PEACH GLAZED PORK CHOPS

4 1 inch thick bone-in pork chops
seasoned salt and black pepper
Olive oil
1 small onion (diced)
2 Tbsp butter
4 clove garlic (minced)
1 12 oz jar peach preserves
1/2 cup ketchup
2 Tbsp soy sauce
2 Tbsp rice wine vinegar
1 Tbsp sriracha sauce [or 1/2 tsp red pepper flakes]
1/2 tsp Chinese five spice
1/2 tsp ground ginger
cornstarch for thickening
Basmati or Jasmine rice for serving

Steps:

  • Rinse and pat dry the pork chops. Season on both sides with seasoned salt and black pepper to your taste.
  • On the stove top in a large skillet, heat a few drizzles of olive oil. Sear the pork chops on both sides for around 3 minutes each side. Remove from the pan to a platter and keep warm.
  • Add the diced onion and butter to the pan. Cook until the onion is beginning to soften, around 3 minutes. Add the garlic and cook until fragrant, around 1 minute.
  • Add the peach preserves, ketchup, soy sauce, rice wine vinegar, sriracha sauce, five spice and ground ginger. Stir taking time to scrape any brown bits from the bottom of the pan.
  • Return the pork chops to the pan and turn to coat with the sauce. [The pork chops will release juices while cooking, increasing the amount of drippings in the sauce.]
  • Cover and simmer over medium-low heat for 15-17 minutes per side, depending on the thickness, adding more or less time as needed.
  • When done, remove to a platter, cover and keep warm.
  • To thicken the sauce: Dissolve 1 Tbsp of cornstarch in cold water, then whisk into the sauce. Repeat until the desired thickness is reached.
  • Rest the pork chops for 5-10 minutes before serving drizzled with sauce over rice.

1 tablespoon vegetable oil
1 (29 ounce) can sliced peaches, drained and syrup reserved

  • Heat oil in a large skillet over medium heat. Trim all visible fat from chops and season with salt and pepper to taste. Brown chops in vegetable oil.

2 tablespoons butter, melted
1/4 cup molasses
Juice of 1 lime
4 peaches, halved and pitted
1 tablespoon olive oil
4 rib or loin chops, 1 1/2 inches thick
Salt and freshly cracked black pepper to taste

Steps:

  • Build a fire in your grill, leaving about 1/3 of grill free of coals.
  • Mix butter and molasses together well. Add lime and set aside. Rub cut side of peaches with oil.
  • Sprinkle chops and peaches generously with salt and pepper. When coals are covered with gray ash and fire is hot (you can hold your hand 5 inches above coals for only 1 to 2 seconds), put chops on grill directly over coals. Put peaches on grill along edge of coals.
  • After 4 minutes, flip chops and cook for 4 minutes more, then move chops to part of grill with no coals. Cover them with a disposable foil pan, and continue to cook for 8 to 10 minutes more for medium.
  • When you move chops, flip peaches over. During last 2 minutes of cooking, coat peaches liberally with molasses-butter mixture. Remove from grill and serve.

This is a really simple, quickie pork chop dish that looks and tastes amazing. We'll use some peaches to bring out that nice, fresh summer flavor and the drippings to make a great pan sauce.

1 pork loin, bone-in, preferably from a heritage breed big, about 8 bones or 4 thick-cut pork chops
Kosher salt
Freshly ground black pepper
2 peaches, slightly under-ripened
2 cloves garlic
Handful of fresh sage
1/4 cup apple cider
1 tablespoon unsalted butter
1/4 cup extra-virgin olive oil

Steps:

  • To cut chops from a bone-in pork loin, follow along the rib bone with a sharp knife to make one clean cut. Season the pork chops thoroughly with kosher salt and fresh ground pepper. One at a time, cover each chop with a piece of plastic wrap and lightly pound with the back of a heavy knife or a spoon to work the seasoning into the chops.Cut the peaches into medium ½-inch chunks. Slice the garlic cloves into thin slivers. Pull the sage leaves from the stems and thinly slice.
  • Heat a heavy bottomed cast-iron pan over high heat. Once the pan is hot, add 2 tablespoons of the olive oil.
  • To the hot pan, add all of the chops standing up on their fat cap side, to render off some of the fat, and pan-sear for a few minutes. Remove two of the chops, and lay the other two down on their meatier sides, to pan sear and cook through. After a few minutes, carefully turn over and brown the other side for another few minutes. Remove from the pan and set aside to rest.
  • Repeat for the remaining chops. Remove from the pan and let rest with the other pork chops.Drain and discard some of the cooking oil. Add the peaches to the pan and sauté vigorously, about 2 minutes. Add the garlic and sage, and immediately add the apple cider. Season the mixture with salt and freshly ground black pepper. Add the butter and swirl the mixture together, to emulsify the butter into the peaches. Remove from the heat.
  • Stack the rested pork chops on a platter and finish by spooning the peaches and pan juices over top. Serve immediately.

