ROAST PORK LOIN WITH CREAMY DIJON SAUCE

Roast Pork Loin With Creamy Dijon Sauce image

This is adapted from Miss Vickie's Big Book of Pressure Cooker Recipes. The original Recipe calls for more sour cream and flour, I reduced them to change the final sauce consistency to my personal preference. The Dijon gives the sauce a slight bite, and the roast is juicy, tender and perfectly done. Miss Vickie's directions specify not to remove the netting, but I find that removing it after cooking pulls off the brown crust, so I remove it and tie with kitchen string before browning.

Categories     Pork

Time 1h

Yield 4 serving(s)

Number Of Ingredients 8

2 tablespoons olive oil
1 tablespoon butter
2 1/2 lbs boneless pork loin roast, net removed and retied with kitchen string
1 medium onion, chopped
3/4 cup white wine
2 tablespoons Dijon mustard
1/2 cup sour cream
1 tablespoon flour

Steps:

  • In your pressure cooker, heat the oil and butter over medium heat.
  • Add the roast, and brown on all sides, then remove from the pressure cooker and set aside.
  • Add the onions, and cook for a few minutes, until they start to soften.
  • Add the wine and mustard to the onions, and stir to combine.
  • Place the roast back in the cooker, lock the lid, and raise the temperature to high.
  • Once the pot has reached 15psi, lower the heat (still maintaining pressure) and cook for 40 minutes.
  • Release the pressure, and carefully remove the roast from the pot. Cover it and keep in a warm place until the sauce is completed.
  • Skim any excess fat from the liquid in the pot, if needed, then bring back to a boil.
  • Combine the sour cream and flour in a small bowl, then remove the pot from the heat and add the sour cream mixture, whisking to form a sauce.
  • Serve the roast and sauce.

CROCK POT ROAST PORK LOIN WITH CREAMY DIJON SAUCE

Crock Pot Roast Pork Loin With Creamy Dijon Sauce image

This is an adapted recipe prepared for the ZWT 8 France Crock Pot Challenge. The original recipe was IngridH's recipe #437150 #437150. I adapted this recipe to be used in a crock pot by adding some additional liquid, and using creme fraiche instead of sour cream. I used creme fraiche because it is more heat stable and doesn't curdle when added to hot liquids.

PORK LOIN IN YOGURT

PORK LOIN IN YOGURT image

Categories     Pork

Number Of Ingredients 6

• 8 Oz Non Fat Yogurt
• 2 Clove Garlic minced
• 1 tsp kosher salt
• ½ tsp freshly ground black pepper
• 2 Tbs sugar
• 2 Tbs mustard seed

Steps:

  • Combine the yogurt, garlic, 1 teaspoon of the salt and pepper in a small bowl. Place the pork loin in a shallow baking dish and coat well with the yogurt, salt/pepper mixture. Cover with plastic wrap and refrigerate for several hrs or overnight. When ready let the loin set at room temp for 1 hr before cooking. Pre heat your "BGE" to 300F-350F degrees and stabilized. (Ave. 325F) Use a HD rib rack or roasting rack above a drip pan (FB is a option) FB = Firebrick or pizza stone over the grill with drip pan and rack. Wipe the yogurt marinade from the loin and place it on the rib rack sitting in the drip pan. Combine sugar and mustard seeds and coat the loin with the mixture. Sprinkle the loin with some additional kosher salt lightly. Put in the Egg and roast for approximately 1 hour and a half at 300F-350F degrees, and then raise the temperature in the egg to 450 degrees by opening the vents wider, especially the bottom vent. Continue roasting (approximately ½ hour longer) until you reach 145F-150F degrees on the internal thermometer. This will give a crispy outer crusting. Remove from the Egg, let stand 15 minutes, (I would wrap in aluminum foil for this period), and then slice and serve with your favorite sauce or sides. Notes: Add smoking woods, ie, hickory, apple, etc, to the charcoal in the "BGE" after lighting just before inserting your meats. It will take a few minutes for the "BGE" to come back to your set temperature. Wait for a while before adjusting vents any further to be sure of stability. Insert the Polder thermometer in the thickest portion of the meat parallel to the bone if a bone in loin. Remember to remove the polder when crisping the outer layer of the loin at 450F degrees. A limit of 375F is tops for the Polder and cable. Crisping is only a option..and can be excluded. Just add a bit more time and wait for the proper internal temperature of 145F-150F

