PORK-AND-SHRIMP CHIVE DUMPLINGS

Pork-and-Shrimp Chive Dumplings image

Long before she became the executive dim sum chef at the Wynn Las Vegas Hotel, Sandy Shi learned techniques from her mother. These chive dumplings, which Sandy makes using homemade wrappers, are one of her go-to recipes. "I cut the shrimp in half to give them a bit more texture," she says.

Yield About 42 dumplings

Number Of Ingredients 13

1/4 cup corn oil, plus more for frying
2 tablespoons finely chopped onion
7 cloves garlic, minced
2 tablespoons Chinese-style chicken bouillon powder (MSG-free)
1 1/2 tablespoons sugar
Kosher salt
1 tablespoon finely ground white pepper
1/2 pound boneless pork shoulder, cut into 1/4-inch cubes
14 ounces small shrimp, peeled, deveined and cut in half
1/4 cup potato starch
1/2 cup thinly sliced Chinese chives
1 1/2 teaspoons toasted sesame oil
42 3 1/2- to 4-inch round potsticker wrappers

Steps:

  • Make the filling: Heat the corn oil in a small saucepan over medium-low heat. Add the onion and garlic and cook, stirring, until caramelized, 10 to 15 minutes. Let cool completely.
  • Meanwhile, whisk the bouillon powder, sugar, 1 tablespoon salt and the white pepper in a small bowl. Mix the pork, shrimp and potato starch in a large bowl, then stir in the seasoning mixture. Fold in the chives, sesame oil and the onion-garlic mixture. (Chinese chives, also called garlic chives, have a strong garlic flavor. It's worth seeking them out for this recipe.)
  • Form the dumplings: Spoon about 1 tablespoon of the filling onto a potsticker wrapper. (Keep the remaining wrappers loosely covered with a damp paper towel as you work.) Dip a finger in water and run around the edge of the wrapper, then fold into a half moon; press the edges with your fingers. Transfer to a baking sheet and repeat with the remaining wrappers and filling.
  • Pan-fry the dumplings in batches: Heat a large nonstick skillet over medium heat and coat with 1 1/2 to 2 tablespoons corn oil. Add a single layer of dumplings and cook, undisturbed, until golden brown on the bottom, 1 to 2 minutes. Carefully add enough water to the pan until it reaches about one-third of the way up the side of the dumplings. Loosely cover the skillet and cook until the water evaporates and the dumplings are cooked through, 4 to 5 minutes. Uncover the skillet, flip the dumplings and cook, adding more corn oil if needed, until golden brown on the other side, 1 to 2 more minutes.

PORK AND LEEK DUMPLINGS RECIPE - (4.7/5)

Pork and leek dumplings Recipe - (4.7/5) image

Provided by tsusanchang

Number Of Ingredients 19

6 cups Chinese (napa) cabbage, finely chopped
1 teaspoon salt
1 pound ground pork
2 cups Chinese garlic chives, finely chopped (if you can't find them at an Asian market, scallions will do in a pinch)
2 and 1/2 tablespoons light soy sauce
1 tablespoon rice wine or sherry
2 tablespoons roasted sesame oil
1 tablespoon finely chopped ginger
1 tablespoon cornstarch
1 tablespoon canola or corn oil
50 round dumpling wrappers
Black Vinegar Dipping Sauce
1 tablespoon fresh ginger, finely minced
1 tablespoon scallions, finely minced
1/2 teaspoon black vinegar (Chinkiang vinegar)
a few drops of white vinegar (rice vinegar)
1/2 teaspoon white sugar
1 teaspoon dark sesame oil
1/3 to 1/2 cup dark soy sauce (e.g. Kikkoman)

Steps:

