RUSSIAN CABBAGE SOUP (SHCHI)

Russian Cabbage Soup, also called Shchi, with savory beef ribs, hearty potatoes and fresh cabbage (or sauerkraut) is the perfect flavor balance of sweet, sour and salty flavors! Topped with yogurt and fresh dill it's a satisfying one pot dinner.

2 lbs beef ribs or soup bones
12 cups cold water
3 bay leaves
5 peppercorns
1 large onion (finely chopped)
2 large carrots (shredded)
1.5 lbs 5 cups shredded cabbage
1 lb 4 large potatoes, diced
1 tbsp oil (for frying)
1 tbsp tomato paste (low sodium)
2 tsp salt
1/4 tsp ground black pepper
3 tbsp white or apple cider vinegar
3 tbsp fresh dill (finely chopped)
Sour cream or yogurt (for serving (optional))

Steps:

  • In a large pot (I use 6 quart Dutch oven), add beef, water, bay leaves and bring to a boil.
  • In the meanwhile, begin to wash, peel and cut vegetables.
  • Once broth is boiling, start skimming the foam with mesh strainer until clear. Reduce heat to low, add peppercorns, cover and simmer for 30 minutes.
  • In the meanwhile, preheat large skillet on medium heat and swirl 1 tbsp of oil to coat. Add onion and saute for 3 minutes, stirring occasionally.
  • Add carrots and saute for 5 minutes, stirring occasionally. Add tomato paste, stir until combined and turn off heat.
  • Transfer sauteed veggies to a pot along with cabbage, potatoes, tomato paste, salt and pepper. Cover, bring to a boil and cook on low heat for 15 minutes.
  • Turn off heat, remove beef bones on a cutting board and let cool for 5 minutes.
  • Discard bay leaves and peppercorns. Add vinegar, dill and stir.
  • Remove meat from bones, chop (I usually use fork and a knife) and return to the pot (along with bones, if you wish). Adjust any seasonings to taste, if necessary.
  • Serve hot with a dollop of yogurt or sour cream, if you wish. More dill in bowls is great too.
  • Refrigerate cabbage soup in a large pot you cooked it in for up to 5 days.
  • Reheat by simmering on low in small pot only amount you are planning to consume.
  • Freeze in an airtight glass container for up to 3 months. Then thaw on a counter overnight and reheat.

1 ½ pounds ground lean beef
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
4 cubes beef bouillon
2 medium carrots, shredded
1 onion, chopped
2 tablespoons white vinegar
½ cup white sugar
1 ½ teaspoons salt
½ teaspoon ground black pepper
2 quarts water, divided
3 cloves garlic, finely chopped
1 head cabbage, cored and cut into wedges

Steps:

  • Crumble the ground beef into a large pot. Add the diced tomatoes, tomato sauce, beef bouillon cubes, carrots, onion, vinegar, sugar, salt and pepper. Pour in 1 quart of water, and bring to a boil. Stir to break up the beef while heating. Once the soup comes to a boil, cover and simmer for 30 minutes over low heat.
  • Pour in another quart of water, and return to a slow boil. Add garlic and cabbage. Simmer for 25 minutes, until cabbage is tender. Ladle into soup bowls to serve.

1 onion, thinly sliced
4 cups grated red cabbage
4 cups grated white cabbage

2 quarts chicken stock
1 cup dry white wine

Steps:

  • Heat oil and butter in pressure cooker, just until butter foams.
  • Add onion& cabbage, stirring until cabbage is wilted.
  • Add the remaining ingredients.
  • Cover with pressure cooker lid.
  • Set on high heat until the control jiggles.
  • Reduce the heat and cook for 10 minutes.
  • Remove from heat and let cool 5 minutes.
  • Run cold water over cooker to finish reducing pressure.
  • Serve with sour cream if desired.