PORK CHOPS WITH DIJON SAUCE

Pork Chops With Dijon Sauce image

In the Burgundy region of France, home of Dijon, pork chops are traditionally served in a sauce made with mustard, cream and white wine, and there are very few pairings that are better. Richard Olney, a prominent food writer and authority on French cooking, sautéed sliced apples and chops and then baked them all together with cream and mustard dribbled on top. I prefer the method here, but you could always fry up some apples and serve them on the side. (For a dish with roots closer to Normandy than Burgundy, make the same recipe but omit the mustard, deglaze the pan with Calvados instead of wine and stir sliced sautéed Granny Smiths into the sauce itself.)

Categories     dinner, weekday, main course

Time 35m

Yield 4 servings

Number Of Ingredients 10

1 tablespoon butter
1 tablespoon vegetable oil
4 1 1/4-inch-thick center-cut rib or loin pork chops, bone in
Salt and freshly ground black pepper
1/4 cup chopped green onions or shallots
1/2 cup dry white wine
3/4 cup chicken or veal stock
1/2 cup heavy cream
1 tablespoon Dijon mustard (or more to taste)
1 tablespoon chopped parsley (optional)

Steps:

  • Melt butter in the oil in a large deep skillet over high heat. Season chops with salt and pepper and add them, browning well, about 2 or 3 minutes a side, reducing the heat slightly if chops brown too quickly.
  • Remove chops to a platter and pour off most of the fat. Add green onions or shallots and cook over medium-high heat until softened, about 1 minute. Add wine and bring to a boil, scraping brown bits off the bottom. Stir in the stock and return chops to the pan. Bring the sauce to a simmer, cover and cook until chops are tender, about 15 to 20 minutes.
  • Remove the chops to a warm platter; cover with foil to keep warm. Raise the heat and boil pan juices to reduce by half, about 2 minutes. Add cream and boil 2 minutes more, until sauce reduces a bit and thickens. Remove from the heat and whisk in mustard and the parsley, if using. Taste and add more mustard if desired. Immediately spoon sauce over the chops and serve.

ROAST PORK LOIN WITH TARRAGON CREAM

Roast Pork Loin with Tarragon Cream image

Provided by Chuck Williams

Categories     Milk/Cream     Pork     Roast     Dinner     Winter     Tarragon     Sugar Conscious     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Makes 6 servings

Number Of Ingredients 9

1 bone-in pork loin, 3-4 lb (1.5-2 kg)
3 large cloves garlic, slivered
Salt and ground pepper
4 tablespoons (2 oz/60 g) unsalted butter
3 tablespoons minced shallot
1/2 cup (4 fl oz/125 ml) chicken broth
2-3 tablespoons Dijon mustard
1 cup (8 fl oz/250 ml) heavy (double) cream
2-3 tablespoons chopped fresh tarragon

Steps:

  • Preheat the oven to 400°F (200°C).
  • With the tip of a sharp knife, cut slits 3/4 inch (2 cm) deep all over the pork loin. Insert the garlic slivers into the slits. Sprinkle the meat generously with salt and pepper and place in a roasting pan.
  • Roast until an instant-read thermometer inserted into the thickest part of the loin away from the bone registers 135°-140°F (57°-60°C) for medium, about 55 minutes. Transfer to a cutting board, tent with aluminum foil, and let rest while you make the sauce.
  • In a sauté pan over low heat, melt the butter. Add the shallot and sauté slowly until soft, about 5 minutes. Add the broth and let cook until almost totally evaporated, about 5 minutes. Whisk in 2 tablespoons of the mustard and the cream and simmer until the sauce is slightly thickened, about 5 minutes. Stir in 2 tablespoons of the tarragon and season with salt and pepper. Taste and adjust the seasoning with more mustard or tarragon. Remove from the heat and keep warm.
  • To serve, carve the pork roast into single chops with the bone and arrange on a warmed platter or individual plates. Spoon the sauce over the chops.
  • Enriching sauces
  • Enriching, or finishing, a sauce with cream adds a bit more fat, but it gives the sauce a luscious, velvety quality. Always use heavy (double) cream for this step. Its high fat content keeps it from curdling at high temperatures.