  • To make the filling: Combine the cabbage and salt in a bowl and toss lightly; let rest for 30 minutes. Squeeze the water out of the cabbage and place it in a large bowl. Add the remaining ingredients, stir until well mixed, and drain off any excess liquid. To wrap the dumplings: Keep the round wrappers covered in plastic while you work, so they don't dry out. Have a small bowl of water handy. Holding one wrapper in your palm, place about 2 teaspoons of filling in the center. Dip your finger in the water and trace a wet arc along the edge of the wrapper. Fold the wrapper in half over the filling, fitting the dry edge to the wet, and seal with your fingertips. You now have a dumpling in the shape of a half-circle. Dip your finger in the water again and dampen the edge of the half-circle. Make a series of 6 or 7 small pleats in the edge, pinching them together with your fingertips. If freezing dumplings, do it now, before cooking. To fry the dumplings: Heat 1 tablespoon of oil in a heavy skillet over medium heat until shimmering but not smoking. Add one layer of dumplings, making sure the edges don't touch. When the first side is golden-brown, flip and brown the other side. Add 1/3 cup of water, cover and steam for 2 minutes. When the wrappers are just translucent, uncover, raise the heat. Remember to boil off all the remaining water: Soggy dumplings are nobody's friend. And a good spatula is a big help if the potstickers are living up to their name. It's also possible to boil or steam dumplings. Serve with red rice vinegar, soy sauce and sesame oil, minced garlic and rice vinegar, chili sauce or black vinegar dipping sauce . Black vinegar dipping sauce In a small bowl combine the ginger and scallions. Add the sugar, vinegars and sesame oil. Crush the mixture lightly with a fork or chopsticks to help release the flavors. Let it rest for at least 5-10 minutes. Add the soy sauce gradually to taste. Less soy sauce makes for a thick, pungent sauce; more makes for a milder dressing.

PORK SOUP DUMPLINGS

Pork Soup Dumplings image

The first time Molly Yeh tried soup dumplings, she was 10 years old and convinced that they were magic. "I was so mystified by how soup got stuffed into a dumpling," says the Spring Baking Championship host. Years later, she discovered the secret: The soup starts out as gelatin that melts down as the dumplings cook. Soon she had her own recipe in the works, a riff on her family's go-to potstickers. Molly makes them in big batches: "I sit at a table and fold a million of them at a time, usually with the TV on in the background. They're like pancakes: The first few are ugly, but after that they're not bad!"

Time 2h

Yield 32 pork soup dumplings

Number Of Ingredients 13

3 cups all-purpose flour, plus more for dusting
Kosher salt
1 3/4 cups chicken stock
1 tablespoon soy sauce
1 1/4-ounce envelope gelatin powder (about 1 tablespoon)
1 pound ground pork
Kosher salt
2 tablespoons soy sauce, plus more for serving
1 tablespoon finely grated fresh ginger
1 tablespoon sambal oelek, plus more for serving
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar, plus more for serving
4 scallions, finely chopped

Steps:

  • Make the wrappers: Combine the flour and 1 1/2 teaspoons salt in a large bowl and create a well in the middle. Add 1/2 cup boiling water and mix it in with a spatula, then incorporate with your hands until you have a mealy, shaggy mixture. Mix in 1/2 cup cold water and bring everything together into a dough, then turn it out onto a work surface and knead, adding more flour if it gets too sticky to work with, until you have a smooth and slightly sticky dough, 7 to 10 minutes. Cover with plastic wrap or a damp towel and set aside for 30 minutes while you make the filling.
  • Make the soup gelatin: Heat the chicken stock in a saucepan until hot, then add the soy sauce and gelatin powder. Whisk to combine. Pour into a shallow dish and chill until set, about 1 hour. Break up the gelatin by fluffing it with a fork. Set aside.
  • Make the filling: Put the pork in a large bowl and sprinkle with 1/2 teaspoon salt. Add the soy sauce, ginger, sambal oelek, sesame oil, rice vinegar and scallions. Mix with your hands (don't overmix), then set up your dumpling folding station.
  • Line a sheet pan with parchment paper and dust with flour. To assemble the dumplings, divide the dough into 32 balls (keep them covered when you're not working with them). Roll out the balls into 3 1/2- to 4-inch circles, flouring the surface as needed. Put a wrapper in your non-dominant hand and make a cup. Place 1/2 tablespoon pork filling in the center and top with 1/2 tablespoon soup gelatin. Begin gathering and pleating the dumpling wrapper using your thumb and pointer finger. Work your way around the edge of the wrapper until you've gathered all the dough; your thumb stays in the same place - it's the pointer finger doing all the work. Twist it at the end, pinching everything in the center. Repeat with the remaining wrappers, filling and soup gelatin and place the dumplings on the sheet pan. (You can freeze the dumplings at this point and steam them directly from the freezer.)
  • To steam the dumplings, line a bamboo steamer with cabbage leaves or parchment paper with a few holes cut out. Place a single layer of dumplings in the steamer, leaving a bit of room between them, then set the steamer over a pot of boiling water. Steam in batches until cooked through, 8 to 10 minutes. (Alternately, line a plate with cabbage or parchment. Place in a pot of boiling water, making sure the water doesn't cover the plate; cook 8 to 10 minutes.)
  • Let the dumplings cool slightly, then enjoy with a sauce of equal parts vinegar and soy sauce with sambal oelek to taste.

