2 cups ketchup
1 (12 fluid ounce) can or bottle beer
¾ cup packed brown sugar
8 pork chops

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the ketchup, brown sugar and beer. Mix well and pour into a 9x13 inch baking dish. Place the pork chops over this mixture in the dish.
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 1 hour, or internal pork temperature reaches 145 degrees F (63 degrees C). (Note: Place foil over pork chops if they start to brown too quickly.)

4 bone-in pork chops, just over 1-inch thick
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, plus a drizzle
2 thick slices smoky bacon from deli counter, diced 1/4-inch
1 medium onion, diced 1/4-inch
1 rounded tablespoon all-purpose flour
1 bottle amber to dark German beer
1/2 cup stock
Chopped parsley, for garnish

Steps:

  • Season the chops liberally with salt and pepper. Heat the extra-virgin olive oil in a skillet over medium-high heat. When the oil smokes, add the chops and cook, turning once, until caramelized and the meat is just turning firm, about 10 to 12 minutes. Remove to a platter and cover with foil, reserve.
  • Add a drizzle more oil to the pan, add bacon and brown for 2 to 3 minutes. Stir in the onions and saute over medium heat with the bacon until soft, 6 to 7 minutes. Sprinkle in flour, stir for 1 minute, then add the beer. Cook until reduced by half, 1 to 2 minutes more, then whisk in the stock. Remove from the heat and season with pepper. Pour the gravy over the chops, sprinkle with parsley and serve immediately.

3 slices bacon, diced
1 small onion, diced
2 to 3 large sprigs thyme, plus 1 tablespoon chopped leaves
1 15-ounce can cannellini beans, drained and rinsed
1 1/4 cups low-sodium chicken broth
1/2 head Napa cabbage, roughly chopped
Kosher salt and freshly ground pepper
2 pinches of red pepper flakes
4 boneless pork chops (1/2 inch thick; 1 to 1 1/2 pounds total)
2 tablespoons all-purpose flour
1 12-ounce bottle medium-dark beer
1 tablespoon unsalted butter

Steps:

  • Cook the bacon in a large skillet over medium heat until the fat renders and the bacon is crisp, about 6 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Pour off all but 1 tablespoon of the bacon fat into a small bowl and reserve. Add the onion and thyme sprigs to the skillet and cook until the onion is softened, about 5 minutes. Add the beans and 3/4 cup chicken broth and cook until the beans are tender and most of the broth evaporates, about 5 minutes. Add the cabbage and cook until wilted. Season with salt, pepper and a pinch of red pepper flakes.

Add the beer and remaining 1/2 cup chicken broth to the skillet and scrape up any browned bits from the bottom of the pan; bring to a simmer. Return the pork to the skillet, reduce the heat to medium low and loosely cover. Cook until the pork is cooked through, 5 to 7 minutes. Remove the pork to a plate and let rest.
  • Continue cooking the braising liquid until reduced and thickened, about 6 minutes; swirl in the butter. Divide the bean-cabbage mixture among plates. Slice the pork and add to the plates. Top with the pan sauce, bacon and another pinch of red pepper flakes.

salt & freshly ground black pepper
3 tablespoons vegetable oil
1 small red onion, thinly sliced
1 tablespoon dijon-style mustard
1/2 head savoy cabbage, cored and thinly sliced (about 1 lb.)
2 tart apples, peeled,cored,and cut into 1/2 inch slices
1 cup beer or 1 cup ale
2 sprigs fresh thyme or 1/2 teaspoon dried thyme
1/2 cup homemade chicken stock or 1/2 cup canned low-sodium chicken stock

Steps:

  • Season the chops on both sides with salt and pepper.
  • Heat the oil in a large, heavy skillet over medium-high heat until hot.
  • Add the chops and cook on one side until well browned; turn and brown other side.
  • Transfer to a plate and set aside.
  • Put the onion in the pan and cook, stirring, until softened, about 5 minutes.

2/3 cup soy sauce
1/4 cup mirin (syrupy rice wine, available at Asian markets and some supermarkets) or sweet sherry
1/4 cup cider vinegar
1/3 cup sugar
2 tablespoons chopped fresh gingerroot
2/3 cup beer (not dark)
six 1-inch-thick rib or loin pork chops

Steps:

  • In a saucepan combine the soy sauce, the mirin, the vinegar, the sugar, the gingerroot, and the beer, simmer the mixture until it is reduced to about 1 1/3 cups, and let the marinade cool until it is room temperature. In a shallow baking dish large enough to hold the pork chops in one layer combine the pork chops and the marinade, turning the chops to coat them thoroughly, and let the chops marinate, covered and chilled, turning them several times, overnight.
  • Pour the marinade into a saucepan and boil it for 5 minutes. Grill the pork chops on an oiled rack set about 4 inches over glowing coals, basting them with the marinade during the last 5 minutes of the cooking time, for 8 minutes on each side, or until they are just cooked through. Alternatively the pork chops may be broiled on the rack of a broiler pan under a preheated broiler in the same manner.

1 1/2 tablespoons dark brown sugar
1 tablespoon molasses

2 teaspoons dried sage

Steps:

  • Combine the water, beer, salt, brown sugar and molasses in a large bowl. Stir until salt and sugar dissolve. Stir in the ice.

1 teaspoon paprika
1/2 teaspoon coriander seeds, toasted and ground
Kosher salt and freshly ground black pepper
Four 4-ounce boneless pork chops, each 1/4-inch thick
3 tablespoons olive oil
2 cups thinly sliced red onions
1 cup sauerkraut
1 cup IPA-style beer
1/3 cup fresh flat-leaf parsley leaves, chopped
Put a large skillet over high heat.
Whole grain mustard, for serving

Steps:

  • Combine the paprika, coriander, 1 teaspoon salt and black pepper to taste in a small bowl. Season both sides of the pork with this spice mixture.
  • Add the oil to the preheated skillet. Add the pork in a single layer in the pan. Cook, without moving, until lightly golden brown, about 1 minute. Flip the meat and scoot to the outer edges of the pan. To the open space in the middle, add the onions and a pinch of salt. Cook for 2 minutes, stirring the onions occasionally.
  • Add the sauerkraut and continue cooking until the onions have softened and the sauerkraut turns golden brown, about 1 1/2 minutes. Add the beer and deglaze the pan, scraping with a wooden spoon to get up the browned bits on the bottom of the pan. Cook until the sauce reduces slightly, about 30 seconds.

salt and pepper to taste
1 cup beef stock
2 tablespoons brown sugar
½ teaspoon chipotle-flavored hot sauce
2 teaspoons Worcestershire sauce
1 pinch salt, to taste

Steps:

  • Place the pork chops in a dish; pour 2 cans of the root beer over the chops. Place in refrigerator to marinate at least 2 hours. Remove the pork chops from the root beer; season with salt and pepper.
  • Combine the remaining can of root beer, the beef stock, brown sugar, hot sauce, and Worcestershire sauce in a saucepan over medium heat; simmer the mixture until it reduces to about 3/4 cup. Set aside.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
