WHISKY GLAZED PORK TENDERLOIN

Steps:
- Mix the rub ingredients in a bowl, then spread on the pork on all sides, and rub it into the meat.
- Let sit in the fridge for a few hours.
- Melt the butter in a saucepan over medium heat.
- Add the garlic and cook for a minute, then add the whisky, and the rest of the glaze ingredients
- Bring to a boil, then reduce the heat to a fast simmer - whisking (so it doesn't burn). Reduce to a thick syrup (3-5 minutes)
- Remove from the heat and season to taste.
- Preheat the oven to 350.
- Add the pork in a large roasting dish, and cook 40-45mins.
- During the last 5 minutes, baste the pork with some of the glaze.
- Remove to a cutting board, and rest 5 minutes.
- Slice, and serve with the glaze.
JACK DANIEL'S PORK TENDERLOIN

- Place a large Ziploc bag into a large bowl and add to it the whiskey, olive oil, brown sugar, minced garlic,soy sauce, Dijon mustard Worcestershire sauce and ginger. Putting the bag into a bowl allows for the ease of adding the ingredients without the fear of it spilling over.
- Seal the bag and mix well.
- Place the pork loin onto a cutting board and prick all over with a fork.
- Put the meat into the bag. Seal and refrigerate for 8-10 hours, turning over occasionally.
- When ready to cook, preheat the oven to 350 degrees F.
- Prepare a rimmed baking sheet by lining it with tin foil and spray it with cooking spray.
- In a large skillet over high heat, sear the loin so that it is browned on all sides, reserving the marinade.
- Place meat on prepared baking sheet and pour 1/3 of the marinade over it.
- Cook for 40 minutes or until a meat thermometer reaches 148 degrees F.
- In the meantime, heat reserved marinade to a boil in a small saucepan over medium-high heat.
- Boil for 5 minutes, bringing the temperature to 165 degrees F. to ensure all of the food borne bacteria is killed off. Turn heat down to low, keeping sauce warm.
- Remove tenderloin from oven and transfer to a cutting board.
- Cover with tin foil and allow to rest for 10 minutes before cutting to serve. This will also bring them temperature of the meat up to a "doneness" of 170 degrees F.
WHISKEY BARBECUE PORK
The ingredient list may seem long for my saucy pork, but most of these items are common things you'll already have in your kitchen. Plus, once the sauce is mixed up, the slow cooker does the rest and you can focus on other things. I think the liquid smoke is what gives the barbecue its authentic taste!

- In a small bowl, mix the first 12 ingredients. Place pork roast and onion in a 5-qt. slow cooker. Add sauce mixture. Cook, covered, on low 6-8 hours or until pork is tender. , Remove roast and onion. Cool pork slightly; discard onion. Meanwhile, skim fat from sauce. If desired, transfer sauce to a small saucepan; bring to a boil and cook to thicken slightly. , Shred pork with two forks. Return pork and sauce to slow cooker; heat through. Serve on buns.

PORK FILLET IN WHISKEY
Very simple to make, but very tasty and warming. Another typically Spanish dish, which I normally serve in the pan in the middle of the table, accompanied by lots of fresh French bread for dipping. A simple green salad is perfect as a side dish, or the more typical sliced tomato and cucumber, drizzled in olive oil and sprinked with coarse-ground sea salt and freshly ground black pepper.

- Mix the olive oil with the whiskey in a shallow pan. Add garlic and seasoning and squeeze the lemon into the mixture.
- Slice the pork fillet into 1 inch slices. Flatten with fingers and add to the marinade.
- If the marinade does not cover the meat, add more oil and whiskey in equal measures until it does.
- Allow to marinate for 3 hours.
- Heat a frying pan until very hot. Remove the pork from the marinade and, a few pieces at a time, sear each side in the hot pan.
- Meanwhile, heat the marinade over a high flame.
- Once all pork is seared, return to marinade pan and continue to cook until pork is as desired.
- Serve in the pan in the centre of the table with plenty of crusty bread for dipping.

STUFFED PORK TENDERLOIN OVER GRILLED KALE DRIZZLED WITH GRILLED PEACH WHISKEY BEURRE BLANC

- Put the shallot, garlic and mushrooms in the bowl of a food processor. Pulse until finely chopped. Add the sausage, again pulsing until incorporated with the mushroom mixture. Season with salt and pepper, to taste. Pulse again.
- Heat the oil in a large saute pan over medium-high heat.
- Add the mushroom-sausage mixture and cook until the liquid has evaporated, about 8 to 10 minutes
- Deglaze with a splash of whiskey, using a wooden spoon to scrape up the brown bits stuck to the bottom of the pan.
- Remove the pan from the heat and add the crumbled cornbread and parsley. Mix to combine. Set aside.
- Cut tenderloins lengthwise, but not through, to open and lay flat. Lightly pound to even the meat, if needed. Paint the tenderloins lightly with mustard, then add the stuffing mixture. Roll up the tenderloins and tie the middle of the roll with kitchen string to secure. Repeat the ties about every 1 to 2 inches. Drizzle with oil, season with salt and pepper, to taste, and put on the grill to sear. Remove the tenderloins from direct heat to indirect heat and tent with foil. Grill until the internal temperature registers about 140 to 145 degrees F on an instant-read thermometer, another 15 minutes. Remove the tenderloins to a cutting bowl and let rest before slicing into medallions.
- Arrange a bit of grilled kale on center of each serving plate and top with 3 slices of pork medallions. Drizzle the beurre blanc over the medallions and around the rims of the plate.
- Preheat the grill over medium heat.
- Lay the kale flat on the grill (not over the hottest part, about 375 degrees F) and cook until the kale begins to wilt and the edges become slightly crisp and brown. Remove the kale to a bowl. Add the smoked paprika, a squeeze of fresh lemon juice and salt and pepper, to taste. Toss to combine.
- Lightly oil the peach halves and put on the grill for 3 to 5 minutes to slightly soften, flavor and mark. Melt 1 tablespoon of butter in a large saucepan and add the shallots, habanero and ginger. Saute for about 1 to 2 minutes. Chop the peaches, add them to the pan and cook for 1 minute. Remove the pan from the heat to add the whiskey and then return to the heat to cook until the liquid is reduced by half. Add the cream and the honey and allow it to reduce again by half. Strain and finish the sauce by slowly whisking in the cold butter.

- In a glass dish, mix the bourbon, soy sauce, sugar, lemon juice and rosemary sprigs. Add the pork and turn to coat. Let stand for 1 hour, turning the pork every 30 minutes.

- Preheat the oven to 375°. In a well-ventilated area, set the smoker over high heat. When smoke rises from all sides, set the pork on the rack; reserve 1/2 cup of the marinade. Cover and smoke for 40 seconds; remove from the smoker.
- In an ovenproof skillet, heat the oil until shimmering. Add the pork and season with salt and pepper. Cook over moderate heat until browned all over. Transfer the pork to the oven and roast until pale pink in the center, 15 minutes. Transfer the meat to a carving board and let rest for 5 minutes.
