- Peel and chop potatoes. Place in a pot, cover with cold water and bring to boil over medium heat. Cook until soft. Drain well, add butter and sour cream (or half and half) and mash. Season with salt and pepper to taste.
- In a large skillet, heat up olive oil. Add one tablespoon of butter and let melt. Add minced garlic and chopped onions. Saute, stirring often until fragrant, translucent and some pieces are golden.
- Add second tablespoon of butter. Stir in, melting, and cook onions until golden brown and caramelized. Add brown sugar and soy sauce. Stir in. Remove from heat.
- Stir in caramelized onions with mashed potatoes. Serve right away or cool completely, cover with saran wrap and store in the fridge for the next day.

I usually just use my pressure cooker for making beans but have been experimenting with bone-in meats and enjoying the results! Caramelized onions really boost the flavor in the mashed potatoes, and you can't go wrong with a gravy that has apple cider and Dijon mustard!

- Combine pork chops, salt, thyme, rosemary, and pepper in a resealable plastic bag. Seal and shake until pork chops are coated with seasoning.
- Turn on a multi-functional pressure cooker (such as Fagor®) and select Brown function. Pour in oil. Add pork, with seasoning, and cook until browned, about 5 minutes per side. Transfer to a plate.
- Melt 1 tablespoon butter in the pot. Cook onions until soft and browned, 8 to 10 minutes. Add potatoes and garlic. Balance pork chops over potatoes.
- Whisk apple cider, Dijon mustard, maple syrup, and nutmeg in a bowl. Pour over pork chops. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
- Let pressure release naturally for 5 minutes. Nudge valve slightly open to release remaining pressure more rapidly. Transfer pork chops to a plate.
- Transfer potatoes and onions to a bowl using a slotted spoon, leaving gravy in the pot. Add remaining 1 tablespoon butter and milk to the potatoes; mash until smooth.
- Divide mashed potatoes between serving plates. Top with 1 pork chop. Spoon gravy on top.

CARAMELIZED-ONION MASHED POTATOES

- Boil whole russet potatoes in their skins until they're easily pierced with a knife; let cool slightly before peeling. While the potatoes are boiling, saute sliced white onions in olive oil or butter over low heat until soft and deeply caramelized. Mash the potatoes with milk or cream, butter, and salt and pepper to taste. Stir the caramelized onions into the potatoes just before serving.

- Rub chops with 2 teaspoons seasoning salt and 1 teaspoon pepper, or to taste.

ROOT BEER GLAZED PORK CHOPS WITH BOURBON-MASHED SWEET POTATOES AND CARAMELIZED ONIONS

- To make the glaze, combine the root beer and stock in a medium heavy saucepan. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer until reduced to a thick syrup, about 1 cup, about 50 minutes to 1 hour. Remove from the heat.
- Preheat a grill to medium-high. Preheat the oven to 425 degrees F.
- Season each chop on both sides with 1 teaspoon of the Essence. Grill for 3 minutes. Turn each chop 1/4 turn to make grill marks and cook an additional 2 minutes. Turn and cook on the second side for 5 minutes.
- Transfer to a baking sheet. Drizzle 1 teaspoon of the olive oil over each chop. Roast until cooked through and an instant-read thermometer inserted into the center reaches 150 degrees F, 12 to 15 minutes.
- Place the chops on 4 serving plates and drizzle with the glaze. Spoon the Bourbon-Mashed Sweet Potatoes and Caramelized Onions onto the plates, garnish with parsley leaves, and serve.
- Combine all ingredients thoroughly.

- Preheat the oven to 350 degrees F.
- Place the potatoes on a foil-lined baking sheet. Bake until tender and starting to ooze sugary syrup, about 1 hour and 15 minutes, depending on their size. Remove from the oven and let sit until cool enough to handle.
- Cut a slit down each potato and scoop the flesh into a large bowl. Discard the skins. Add the cream, bourbon, brown sugar, molasses, and salt and beat on high speed with an electric mixer until smooth. Cover to keep warm, or gently reheat before serving.
- Melt the butter in a large skillet over medium-high heat. Add the onions, reduce the heat to medium-low, and cook slowly, stirring occasionally, until golden brown and caramelized, 45 minutes to 1 hour. Remove from the heat and serve hot.
HICKORY-SMOKED PORK CHOPS WITH BLEU CHEESE MASHED POTATOES AND CARAMELIZED PEARS AND ONION STRAWS
Steps:
- In a medium sized bowl, combine milk, rosemary, garlic and salt and pepper. Place each pork chop in the bowl and allow the meat to marinate for approximately 1/2 hour.
- Over an open-flame grill, sear each side of the pork chops until black grill marks form.
- Remove the meat from the grill. Heat a large saute pan over medium-high heat and place hickory smoking chips in the bottom of the pan. Cover the chips with a lid, which is slightly smaller than the pan, and then place each pork chop on top of the lid. This will allow the meat to smoke and become infused with the hickory flavor. Smoke the meat until it is fork tender. Serve with potatoes, pears and onion straws. Garnish with red pepper and mushroom strips.
- In a large pot, add the potatoes. Cover with water and bring to a rolling boil. Boil the potatoes until they are soft. Drain the water from the pot and place the potatoes in a medium sized bowl. Add all of the remaining ingredients to the bowl and mash together until you reach the desired creaminess. Set aside.
- In a medium sized saute pan, combine all of the ingredients over medium heat and saute until the pears soften and the sauce thickens. Set aside.
- In a medium sized bowl, combine milk, oil, salt and pepper. Slice an onion into long strips and place them into the milk mixture. Shake off any excess liquid, and then dredge the onion strips in flour. Heat oil over medium-high heat in a medium sized saute pan. Place the dredged onions into the saute pan and cook until they are brown and slightly crispy. Set aside.
- Thoroughly clean the skin of the red bell pepper. Rub olive oil lightly over the entire surface of the skin. Place the whole pepper on an open flame and roast it until the skin is blackened. Remove the pepper from the flame and rub the charred skin with a towel. Once the skin is removed, slice the pepper into thin strips and serve with the pork chops.
- Thoroughly clean the skin of the baby mushroom. Rub the entire surface generously with garlic, olive oil and salt and pepper, to taste. Place the whole mushroom into a steamer and allow it to steam for approximately 20 minutes, or until tender. Remove the mushroom from the steamer and slice into strips. Serve with the pork chops.
PORK CHOPS WITH CURRIED CARAMELIZED ONIONS AND APPLES