2 tablespoons olive oil
1 onion, chopped
1 carrot, chopped
1 stalk celery, chopped
1 head cabbage, shredded
1 potato, diced
4 cups chicken stock
⅓ cup stone-ground mustard
¼ cup ketchup

1 bay leaf
1 clove
1 clove garlic

Steps:

  • Heat oil in a multi-functional pressure cooker on Saute mode. Saute onion, carrot, and celery until onion is translucent, about 5 minutes. Toss in cabbage and potato; cook until cabbage starts to break down, 2 to 3 minutes.
  • Mix chicken stock, mustard, and ketchup into the cabbage mixture. Cook and stir until combined, about 1 minute. Stir in salt and pepper; add bay leaf and clove. Place garlic in the center of the pot.
  • Close the pot and lock the lid. Select Soup setting or high pressure according to manufacturer's instructions; set timer for 6 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.

3/4 cup cubed cooked roast beef
1 cup chopped onion
1 cup chopped tomatoes
1/2 cup shredded cabbage
1/2 cup sliced celery
1/3 cup chopped carrot
1 cup sugar
1/2 cup cider vinegar
1/4 cup Burgundy wine or beef broth, optional
2 tablespoons browning sauce
2 tablespoons Worcestershire sauce
2 teaspoons tomato sauce
6 beef bouillon cubes
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons all-purpose flour
2 tablespoons canola oil

Steps:

  • In a Dutch oven, combine the water, beef, onion, tomatoes, cabbage, celery, carrot, sugar, vinegar and wine or broth if desired. The best of both worlds: heavy Thai flavor combined with acidity of the tomato and the lightness of the cabbage.

2 tablespoons sesame oil
4 ounces leeks, diced (white part only)
3 garlic cloves, diced
1 ounce ginger, grated
1/2 head cabbage, shaved thinly (use a madoline if available)
6 ounces bamboo shoots, cut into strips (reserve liquid for later)
2 tablespoons tamarind paste
1 quart low sodium vegetable broth
28 ounces crushed tomatoes
8 chili peppers, Calabrian, diced, with oil
4 ounces Chinkiang vinegar
3 ounces rice vinegar
1/2 cup water (or use drained liquid from canned vegetables)
3 ounces cornstarch (or 4 ounces of flour)
2 large eggs
2 ounces cilantro, chopped, plus more for garnish

Steps:

  • Heat sesame oil in a large pot on medium heat. Add leeks and saute for about 5 minutes, scraping the bottom continuously with a spoon or spatula. Add garlic and ginger and saute for another minute, stirring continuously.
  • Add cabbage and bamboo shoots to pot and stir thoroughly to coat. Stir occasionally for 5 minutes.Stir in tamarind paste to coat thoroughly and cook for another minute. Add vegetable stock and stir thoroughly.
  • Open the can of tomatoes, but leave them in the can. Add chopped Calabrian chili peppers (minus the stems) to the can. Use an immersion blender for 30 seconds or so to blend tomatoes and peppers together. Add mixture to the pot and stir thoroughly.
  • Add both vinegars to the pot and stir. Cook for 20 minutes on medium heat, or until cabbage is tender.
  • In a separate bowl, use liquid reserved from bamboo shoots to blend with cornstarch. Alternately, use 1/2 cup of water or some of the soup removed from the pot. Blend the cornstarch mixture into the soup by pouring in a steady stream while stirring continuously.
  • Whisk two eggs in a bowl, then blend them into the soup by pouring in a stead stream while stirring continuously. This will produce a "feathering" effect in the soup.
  • Stir in chopped cilantro and serve, adding additional fresh cilantro as a garnish.

TANGY SWEET & SOUR CABBAGE SOUP

A family favorite, I took bits and pieces from several recipes and tweaked it to our preferences. The first time I made this, I used the juice of 2 lemons, which was not enough, and probably 1 cup of brown sugar or a bit more, which was about right. In addition to the lemon juice, I added a bit of cider vinegar as well - the soup needed more of a sour taste. Turned out great!

