.

Recipe given by a great friend. Very easy, just do not tell your family or guests what is in it till they have eaten it...it keeps them guessing...

- 1. Mash whole can of pork and beans in bowl.
- 2. Put rest of ingredients in bowl and mix together.
- 3. Pour into greased 9x13 pan. Bake at 350 degrees for approx. 45 min. (check with toothpick). Let cool. Top with cool whip or vanilla icing.
