SLOW COOKER PORCUPINE MEAT LOAF

1 can (10.75 ounce size) condensed tomato soup
1/2 cup salsa
1/4 cup water
1 1/2 pound lean ground beef
1/2 cup uncooked instant white rice
1/2 cup chopped onion
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon black pepper
1 clove garlic, minced
1 egg

Steps:

  • In small bowl, combine tomato soup, salsa and water; mix well. In large bowl, combine ground beef, rice, onion, worcestershire sauce, slat, pepper, garlic, egg and 1/2 cup of the tomato soup mixture; mix well. Shape into loaf. Carefully place meat loaf into bottom of 3 1/2 to 4 quart slow cooker. Pour remaining tomato soup mixture over meat loaf. Cover; cook on low setting for 7 to 9 hours. To serve, cut meat loaf into 6 slices. Spoon sauce from slow cooker over meat loaf.

Porcupine meat balls are quick and easy to make for my kids, and now I have a slower cooker (crock pot) they are even easier As an added bonus i buy more of the mince and make double batches of the balls and freeze them so easy to take them out and pop in cooker with everything else Also can make the balls as mini's for parties, they are a great hit.

1 lb lean ground beef (600gm) or 1 lb lamb (600gm)
1/2 cup uncooked rice
1 small finely chopped onion
1 pinch salt
1 pinch pepper
1 teaspoon mixed herbs
1 egg
2 (8 ounce) cans tomato soup (420gm each)

Steps:

  • Mix ground beef, rice, onions, egg and seasonings. With hands, shape into small meatballs 1inch to 1 1/2 inch (3cmm) are best shape.
  • Add to crock pot with tomato soup.
  • Cook on low for 5-7 hours (as slow cookers vary).
  • As an extra sometimes I put two handfuls of rice into the soup.
  • This can also be cooked on the stove top but add 2 tins of water and cook covered for 1 hour).

1 cup milk
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 clove garlic, finely chopped, or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup

Steps:

  • Line 4 1/2- to 5-quart slow cooker with foil. Spray foil with cooking spray.
  • In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top.
  • Cover; cook on Low heat setting 3 to 4 hours or until meat thermometer inserted in center of loaf reads 160°F. Remove meatloaf from slow cooker to serving platter. Cut into pieces to serve.

1/4 cup water
1 1/2 lb lean (at least 80%) ground beef
1/2 cup uncooked instant white rice
1/2 cup chopped onion
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, finely chopped
1 egg

Steps:

  • In small bowl, mix soup, salsa and water.
  • In large bowl, mix ground beef and all remaining ingredients plus 1/2 cup of the tomato soup mixture. Shape mixture into oblong loaf no longer than diameter of slow cooker. Carefully place meatloaf in bottom of 3 1/2- to 4-quart slow cooker. Pour remaining tomato soup mixture over meatloaf.
  • Cover; cook on Low setting 7 to 9 hours.
  • To serve, carefully remove meatloaf from slow cooker; let stand 5 minutes. Cut into 6 slices; place on serving platter. Spoon sauce from slow cooker over meatloaf.

2 1/4 pounds ground meatloaf mix (a combination of beef, pork and veal)
1 cup panko breadcrumbs
2 large eggs
1 1/4 cups ketchup
2 tablespoons Worcestershire sauce
4 scallions, finely chopped
2 tablespoons chopped fresh parsley, plus more for topping
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground pepper
12 ounces small fingerling potatoes, halved lengthwise
3 carrots, sliced 1 inch thick
1/4 cup low-sodium chicken broth
2 tablespoons packed light brown sugar

Steps:

  • Combine the meatloaf mix, panko, eggs, 3/4 cup ketchup, 1 tablespoon Worcestershire sauce, the scallions, parsley, thyme, 1 teaspoon salt and a few grinds of pepper in a large bowl; mix with your hands until just combined. Form into a 5-by-9-inch loaf.
  • Transfer the meatloaf to a 6-quart slow cooker. Scatter the potatoes and carrots over and around the meatloaf. Pour in the chicken broth. Cover the slow cooker and cook 8 hours on low or 4 hours on high.
  • When the meatloaf is done, skim off any excess fat from the juices in the slow cooker. Combine the remaining 1/2 cup ketchup, 1 tablespoon Worcestershire sauce and the brown sugar in a small bowl, then whisk in 1/4 cup juices from the slow cooker. Brush the top of the meatloaf with the ketchup mixture. Cover the slow cooker and let the meatloaf rest, 10 minutes.
  • Remove the meatloaf from the slow cooker and slice in half. Serve half with the vegetables; top with more parsley. Reserve the remaining half for Meatloaf Quesadillas.