1/3 cup orange juice, plus
2 tablespoons orange juice
2 tablespoons reduced-sodium soy sauce

4 boneless loin pork chops, trimmed of fat (1/2 inch thick)
2 teaspoons olive oil

Steps:

  • In a small bowl, stir brown sugar, 2 tablespoons orange juice, soy sauce, cardamom, curry powder and pepper until the sugar dissolves. 2 x 250 g higher-welfare pork chops, with rind
4 cloves of garlic
2 sprigs of fresh rosemary
1 x 410 g tin of peach halves in juice
50 ml bourbon

Steps:

  • Preheat the grill to high.
  • Slice the rind off the chops, score the fat side of it in a criss-cross fashion and place skin side up in a tray. Pop under the grill for 5 minutes to crisp up into crackling - keep an eye on it.
  • Season the chops with sea salt and black pepper, score the remaining fat in a criss-cross fashion, then sit the chops together fat edges down in a large cold non-stick frying pan.
  • Place on a high heat for 3 to 4 minutes, or until golden and the fat has rendered out, using tongs to ensure they're in good contact with the pan. Gently turn the chops on to their sides to cook for 5 minutes on each side.
  • Meanwhile, peel and finely slice the garlic. Strip the rosemary leaves off the sprigs.
  • Remove the chops to a plate, drain 90% of the fat from the pan into a jar to use for cooking another day, then sprinkle the garlic into the pan. Stir regularly until golden, then add the rosemary and four drained peach halves, flat side down.
  • Jiggle over the heat until golden, then return the chops to the pan, add the bourbon and carefully set fire to it with a match (stand back!).
  • Once the flames begin to subside, dish up with the crispy crackling.

4 Pork Chops
4 peaches, halved and pits removed
Vegetable or canola oil
1 cup peach preserves
3 tablespoons bourbon
1 tablespoon apple cider vinegar
1/2 teaspoon onion powder
Kosher salt
Freshly ground black pepper

Steps:

  • Season both sides of pork chops generously with Kosher salt and freshly ground black pepper. Lightly brush peach halves with oil.
  • Heat grill over medium-high heat and lightly oil grill grates. I do this by folding up a paper towel and pouring some vegetable/canola oil on it. I then place paper towel on grates and use my grill brush to push the towel very quickly over them.
  • Grill pork chops on grill, flipping once, until just cooked through. Grill peach halves, cut side down, until warmed through and you get those awesome looking grill marks!
  • Meanwhile, stir together peach preserves, bourbon, apple cider vinegar, and onion powder in a small saucepan. Season with Kosher salt and place saucepan on grill along with pork. Bring to a boil and let simmer on the cool side of the grill for about 6-8 minutes. Alternatively, you can also do this part on the stove inside (bring mixture to a boil over high heat, then lower heat to maintain a simmer).
  • During the last minute of cooking, brush peach bourbon glaze all over pork chops. Serve pork chops with extra glaze and grilled peaches. Devour immediately!

There are several recipes on 'Zaar that feature the combination of sweet peaches with pork chops, roasts or tenderloins. This one is unique not only in its spices but in its preparation. A featured entree from Dream Dinners, the franchise that helps families prepare make-ahead meals, this dish recently appeared in Family Circle magazine. I've trying these without freeze and they were wonderful and saucy without being too sweet. I added a pinch of ground ginger to mine and will most likely add a wee bit of extra onion, but not so much as to change the balance of sweet and savory flavors. Have some additional bags assembled but have not yet defrosted and cooked. If you are making these fresh you can skip the bagging, frezing and defrosting steps (1-2). (279 cal/14 g fat/2 g fiber)

1/4 cup firmly packed light brown sugar
1/4 cup catsup

  • Season chops with salt and pepper. Brown well in oil in skillet; place in shallow 13x9 baking dish. Drain peaches, reserving syrup. Heat 1/3 cup of the syrup, the sugar, catsup and vinegar in saucepan. Brush part of glaze on chops.
  • Bake at 350 degrees F for 35 minutes.

  • In ziploc, combine spices and bread crumbs. Add oil and shake until thoroughly combined. This is enough for 6 pork chops or chicken breasts to be generously coated.

  • Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium-high, or prepare medium-high fire in charcoal grill.
  • Brush pork chops on both sides with oil. In small bowl, combine 3⁄4 tsp salt, garlic powder, coriander, and black pepper. Sprinkle spice rub evenly over both sides of pork. Coat onion wedges and cut sides of peaches with nonstick spray. In small bowl, whisk mustard, vinegar, and honey.
  • Arrange pork chops, onion, and peaches, cut-side down, on grill. Cook peaches, on cut sides only, until charred and marked from grill, 3 to 4 minutes. Cook onion until marked from grill, 3 to 4 minutes per side, then sprinkle with remaining 1⁄4 tsp salt. Cook chops until meat is cooked through and instant-read thermometer inserted into centers registers 145°F, 5 to 6 minutes per side, basting with mustard glaze during last 1 to 2 minutes of cooking on each side. Transfer pork, peaches, and onion wedges to platter. Sprinkle with mint.

Let stand 5 minutes. Place half of peach mixture in a large heavy-duty zip-top plastic bag; reserve other half for basting. Add chops to bag; seal bag and refrigerate 30 minutes to 4 hours.
  • Remove pork from bag; discard marinade. Sprinkle pork with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Place pork and peach halves on grill rack coated with cooking spray, and grill 10 minutes or until the pork is done and the peaches are tender, turning once. Baste pork and peach halves with the reserved peach mixture every 2 minutes during the first 6 minutes of cooking.