ONE-PAN PORK FILLET WITH LEEKS, APPLES, MUSTARD & THYME

One-pan pork fillet with leeks, apples, mustard & thyme image

Pair pork fillets with the flavours of leek and apple. The sauce works with whole pork chops or skin-on chicken thighs too - just adjust the simmering time

Provided by Barney Desmazery

Categories     Dinner

Time 1h5m

Number Of Ingredients 10

40g butter
1 pork fillet (about 500g), sliced into thick pieces
2 eating apples, cored and cut into thick wedges
1 leek, sliced into thick rounds
1 large thyme sprig
1tbsp cider vinegar
300ml chicken stock
150ml double cream or crème fraîche
1tbsp mustard
mash, to serve (optional)

Steps:

  • Melt the butter over a medium heat in a large, shallow saucepan, frying pan or flameproof casserole until foaming. Season the pork slices, then fry for 2 mins on each side until browned. Use a slotted spoon to lift the pork onto a plate, then cook the apple wedges in the same pan for 3-4 mins until starting to caramelise. Lift onto the plate and set aside. Reduce the heat, scatter the leeks and thyme into the pan and cook for 15-20 mins until softened.
  • Splash in the vinegar and simmer for 1 min, then pour the stock over the leeks, season and simmer for 10 mins more. Pour in the cream, then add the mustard and return the pork and apples to the pan. Season to taste and simmer for 5 mins more until the pork is cooked through but still tender and the apples are starting to soften. Serve the pork spooned over mash, if you like.

DELIGHTFUL JAPANESE PORK AND LEEK GYOZA

Delightful Japanese Pork and Leek Gyoza image

The Japanese pork and leek gyoza are crunchy, juicy pockets of goodness. Filled with deliciously spiced pork and served with a tasty dipping sauce. Eating one will just not do.

Provided by Aroma and Essence

Time 50m

Yield 6

Number Of Ingredients 16

2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 teaspoon sesame oil
½ teaspoon chili-garlic sauce
2 cups ground pork
½ cup finely chopped leeks, white and light green parts only
2 medium mushrooms, finely chopped
2 cloves garlic, chopped
1 tablespoon Japanese rice wine
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
1 teaspoon sesame oil
¼ teaspoon salt
¼ teaspoon ground black pepper
2 (16 ounce) packages dumpling wrappers
4 tablespoons vegetable oil for frying

Steps:

  • Combine soy sauce, rice vinegar, sesame oil, and chili sauce in a small mixing bowl for dipping sauce. Set aside.
  • Combine pork, leeks, mushrooms, garlic, rice wine, soy sauce, ginger, sesame oil, salt, and pepper in a large bowl. Mix well to form a uniform mixture.
  • Take one round dumpling wrapper and put 2 tablespoons of the pork mixture on 1/2 of the wrapper. Leave approximately 1/8 inch space from the end of the dumpling. Using a brush or your finger, apply a thin coat of water all along the open space. Fold the wrapper over and push down, so the two sides get "glued" together and form a half moon. Use a fork to pinch down on the edges of the half moon to seal. Repeat to make remaining dumplings.
  • Heat 1 tablespoon of oil in a large nonstick pan over medium heat. Place the dumplings into the pan in one layer; do not overcrowd. Cook the dumplings for 3 to 4 minutes.
  • Without flipping the dumplings, pour about 4 tablespoons of water into the pan and cover immediately. Allow the dumplings to steam until the water has evaporated and the meat inside has cooked, 3 to 4 minutes.
  • Remove the lid and pour remaining tablespoon of oil into the pan and let the dumplings crisp up from the bottom; do not flip-gyoza should only be crisp on one side and steamed on the other. Place the dumplings browned-side up on a plate. Repeat with remaining dumplings and more oil as necessary. Serve with the dipping sauce.
