POOR MAN'S SPAGHETTI
This is my Mother's recipe. She called it poor mans spaghetti, at the end of the month when pantry was low she would put together spinach, and pasta with spices. I added a few ingredients and threw in a pot of stock, dry noodles and all. I made this even easier and still a great price at about $7.00 for 6 servings!

Steps:
- 1. Add vegetable stock and tomatoes in juice to large pot, turn heat to high. Break up pasta and add to pot. Add rest of ingredients stir and bring to rapid boil with lid on. Make sure all ingredients or covered by liquid.
- 2. Remove lid stir and turn heat down to med. Continue boiling stirring every few minutes for about 20 minutes or until pasta is cooked. Serve with more parmesan cheese and fresh italian bread.
- 3. If you cant find tomatoes with onion and pepper. Use can chopped tomatoes and add one medium chopped onions. Or veggie of choice.

Steps:
- 1. Brown hamburger and onion. Season to taste.
- 2. Add tomato soup and 1 can of water.
- 3. Cover and simmer while cooking spaghetti.
- 4. Cook spaghetti according to package directions.
- 5. When spaghetti is done, drain and mix with meat/soup. Season to taste.
- 6. Let set about 10 minutes for noodles to absorb some of the sauce.
SPAGHETTI AGLIO OLIO

POOR MAN'S LASAGNA
Steps:
- Prepare Mac 'N Cheese according to directions on the box. While the macaroni is cooking, cook beef in a small skillet. Once beef is done add spaghetti sauce and mix.
- Once the Mac 'N Cheese is fully prepared, place 1/2 the macaroni in bottom of 8x8 baking dish. Then add all of the meat and sauce over top. Then add the rest of the Mac 'N Cheese on top of that. Sprinkle the mozzarella cheese on top of macaroni.
- Bake in a 350 degrees F oven for about 20-30 minutes. Everything is fully cooked, so baking just helps it melt together.

POOR MAN'S LASAGNA
This is how I always fix my lasagna- I don't like messing with the real noodles :-) It's really healthier than you'd expect such a fulfilling meal to be. You can use ground turkey instead of beef. I have also made it with squash and mushrooms instead of meat- which was a nice change. It goes great with a big chunk of freshly toasted garlic bread... Edit: After some of the reviews I thought I'd mention that the pasta sauce I use isn't plain tomato sauce, but a flavored sauce that you'd eat over spaghetti (like chunky garlic mushroom flavor.)

- Brown meat in a skillet. Drain fat from meat (I usually rinse it under warm water.).
- Meanwhile, boil noodles according to package directions (its OK if they're a little underdone.).
- Meanwhile mix the egg and cottage cheese in a bowl, and set aside.
- Spray a 9x13 pyrex. Coat the bottom with a very thin layer of pasta sauce. Layer about half of the noodles on top of the sauce. Layer the meat on top of that, followed by another thin layer of sauce. Layer the cottage cheese mixture on top of that, followed by the remaining noodles. Add the remaining sauce on top of the noodles (I prefer it thin on top, so that the noodles get crispy-chewy.) Sprinkle all of the cheese on top of the lasagna.
- Bake at 350 for 20-30 minutes depending on how crunchy you like your noodles.
- I have found that half of a container of cottage cheese is perfect, so I usually go ahead and mix the remaining half with an egg, and freeze it. It defrosts quite easily in the fridge next time.
- I also usually buy the meat on sale in bulk, and freeze it in pre-cooked portions. If you do that, you can easily put this meal together quickly. It's also easy to make 2 lasagnas at once, and freeze one for later. You can reheat it in the microwave, or in the oven at 350 for 20 minutes, covered.

- When noodles are done to your liking, drain & put back into pot. Pour tomato juice & all of cheese cubes into pot & warm on low/med.

- Bring water to a boil in a large soup pot and stir ditalini pasta into the boiling water. Cook, stirring occasionally, for 12 minutes.
- Stir tomato sauce, cannellini beans, kidney beans, black-eyed peas, frozen green peas, corn, potato, carrots, onion, garlic, parsley, Italian seasoning, salt, and black pepper into pasta. Bring soup to a boil, reduce heat to low, and simmer to blend flavors, 30 to 45 minutes.

- Put water on to boil in a large pot. When it comes to a boil, salt generously and throw in the spaghetti.
- Shortly before the spaghetti is done cooking, melt a good dollop of lard in a skillet. When it's good and hot, break open the egg and add it to the skillet. Fry the egg "sunny side up", but not too much, taking care that the yolk remains runny and the whites are cooked but still soft. (If the pasta isn't done yet, you can remove the egg to prevent it from overcooking and return it to the skillet along with the pasta.)
- When the pasta is al dente, transfer it to the skillet, along with the grated cheese, a good grinding of black pepper and a ladleful of the pasta cooking water. Mix vigorously over a gentle flame, breaking up the egg, until the pasta is well coated with its condimento.
