This was the one good memory I have of my first marriage- going to my ex-mother-in-law's and smelling this cooking! Of course, I begged for her recipe and have been making it regularly ever since. Her son was not a keeper for me, but her pork chops sure were! This recipe may be halved by using 4 pork chops, one can of soup, and two tablespoons of butter with the Lawry's seasoning.

6 -8 pork loin chops
2 (10 3/4 ounce) cans cream of mushroom soup (buy the NAME brand, creamier-cheaper soups stay lumpy)
Lawry's Seasoned Salt
lawry seasoned pepper
1/4 cup butter

Steps:

  • In skillet with melted butter,sprinkle both sides of pork chops with seasoned salt and seasoned pepper to taste and brown.
  • Put into 9 X 13 inch glass casserole and spoon mushroom soup (do not dilute!) and smear all over pork chops.
  • Cover and seal tightly with heavy aluminum foil and put into pre-heated 350 degree oven for 1 hour.
  • Remove foil last few minutes.
  • Serve over rice or noodles.

3-4 pork chops (1 inch thick)
salt and pepper
1 tablespoon salted butter
1/2 cup white onion. (chopped)
1 teaspoon minced garlic
3/4 cup milk
one 10.75 ounces can condensed cream of mushroom soup

Steps:

  • Preheat your oven to 350 °F.
  • Season the pork chops with salt and pepper on each side.
  • Melt the butter in a large oven safe skillet over medium heat. Add in the butter and then the onions. Fry the onions until they are tender and translucent. Add in the garlic and fry for 1 minute.
  • Push the onions to the side and saute the pork chops in the butter for 3-4 minutes per side, until they are browned nicely.
  • In a glass measuring cup, combine the milk and soup until smooth. pour the soup mixture over the chops.
  • Bake at 350 degrees F (175 degrees C) for 20-25 minutes, until the pork reaches at least 145 °F in the middle. Remove and serve.

1 tablespoon Cajun seasoning
2 tablespoons canola oil
1 can Cream of Mushroom soup
1/2 soup can water
1 tablespoon Worcestershire sauce
2 cloves minced garlic
1 tablespoon unsalted butter

Steps:

  • Preheat oven to 375.
  • Sprinkle Cajun seasoning evenly over each chop.
  • In a medium mixing bowl, stir together soup, water, Worcestershire sauce and garlic.
  • Heat oil in oven-proof skillet on medium-high. Brown pork chops on both sides and pour off any excess oil.
  • Pour sauce over chops and add the tablespoon of butter, a little dot on top of each chop.
  • Cover skillet tightly with foil.

1 tablespoon vegetable oil, or as needed
1 (10.75 ounce) can cream of mushroom soup
1 cup water
½ (6 ounce) can french-fried onions, divided
½ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together flour, salt, and pepper in a rimmed plate. Dredge pork chops in flour mixture; shake off excess.
  • Heat oil in a large skillet over medium-high heat. Add pork chops and cook, turning halfway, until browned on both sides, about 2 minutes per side. Place chops in an 11x17-inch baking dish.

2 tablespoons olive oil
4 center cut boneless pork chops, about 1-inch thick (about 1 1/4 pounds total)
Kosher salt and freshly ground black pepper
4 ounces mixed sliced mushrooms
1/2 red onion, chopped
1 garlic clove, finely chopped
1/4 cup brandy or white wine
1/4 cup low-sodium chicken broth
3 tablespoons sour cream
1 tablespoon chopped fresh flat-leaf parsley
Steamed green beans, for serving, optional

Steps:

  • Preheat the oven to 400 degrees F. Heat 1 tablespoon of the oil in a medium skillet over medium-high heat. Sprinkle the pork chops all over with salt and pepper and cook, flipping once, until golden brown, 2 to 3 minutes per side. Transfer to a baking sheet lined with foil and bake until cooked through and but still slightly pink inside, about 5 minutes.
  • Add the remaining 1 tablespoon oil to the skillet and reduce the heat to medium. Add the mushrooms and cook, stirring, until soft, about 4 minutes. A simple weeknight dinner that my parents prepared often when I was a child. I make this every couple of weeks for my DH and his kids and it always goes down without a fuss. Although I don't usually condone the use of convenience foods, I cannot deny the importance of having ingredients for this on hand as a quick meal on a busy night or a comfort food meal when you need a hefty dose of nostalgia.

1 tablespoon vegetable oil
1 medium onion, diced 1/4-inch
2 garlic cloves, minced or crushed
4 pork chops (boneless loin chops work best)
2 (10 ounce) cans Campbell's Cream of Mushroom Soup
4 medium potatoes, sliced 1/4-inch thick
1 tablespoon dried parsley
salt and pepper
1 (8 ounce) can mushroom stems and pieces, drained well (optional) or 2 pieces dried porcini mushrooms (optional)

Steps:

  • Heat oil in a large, deep skillet and add onion. Sweat onion over medium heat until translucent. Add garlic and continue cooking over medium heat until fragrant.
  • Sprinkle pork chops with salt and pepper and add to the skillet, browning them over medium high heat. Flip the chops to brown both sides. The meat should be golden brown on both sides but does not have to be cooked through.
  • Meanwhile, stir together the two cans of soup, parsley and canned mushrooms/dried mushrooms (if using).
  • Place the potato slices into the skillet around, between and atop the chops and pour over the soup mixture. Use a spoon or spatula to gently stir the contents of the skillet to distribute the sauce over all the potatoes and meat. Be sure to scrape up the golden brown bits (fond) from the bottom of the pan and stir them into the sauce.
  • Simmer over medium heat approximately 30-40 minutes or until the potato slices are cooked through (tender), stirring gently at least twice through the cooking time.
  • Note: If your family likes strong mushroom flavours then I highly recommend the use of dried mushrooms in this dish. If your family is not so keen on mushrooms then leave out the canned and dried mushrooms. The sauce will still have a strong cream-gravy, especially if you fried the chops to a golden colour and scraped the bottom of the pan to rescue those flavours. This recipe holds up well to experimentation with dried spices and other add-ins. Try adding dried pakprika (sweet), chives, thyme, sage, applewood smoke seasoning, a few spoonfuls of sour cream or a handful of homemade bacon bits for variation.
