4 -5 large red potatoes
3 slices bacon, chopped
1 small onion, finely chopped
1 tablespoon all-purpose flour
1 tablespoon sugar
1 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup white wine vinegar
1/2 cup beef broth
1/2 teaspoon celery seed
4 knockwurst or 4 bratwursts
2 tablespoons parsley, chopped

Steps:

  • Cover potatoes with water in a medium saucepan. Bring to boil; simmer until tender, 25 to 30 minutes. Drain, cool slightly, and cut into slices. Place slices into a large heatproof bowl.
  • Fry the bacon in a medium saucepan over medium heat until almost crisp. Add the onion and cook until translucent, 5 to 10 minutes. Mix in the flour, sugar, mustard, salt and pepper. Stir in the vinegar, broth, and celery seeds. Cook, stirring often, until thickened.
  • Meanwhile, heat the knockwurst according to package directions; cut each into 6 to 8 diagonal slices. Add the knockwurst to the potatoes. Pour the sauce over and toss to coat. Sprinkle with the parsley and serve warm.

POMFRIT'S
2 large baking potatoes (cut into strips)
1 Tbsp olive oil
1/2 tsp sea salt
2 tsp paprika
1/4 tsp marjoram
TOPPING
1 1/2 c gouda cheese (shredded)
GERMAN KETCHUP
2 c ketchup (heinz)
2 1/2 tsp curry powder (red) to taste
1/4 tsp nutmeg

Steps:

  • 1. Preheat oven to 400* Spray your cookie sheet lightly....
  • 2. Combine all of the Pomfrit's ingredients in a large bowl...be sure all potatoes are coated thoroughly...Place potatoes on your baking sheet and place in oven bake 30 minutes..turning every so often with a spatula...
  • 3. While they are in the oven in a small saucepan on low to medium heat place ketchup in the pan for the German Ketchup...Stir constantly add in your curry a 1/2 tsp at a time according to your taste and add your nutmeg in as you go...Stir constantly till the mixture becomes slightly thick....Do not allow to scorch...Take off of heat and set aside...
  • 4. After the Pomfrit's are done pull from oven and turn oven on to broil...Sprinkle the Grated Gouda evenly over the top of the fries and place back into oven to broil and melt the cheese till bubbles approximately 5 minutes...
  • 5. Remove from oven and serve with the German Ketchup on top....YUMMMMMMMMMM

6 baking potatoes, like russets
1 quart vegetable or peanut oil
Salt
Curry Ketchup, recipe follows, for dipping
Honey Mustard Mayo, recipe follows, for dipping
1 teaspoon curry powder
5 ounces ketchup
5 ounces mayonnaise
1/4 finely chopped onion
5 ounces mayonnaise
4 ounces mustard
1 teaspoon honey

Steps:

  • Peel the potatoes, and cut them into batons that are about the length and width of your index finger.
  • Preheat a deep pot of oil to 325 degrees F.
  • For the first fry, deep fry potatoes in the oil for 5 to 6 minutes, or until a light golden color. Do not over load fryer. Fry in 3 batches if necessary. Remove the potatoes using a slotted spoon, and allow them to cool to room temperature.
  • Raise the temperature of the oil to 375 degrees F.
  • For the second fry, deep-fry the potatoes for 2 minutes, or until crispy. Remove potatoes, and transfer into a colander or bowl. While still hot, salt the potatoes.
  • Serve with favorite dipping sauce.
  • Mix all ingredients together.