I have 3 kids on 3 different sports teams, so during baseball season I do a lot of crockpot cooking since it seems like I'm always on the run. I was intrigued by the idea of cooking meatloaf in the crockpot but the couple of recipes I tried were very greasy and fell apart too easily. I came up with this recipe that my family really enjoys. I think the potatoes on the bottom are really key to the success of the result because they keep the meat up off the bottom and let it cook out of the liquid. I know the recipe is going to seem like too little liquid to start with, but the crockpot retains all the liquid inside and really is enough. Let me know what you think.

1 1/2 lbs lean ground beef (I use 93% lean)
2/3 cup breadcrumbs (I use crushed crouton for extra flavor)
1 egg
2 tablespoons sour cream
1 ounce dry onion soup mix (I use 1 Lipton packet)
1 teaspoon garlic, minced
1 teaspoon salt (or to taste)
1 teaspoon pepper
5 medium potatoes, peeled and cut into 1/2-inch slices
1 sweet onion, cut into 1/2-inch slices
salt and pepper
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup cheese, shredded (I use sharp cheddar)
1 teaspoon garlic, minced

Steps:

  • Spray crockpot with non-stick cooking spray to help make clean up easier. Layer sliced potatoes and onions on bottom.
  • Mix all the meatloaf ingredients together really well. I use an electric mixer to make sure everything is evenly mixed.
  • Shape into an oval loaf and lay on top of the potatoes and onions - try to not let it touch the sides of the crock to prevent the heat of the crock from overcooking the meatloaf.
  • Mix all the topping ingredients together and spoon on top of the meatoaf. Cook on high for an hour, then turn the crockpot down to low and cook an additional 4-5 hours or till its done all the way through.
  • Add a salad and dinner is complete! Enjoy.

1 1/2 lbs ground chuck
1 cup Italian style breadcrumbs
1 egg
2 cups ketchup
1/2 medium diced onion
1/4 cup green pepper
2 potatoes
3/4 cup ketchup
1/4 cup granulated brown sugar
1 teaspoon yellow mustard

Steps:

  • Sliced the potatoes about 1/4 inch thick. Diced the onion and finely dice the green pepper salt and pepper to taste.
  • Mix well in a large bowl the meat, diced onions, finely diced green pepper, breadcrumbs, egg and ketchup together by hand. Squish real well form into a loaf.
  • spray the bottom of the crock pot with non-stick spray.
  • place sliced potatoes on the bottom of the crock pot. This will help stop the sticking of the loaf and keep it from swimming in all the juices.
  • Place the loaf in the crock pot on top of the potatoes being sure not to let the loaf touch the sides of the crock pot.
  • mix the ketchup, brown sugar and yellow mustard in a small bowl. This is the topping.
  • pour over the entire loaf.

1/2 lb hamburger
1/2 cup rice
1/2 cup onion, chopped up finely
1/2 cut green pepper, chopped up finely
1 egg
1 teaspoon salt
1/4 teaspoon pepper
1 (10 ounce) can tomato soup
1 can diced tomatoes or 1 can sliced tomatoes

Steps:

  • Combine first 7 ingredients, mixing well to combine.
  • Shape hamburger mixture into roughly 20-24 meatballs about 1 1/2 inches around.
  • Place meatballs in crockpot and pour soup and tomatoes (plus juice from tomatoes) over the meatballs.
  • Cover and cook on low for 7-8 hours or high for 4.
  • I usually make the meatballs the night before, or even a week before, then freeze them until ready to use.
  • Makes for a real quick preparation time.

Steps:

  • Coat 3 1/2-quart slow cooker with cooking spray. Tear off two lengths of aluminum foil long enough to fit in bottom of cooker and extend 3 inches over each side of cooker. Fold each foil strip lengthwise to form 2-inch-wide strips. Arrange foil strips in a cross fashion in cooker, pressing strip in bottom of cooker and extending ends over sides of cooker.
