5 pork chops
1 (2 pound) package frozen hash brown potatoes
1 cup sour cream
1 (10.75 ounce) can condensed cream of celery soup
1 cup chopped onion
½ cup milk
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large skillet over medium high heat, brown pork chops on both sides and set aside.
  • In a large bowl, combine the sour cream, soup and milk. Add the hash browns and chopped onion; stir to coat. Place mixture in a 13x9-inch baking dish and sprinkle the cheese over the top. Place the browned pork chops on top.
  • Bake in the preheated oven for 50 minutes or until the potatoes are heated through and pork chops are fully cooked.

1 tablespoon oil
4 bone-in, center thick cut pork chops
salt, pepper and garlic powder ((equal amounts of each, to taste))
1 cup sour cream
10.75 ounce can cream of celery soup (or cream of chicken)
1/2 cup milk
32 ounce package frozen shredded hash browns, (thawed)
1 cup chopped onion
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 375F degrees. Then, preheat a large skillet over high heat. Pour in oil.
  • Season both sides of pork chops with salt, freshly ground black pepper and garlic powder.
  • Once skillet is nice and hot, add in pork chops and brown pork chops on both sides in hot oil. You will need to do this in batches. Be sure not to cook pork chops all the way through, they will finish cooking in the oven.
  • Be sure not to cook pork chops all the way through, they will finish cooking in the oven.
  • Note: you may need to add more oil to the pan while browning the pork chops. Set aside browned pork chops while making hash brown mixture.
  • In a large bowl, combine sour cream, soup and milk.
  • Stir in hash browns and onion.
  • Spread hash brown mixture into an ungreased 9x13-inch baking dish and sprinkle with cheese.
  • Top with pork chops.
  • Bake uncovered for 45-50 minutes or until heated through and pork chops are fully cooked. If casserole is getting too brown while cooking, cover with alumiunm foil.
  • Then serve!

12 ounces 2-percent Greek yogurt
1 cup lowfat (1-percent) milk
1/2 cup reduced-fat sour cream
3 tablespoons unbleached all-purpose flour
2 pounds frozen shredded hash browns, thawed
1 cup shredded extra-sharp Cheddar (4 ounces)
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
2 large yellow onions, chopped
1 pound sliced cremini (baby bella) mushrooms
3 large cloves garlic, minced
2 tablespoons panko breadcrumbs
1/4 teaspoon ground nutmeg, optional
1 to 2 tablespoons chopped fresh parsley or chives, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Coat a 9- by 13-inch baking dish with cooking spray.
  • Whisk together the yogurt, milk, sour cream and flour in a large bowl. Stir in the hash browns, 1/2 cup of the Cheddar, 2 teaspoons salt and 1/2 teaspoon pepper. Set aside.
  • Melt the butter in a large skillet over medium-high heat. Add the onions and cook, stirring often, until soft and lightly browned, about 10 minutes. Add the mushrooms and cook, stirring often, until the mushrooms are wilted and the onions begin to brown, about 10 minutes more. If the pan gets too hot, add a splash or two of water as needed. Stir in the garlic and cook for 1 minute. Stir the vegetables into the hash brown mixture to combine.
  • Spread the mixture evenly in the prepared dish. Sprinkle with the remaining 1/2 cup cheese, the breadcrumbs and nutmeg if using. Bake until a deep golden brown, about 45 minutes.
  • Sprinkle with parsley and serve.

1/2 stick butter (2 ounces, cut into small pieces)

Steps:

  • Gather the ingredients.

Without the green bean addition, this tastes very much like the famous cheesy hashbrown casserole everyone seems to like so well. If you add the green beans and onions, it tastes a lot like the holiday green bean casserole. The pork steak is a delicious blend of flavors either way! I have a VERY PICKY 13 year old son who hates mushrooms or mushroom soup, and won't even eat green bean casserole, but LOVED this dish because he didn't realize it had mushroom soup in it. He even asked for seconds, then wanted the left-overs the next day. Hubby said this was one of the BEST casseroles I had ever made. No leftovers for the son, as hubby had already eaten it for breakfast the next morning! If you have never cooked with pork steak before, as I hadn't till I tried this recipe, try this. You will be surprised how EASY and TASTY this is! FIVE STARS for my family! Quick to throw together after work... about 15 minutes.... then relax for a little over an hour, and supper is ready!!! My pork steak was even frozen when I first found this recipe, and so I defrosted the meat package a little bit in microwave and then sliced the meat up while still half frozen. Worked well. I will make this again as I can keep the ingredients on hand, and even if the meat is frozen, I can still make it quickly.

1 lb pork steaks, cut into strips
20 ounces frozen hash browns
16 ounces sour cream
10 3/4 ounces cream of mushroom soup
4 ounces mushrooms (optional)
15 ounces french-sliced green beans, drained (optional)
8 ounces grated cheddar cheese
2 teaspoons chives (optional)

Steps:

  • Cut pork steak into bite-sized strips or larger as desired, and coat with flour, salt and pepper in a large bowl. Heat oil in large skillet or dutch oven and brown meat. Saute onions with meat half way through if you want onions added. (Don't have to cook meat throughly, as it will finish cooking in oven.) Combine in saucepan sour cream, mushroom soup, mushrooms, and half of cheese. Stir and heat mixture, do not boil. Place hash browns in bottom of Pam-sprayed casserole dish or 9 x 13 inch cake pan. I made has browns with eggs for a special Saturday morning breakfast only to discover that my kids don't like hash browns. What to do with these leftover potatoes? I quickly searched the Internet and found a recipe idea using ingredients that I already had in the fridge. I made a few adjustments and it was perfect! The nice thing about this recipe is that you can easily change the vegetables to what you have in the fridge. Mushrooms, red peppers, or leftover breakfast meat would all work great in place of the green peppers. First, sauté your veggies until they are nice and soft. Then whisk eggs with seasonings and half-and-half. Place your veggies at the bottom of a small oven safe casserole dish. Then add your leftover hash browns, pour egg mixture over and top with cheese. Bake at 425°F for 25-35 minutes and then enjoy!