- Season chops with salt and pepper; brown both sides in a skillet with a little olive oil; remove to a 9x13 inch baking dish.
- In the same skillet, melt butter over medium heat.
- Cook and stir onions and apples in butter until caramelized, being sure to stir up browned bits.
- Stir in applesauce, apple juice, beef broth, garlic and curry powder.

- Season chops with flour, salt and pepper.
- Heat 2 tablespoons olive oil in cast iron skillet over medium-high heat; sauté chops until golden brown.
- Remove.
- Add onions and lightly brown.
- Remove.
- Add 1 tablespoons unsalted butter; when melted, add mushrooms. Remove and de-glaze skillet with 1/3 cup beef broth or wine, if preferred.
- Pour remaining beef broth into crock pot.
- Add sauce from skillet, Worcestershire and spices; add chops, onions and mushrooms.
- Cover and cook on LOW heat setting for 7-8 hours, until very tender.
- EXTRACT BAY LEAF.
- Turn temperature to HIGH; add 1 tablespoons butter.
- Mix cornstarch with Half and Half.
- Whisk to blend well. Add to crock pot and whisk.
- Cook for an additional 15-20 minutes(depending on sauce thickness preferred).
- Serve over cooked rice.
MASHED POTATOES WITH CARAMELIZED ONION AND OLIVE OIL
There is no milk or butter in these mashed potatoes - but they are VERY flavourful because of the caramelized onion and extra virgin olive oil. This is based on a recipe I tried from epicurious.

- Place potatoes in heavy large pot. Cover with cold water. Boil over medium-high heat until potatoes are tender when pierced with fork, about 40 minutes. Drain, reserving 1 1/2 cups potato cooking liquid. Return potatoes to dry pot. Stir over medium heat until any excess liquid evaporates. Add 4 tablespoons olive oil and mash until almost smooth. Mix in enough potato cooking liquid as needed to moisten. Stir in caramelized onions. Season to taste with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature. Rewarm over medium heat, adding more reserved cooking water as needed to moisten.).
- To caramelize onions: Add 3 tablespoons olive oil to a saucepan and add onions. Saute over medium-high heat until onions are starting to caramelize 10-12 minutes. Add the garlic for the last minute of cooking. If you like your onions darker, saute them slightly longer (or if you like them lighter, diminish the saute time).
- Note: A couple of tablespoonfuls of parmesan stirred into these potatoes is a lovely thing!

PORK CHOPS WITH CARAMELIZED ONION MASHED POTATOES
Nothing says home to me more than pork chops and mashed potatoes. My mom always made these with the thick-cut boneless loin chops, but when I have to pay for them, it's the variety pack of thinner cut bone-in chops that always seem to be on sale. The good news is they cook faster and because of the gravy they don't get dried out.

- Peel the onions, cut them in half, and thinly slice. Place 1 tablespoon of the oil in a large frying pan over medium-high heat and add the onions. Cook, stirring occasionally, for 15 minutes, or until golden brown.
- Meanwhile, peel the potatoes and cut into chunks. Place the potatoes in a saucepan, cover with cold water, and add the salt. Bring to a boil and then simmer over medium heat for 20 minutes, or until a fork slides easily into the potatoes.
- While the potatoes are cooking, remove the onions from the pan and set aside. Add the remaining 1 tablespoon of oil to the pan and add the pork chops. Season the chops with salt and pepper and cook over medium-high heat for 2 to 3 minutes on each side, or until lightly browned. Place the beef bouillon and flour in a small bowl and slowly stir in the water a little at a time until all of the water is incorporated and the mixture is smooth. (If you put all the water in at once the flour will get lumpy and your gravy will never get smooth.) Add the mixture to the pan and stir well. Stir in half of the caramelized onions, cover, and cook over medium heat for 10 minutes.
- Drain the potatoes and add the milk and butter to the pan. Cook over high heat for 2 to 3 minutes, until the milk comes to a boil. Remove the pan from the heat and mash the potatoes with a fork until fairly smooth. Stir in the remaining caramelized onions and season with salt and pepper.
- Place a pork chop and some of the mashed potatoes on each plate and top with some of the gravy.
- Boneless pork loin chops can cost over $4 per pound, but whole or half pork loins often go on sale for under $2 per pound. They are boneless so they are easy to cut into chops and you can make them any thickness you want. You can put as many as you want in a resealable bag and freeze them for later use.
