APPLE PORK CHOPS
I started making this dish a few years ago after apple picking with my children. I was looking for something different to do with some of the apples and this sure is delicious! We all enjoy it and hope you do too!!

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.
- Place chops in an 8x12 inch baking dish and sprinkle them with salt and pepper. Cover the chops with the apples and cooked onion.
- In a small bowl, combine brown sugar, mustard, cloves and water. Pour over chops. Cover and bake in the preheated oven for 30 to 45 minutes. Enjoy!

- Preheat the oven to 350ºF.
- Pat the pork chops dry and sprinkle with salt and pepper.
- In an ovenproof pan, put in 1 tablespoon of butter and olive oil, and on high heat, sear the pork chops for 2 minutes on each side, until nice and brown.
- Spoon out most of the fat in the pan and put the pan in the oven.
- Roast the pork chops for 10 minutes, until the internal temperature is 140ºF. It may take less time. Berkshire pork is best at this temperature, which is lower than the USDA recommended temperature of 160ºF. If you are a concerned person, then you are better off sticking with 160ºF. NOTE: cooking time may vary depending on thickness of chops.
- A couple minutes before you think the pork chops are done, you can peel, core and chop the apple into little pieces.
- Take the pan out of the oven, remove the pork chops and keep warm.
- In the now empty pan used to roast the pork, put back on a burner on medium-high heat, and then add the apples, sage and remaining tablespoon of butter. Caramelize for a minute or two.
- Add the Calvados and reduce by half to burn off the alcohol.
- Add the demi-glace, any juices in the bowl from the reserved pork, and salt and pepper. Reduce for minute or two until it is nice and thick.
- Spoon the sauce and apples over the pork chops and serve.
- Serving suggestions: Serve with Boiled carrots and potatoes.

I found this in a pamphlet from the orchard (about Maryland apple orchards) a few years ago when we were picking apples. It is one of the tastiest things I have ever made!

- Peel, core, and slice the apples.
- Preheat the oven to 350 degrees.
- Melt the butter in a skillet.
- Brown the pork chops on both sides in the butter.
- Grease (or spray) a large baking dish.
- Put the apple slices in the bottom of the dish.
- Mix the brown sugar and cinnamon.
- Sprinkle the cinnamon and sugar over the apples.
- Place the pork chops on top of the apples.
- Cover with foil and bake for 1 and 1/2 hours.

- Put the cored and peeled apples in a saucepan, add half the caster sugar, the lemon juice and three tablespoons of water.
- Cover with a lid and cook over a medium to low heat for 10-15 minutes until tender, stirring from time to time.
- The applesauce can be very chunky or lightly whisked for a smoother finish.
- Pre-heat the grill.
- Brush the pork chops with a little of the melted butter, seasoning with salt and freshly ground black pepper.
- Put the chops on a grill tray with a rack, and grill them for 4-5 minutes on both sides.
- Meanwhile peel and core the remaining apples.
- Cut into thin long slices, maintaining the shape of the apple.
- Spread the applesauce over the chops and arrange the apple slices on top, slightly overlapping as you would for apple tart.
- Brush or drizzle the chops with the remaining melted butter, sprinkling with the remaining sugar and return under the grill.
- Cook for a few minutes and the apples are nicely toasted.
- Serve and enjoy.

- In a nonstick skillet, brown pork chops on both sides in oil. Place in an 11x7-in. baking dish coated with cooking spray. Add wine or broth to the skillet, stirring to loosen brown bits. PORK CHOPS WITH APPLE SAUCE
Steps:
- In a shallow pan, pour marinade over pork chops and marinate for 1 hour.
- Remove the meat from the marinade and drain off the excess. In a skillet over high heat, pan-sear the pork chops on both sides in butter and oil to seal in juices. Sprinkle with a handful of fresh chopped parsley and thyme; season with salt and pepper. They should be well browned on the outside and pink in the center. Transfer the pork chops to a roasting pan, place in a single layer and set aside.
- In the same skillet, saute apples in a bit more butter and oil, add more parsley and thyme. Deglaze the pan with brandy. Pour in brown sauce and cider vinegar to create a pan sauce. Spoon the apple sauce over the pork chops. Sprinkle with more chopped herbs and salt and pepper.
- Roast in a preheated 325 degree oven for 15 to 20 minutes. A meat thermometer inserted into the pork should read 155 degrees F.
BAKED PORK CHOPS & APPLE GRAVY
This is a wonderful and very comforting entree with meat and fruit so you don't have to feel too guilty. I marinate the chops in teriyaki sauce, honey, guldens mustard, black pepper and garlic for at least 3 hours or overnight.

- Fry pork chops in olive oil.
- Remove from pan and keep warm.
- In same pan melt butter.
- Add red onion, mushrooms and apple.
- Cook 3 minutes scraping up all the good bits that may have stuck to the bottom.

- Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.

- Heat oven to 375°F. Brush 1/2 teaspoon butter in bottom of 13x9-inch (3-quart) glass baking dish. Spread apple slices in dish. In small bowl, mix flour, brown sugar and cinnamon; sprinkle over apples. Sprinkle seasoned salt on both sides of pork; place pork over apples.

Steps:
- Preheat oven to 400°F.
- Spread the apples in a lightly buttered gratin dish, large enough to hold the pork chops in a single layer.
- Place gratin dish in the oven and bake apples for 15 minutes.
- While apples are baking, saute the salted pork chops over medium heat until nicely colored on each side-7 to 8 minutes per side.
- Remove gratin dish from the oven and arrange the chops on top of the apples.
- Deglaze the saute pan with the white wine and reduce by half.
- Drizzle reduction over the chops.
- Mix cream (or sour cream/yogurt and milk) and mustard, adding mustard little by little until you are happy with the taste.
- Pour evenly over the chops and apples and grate pepper overall.
- Return to oven and bake an additional 15 minutes.
