1/4 cup lime juice
1 1/2 teaspoons ground cumin
3/4 teaspoon salt
4 garlic cloves, finely chopped
1/2 pound pork tenderloin, cut into 2x1/2-inch strips
1 large onion, thinly sliced
3 medium bell peppers, thinly sliced
4 cilantro-flavored flour tortillas, (8 inches in diameter)

Steps:

  • Mix lime juice, cumin, salt and garlic in shallow glass or plastic dish. Stir in pork. Cover and refrigerate, stirring occasionally, at least 15 minutes but no longer than 24 hours.
  • Remove pork from marinade; reserve marinade. Spray 10-inch skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 3 minutes, stirring once. Stir in onion, bell peppers and marinade. Cook 5 to 8 minutes, stirring occasionally, until onion and peppers are crisp-tender.
  • Place one-fourth of the pork mixture on center of each tortilla. Fold one end of tortilla up about 1 inch over pork mixture; fold right and left sides over folded end, overlapping. Fold remaining end down.

Just like the restaurant favorite these delicious Pork Fajitas are sure to satisfy any and all appetites! Full of colorful flavors, easy to prepare, and served with homemade guacamole!

2 medium onions
1 red bell pepper
1 yellow bell pepper
3 tablespoon fajita seasoning (or to taste)
2 pounds pork tenderloin
2 tablespoon olive oil
fresh cilantro (for garnish)
1 lime (cut into wedges)
8 small tortillas
2 avocados
2 tablespoon lime juice (from 1 lime)
1 tomato (diced)
3 green onions (chopped)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)

Steps:

  • Clean and slice the onions into long strips. Slice the peppers into long strips as well. Place peppers and onions in a large bowl, sprinkle 1 1/2 tbsp of the fajita mix over the onions and peppers and toss.
  • Clean and slice the pork tenderloin into long strips and place in a bowl. Sprinkle the remaining 1 1/2 tbsp of fajita mix over the pork and stir to make sure each piece of pork is seasoned well.
  • In a large skillet, heat 1 tbsp of the olive oil over medium high heat and add the pork to it. Cook the pork for 5 to 10 minutes until it's fully cooked, and it's slightly charred, but not burned.
  • Remove the pork from skillet, and wipe the skillet clean.
  • Add another tbsp of olive oil to the skillet and heat it up. Add the onion and pepper mixture and cook for about 5 minutes until the onion is caramelized and the peppers are soft. Add the pork back to the skillet, mix with peppers and onions and cook for a minute.
  • To make the guacamole, mash the avocados in a small bowl, then add the rest of the ingredients and stir well.
  • Assemble the tortillas, add some pork, onion, peppers, and top with avocado. Garnish with cilantro if preferred.

1 lb pork tenderloin, julienned
1/2 teaspoon salt (or more to taste)
1/4 teaspoon pepper (or more to taste)

3 cloves garlic, minced
1 teaspoon ground cumin
2 teaspoons fajita seasoning mix (I used Paul Prudhomme's Fajita Magic, but use whatever kind you like--there are a couple posted on Z)

8 6-inch flour tortillas, warmed
shredded lettuce
chopped tomato
avocado, slices
shredded cheese (etc)

Steps:

  • Heat the oil in a large skillet over high heat.
  • Add pork, sprinkle with the salt and pepper.
  • Cook, and stir constantly for 2 minutes.
  • Add peppers, onion, garlic, cumin and fajita seasoning, continue to cook until the vegetables are crips-tender, about 3-4 minutes.
  • Stir in the lime juice, and saute for about 2 more minutes.
  • To serve, roll 3/4 cup meat mixture in each tortilla and garnish as desired.
  • I like to put the meat and tortillas in a platter and bring it to the table, and let everyone make up their own.

2 tablespoons orange juice
2 tablespoons vinegar
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon ground cumin

1 medium onion, cut into thin wedges
1 medium green pepper, julienned
1 tablespoon vegetable oil
6 flour tortillas (6 inches)

Steps:

  • Cut pork into 4x1/2x1/4-in. strips; set aside. In a bowl or resealable plastic bag, combine orange juice, vinegar, garlic, oregano, cumin, seasoned salt and hot pepper sauce; mix well. 1 pound pork tenderloin (or lean pork, cut into strips)

8 flour tortillas (6" each or corn tortillas)

Steps:

  • Heat tortillas according to package directions.
  • Slice onion and peppers, set aside.
  • Cut pork into thin strips and place in a bowl. Toss pork with seasoning, lime juice, and 1 tablespoon olive oil.
  • Preheat 1 tablespoon olive oil over medium high. Add the pork in small batches and cook just until browned, about 3-4 minutes. Set cooked pork aside.

1/4 cup torn fresh cilantro
1/4 cup honey
3 tablespoons fresh lime juice

2 jalapenos (seeds removed for less heat)

1 1/2 pounds 1-inch-thick boneless center-cut pork chops
2 tablespoons olive oil

  • For the sweet and spicy marinade: Put the oil, cilantro, honey, lime juice, thyme, garlic, jalapenos, 1 teaspoon each salt and pepper in a food processor and pulse to puree. Transfer the mixture to a nonreactive container, add the pork chops and toss to combine. Cover and refrigerate for at least 30 minutes and up to 2 hours before cooking.
  • For the squash and zucchini: Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the zucchini and a pinch of salt and cook, stirring, until the zucchini is light brown and tender, about 3 minutes. Transfer to a plate. Repeat with the remaining 1 tablespoon olive oil, yellow squash and a pinch of salt, then transfer the cooked squash to the plate. Add the scallions to the skillet and cook, stirring once or twice, until lightly charred. Add the tomato, jalapeno and the cooked zucchini and squash and stir to combine. Add the cilantro and season with salt. Set aside.
  • Prepare an outdoor grill for medium-high heat.
  • Brush the grill grates with oil. Grill the pork chops until marked and cooked through, 4 to 5 minutes per side. Transfer to a cutting board and thinly slice.

2 tbsp (1floz) olive oil
1 red onion, finely sliced
2 tsp sweet paprika
1 garlic clove, crushed
400g (14oz) pork shoulder steak, cubed
1 tbsp (½floz) plain flour
1 tbsp (½floz) tomato puree
400g tin tomatoes
300ml (½pt) pork stock (we used Knorr)
400g jar roasted red peppers, chopped
small handful chopped fresh parsley
150ml pot soured cream

Steps:

  • Heat the oil in a large frying pan and fry the onion for 3 minutes or until translucent. Mix in the paprika and cook for 30 seconds.
  • Add the garlic and pork in to the pan and cook until the pork has browned. Stir in the plain flour and mix to cover the pork.
  • Stir in the tomato purée, tinned tomatoes and pork stock. Bring to a simmer and cook for 20 minutes or until the sauce begins to thicken. Stir in the chopped roasted red peppers and cook for a further 10 minutes. The pork should be tender and cooked through. Sprinkle over the chopped parsley and stir through. Serve with a spoonful of soured cream.