3 lbs chuck steaks or 3 lbs beef short ribs
1 onion, chopped
3 parsnips, peeled and diced
3 carrots, peeled and diced
1 -2 stalk celery, diced
28 ounces stewed tomatoes
3 (10 3/4 ounce) cans condensed beef consomme
1 cabbage, coarsely shredded
14 ounces sauerkraut, drained
2 -3 lemons, juiced
2/3 cup brown sugar (or more)
salt, to taste
pepper, to taste
garlic powder, to taste
1 -2 tablespoon olive oil
water

Steps:

  • In a large soup pot or dutch oven, brown meat on all sides in olive oil under medium high heat. Season the meat with salt, pepper, or your favorite spices while cooking. When browned all over, remove the meat to a separate plate.
  • Add the onion, parsnips, carrots and celery to the pot, plus a little more oil (if needed to prevent sticking). Cook over medium heat, stirring often, until browned and softened.
  • Add in the can of stewed tomatoes, cutting up the large slices of tomatoes into smaller pieces.
  • Add in the cans of beef consomme and 3 cans of water. You can also use beef broth or French onion soup as well.
  • Place the meat back into the pot. Bring to a boil over high heat, then reduce heat to low, cover and simmer for one hour.
  • After one hour, add the cabbage and sauerkraut to the pot. Again, bring to a boil, cover, and simmer on low heat for another hour.
  • After another hour has gone by, add the juice of 2 or 3 lemons to the soup and the brown sugar. You may need more of each to taste, the soup should definitely be sweet, and sour.
  • Enjoy!

Shchi has been a Russian staple for centuries for many reasons. It is very cheap, easily changed according to what ingredients are available, keeps well, and has many vitamins and minerals in each serving. It can be made with meat or vegetarian. This is my version of the recipe :)

8 cups beef stock (Vegetable Stock or Water for vegetarian)
1 1/2 lbs green cabbage
4 garlic cloves
3 medium potatoes
2 medium onions
2 medium tomatoes
2 small radishes
1 leek (bottom half only)
1 large carrot
3 bay leaves
2 tablespoons butter
1 teaspoon black peppercorns
1 teaspoon caraway seed
2 tablespoons sour cream (or Smetana, per bowl)
1 teaspoon dill (per bowl)
1 teaspoon parsley (per bowl)

Steps:

  • Core and shred the green cabbage.
  • Peel and chop the garlic.
  • Peel and chop the potatoes into large chunks.
  • Peel and chop the onions.
  • Wash and chop the tomatoes.
  • Peel and dice the radishes.
  • Wash and slice the leek into thin circles.
  • Peel and grate the carrot.
  • Melt the butter in a large pot or pan.
  • Add garlic, onion, radish, leek and carrot. Saute on high heat approximately 5-10 minutes until vegetables have softened.
  • Add beef stock (vegetable stock or water) and bring to a boil.
  • Add green cabbage, potatoes, tomatoes, bay leaves, black peppercorns, and caraway seed.
  • Reduce heat to low and cover. Simmer for approximately one hour or until all vegetables are done, stirring occasionally.
  • Remove and discard bay leaves.
  • Finely chop dill and/or parsley.
  • Ladle into bowls.
  • Add a dollop of sour cream (or smetana) on top and sprinkle with chopped dill and/or parsley.
  • Ideally, refrigerate after cooling and wait 1-2 days to serve as shchi is usually allowed to "cure" for a short time. In my opinion, it tastes great fresh or re-heated. Can also be served cold.
  • Pumpernickel or rye bread and butter make a great side.
  • Refrigerate any leftovers.

Steps:

  • In a large soup pot cover the beef, tomatoes, onion, bay leaf and garlic with cold water.
  • Let stand for 1 hour and simmer covered for 3 hours.
  • Remove the bay leaf, add cabbage, sugar, onion, salt and pepper.
  • Simmer for 15 minutes more.
  • Remove from heat, add lemon juice and offer Sour Cream at the table.

  • Place the dry mushrooms in a bowl and pour in 1 cup of boiling water. Set aside so that the mushrooms rehydrate.
  • Meanwhile, turn on the “Saute” mode on the Instant Pot. Heat butter or oil and then add the chopped onion and grated carrot. Season with salt and ground black pepper to taste. Cook for 5-7 minutes, until the vegetables have softened.
  • While the vegetables are cooking, wash the rehydrated mushrooms, reserving the mushroom liquid, and then add them to the vegetables in the Instant Pot. Using a fine mesh sieve lined with a paper towel or a coffee filter, strain the mushroom liquid and add it to the soup. Pour in the chicken or vegetable broth. Season to taste with salt and ground black pepper.
  • Turn on the Instant Pot to Manual mode, High Pressure and set the time for 15 minutes. Cover with the lid and make sure the valve is set to “Sealing”.
