  • When ready to cook, set the Traeger temperature to 275°F and preheat with the lid closed for 15 minutes. Grill: 275 ˚F.
  • Thoroughly coat all sides of the pork belly cubes with your Meat Church rub of choice. Let it sit for 15 minutes for the rub to adhere. Ingredients. 1 (5-7 lb) skinless pork belly, cut into 1 inch cubes.
  • Arrange the pork belly cubes on a wire rack, fat-side down, then place the rack on the grill grates. Close the lid and cook until the internal temperature reaches 190-195°F, about 3 hours, spritzing with apple juice every 45 minutes or as needed if the pork starts to look dry.
  • Transfer the pork belly to a half-size (9 x 13-inch) aluminum pan. Season and toss the cubes with more Meat Church rub.
  • Cover the pork belly cubes with the Traeger Apricot BBQ Sauce. Drizzle the honey over the top, then toss until the pork is well coated. Ingredients. 1 1/2 Cup Traeger Apricot BBQ Sauce.
  • Place the pan, uncovered, on the grill grates. Close the lid and cook for another hour, or until all liquid has reduced and caramelized. Grill: 275 ˚F.

BBQ BROWN SUGAR PORK BELLY RECIPE | TRAEGER GRILLS

  • The night before you plan to cook, pat the pork belly dry with paper towels. Score the fat with a very sharp knife in a diamond pattern, making sure not to cut into the meat.
  • In a small bowl, combine the salt and brown sugar. Ingredients. 4 Tablespoon brown sugar. 4 Tablespoon salt.
  • Set a wire rack on top of a baking sheet. Rub the salt and sugar mixture all over the pork belly. Place on the rack to refrigerate, uncovered, overnight.
  • 30 minutes before cooking, remove the pork belly from the refrigerator. Rinse under cold water and pat very dry with paper towels. Grill: 450 ˚F.
  • When ready to cook, set the Traeger temperature to 450℉ and preheat with the lid closed for 15 minutes. Grill: 500 ˚F.
  • Place the pork belly directly on the grill grates, fat side up. Close the lid and cook for 30 minutes. Grill: 325 ˚F.
  • After 30 minutes, reduce the grill temperature to 325℉ and continue cooking until the pork is tender and the fat is crisp, about 3 hours more.
  • Serve with baked beans, potato salad, coleslaw, white bread, barbecue sauce, or your favourite BBQ sides. Enjoy! Ingredients. As Needed baked beans. Potato Salad.
