BEEF AND BEAN BURRITOS

- Preheat the oven to 170 to 180 degrees F.
- In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
- Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
- Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
- When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
- Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.
POOR MAN'S BEEF BURRITO
My mom had 5 kids to feed growing up so she always had to come with low budget meals. This recipe is filling and great tasting, one of my favorit as a kid growing up.

- Brown 1 lb of ground beef in pan, season ground beef, drain water from french style green beans, add 1 can french style green beans to ground beef, add 1 can tomato sauce to ground beef, (You can use spicy tomato sauce if you want to spice it up, if not regular tomato sauce works fine) Mix thorughly for 1 to 2 min. cover and let cook for 10 min. on a med. to low heat. heat flour tortill's...And SERVE!
- Add your own favorit burrito toppings. For Example: Sour Cream, cheese, tomatoe, salsa,
- If you have time or would like to make it a full meal serve with refried beans either on the side or added to the burrito and spanish rice.
POOR-MAN'S GOULASH
I make this almost every week. My husband is EXTREMELY picky and he loves it. I took a recipe his mother used to make and made it better. Hope you enjoy. I never really measure. So I did my best at estimating the herbs.

Steps:
- In lg skillet on medium heat add tablespoon olive oil, onion and garlic. Saute till translucent.
- Add beef cook thoughly.
- Drain.
- Add can of tomatoes, oregano, water, and macaroni.
- Cover cook 10-12 minutes
- Add basil. Stir.
- Cook till water has cooked down.
- Serve.
- Note* Taste better the next day.
- Also if you don't have the herbs handy, I suggest getting 2 16oz cans Del Monte tomatoes w/ basil, garlic, and oregano. It is just as good, if not better on the first day. Enjoy.

- Add the rice, salt, and 3 cups water to a medium sauce pot. Place a lid on top, turn the heat on to high, and allow the water to come up to a full boil. Once boiling, turn the heat down to low and let it continue to simmer for 15 minutes. After 15 minutes, turn the heat off and let it sit, with the lid in place, for an additional five minutes. Fluff just before serving.
- While the rice is cooking, make the beans. Add both cans of black beans (undrained) to a small sauce pot, along with the cumin, and garlic powder. Heat over medium, stirring often, until heated through.
- Once the rice is cooked, build the bowls. Add one cup cooked rice, 1/2 cup warm black beans, 1/3 cup salsa, and 1 oz. shredded cheese (about 1/4 cup) to each bowl. Top with a few sliced green onions and jalapeños, then serve.
