POLVORONES (MEXICAN WEDDING COOKIES)
Marcela Valladolid's crumbly and buttery cookies will melt in your mouth. They're easy to prepare and are perfect for dipping in a cup of hot cocoa.

- Put 1/2 cup of the walnuts and the salt in a food processor and pulse until finely ground. Roughly chop the remaining 1 cup walnuts.
- Position two oven racks in the upper and lower thirds of the oven and preheat to 325 degrees F.
- Beat the butter in a large bowl with an electric mixer on medium-high speed until smooth, 2 to 3 minutes. Add the granulated sugar and beat until light and fluffy, about 2 minutes. Scrape down the sides of the bowl. Beat in the flour, then the ground and chopped walnuts. Divide the dough in half, forming each half into a ball. Wrap separately in plastic and chill until cold, about 30 minutes.
- Put the confectioners' sugar in a large bowl.
- Working with half of the chilled dough at a time and keeping the rest in the fridge, roll the dough by 2 teaspoonfuls between your palms into balls. Arrange the balls on a large baking sheet, spacing them 1/2 inch apart.
- Bake the cookies until golden brown on the bottom and just pale golden on top, about 18 minutes. Cool the cookies for 5 minutes on the baking sheet. Toss the warm cookies in the powdered sugar. Transfer the sugar-coated cookies to a rack to cool completely. The cookies can be prepared up to 2 days ahead. Once cooled, store them in an airtight container. You need to make sure they are cooled before storing them, otherwise they will get soggy. Sift additional powdered sugar and cinnamon over the cookies if desired before serving.

Steps:
- In a food processor, combine the pecans and ¼ cup sugar, and process until finely ground, about 30 seconds.
- Add remaining sugar along with flour, cinnamon, and salt, and pulse until evenly incorporated.
- Add butter and vanilla, and process until dough just comes together and you can form the balls. If the dough is too dry, add 1 to 2 tablespoons of water (1 at the time), and process again until you reach a more solid consistency.
- Shape dough into ½" thick balls (I use a small cookie dough scoop for sizing purposes) and place on a tray/plate that you can fit in the fridge. Chill cookies for 30 minutes.
- While the cookies chill in the fridge, preheat oven to 350°.
- Transfer balls to a parchment paper lined baking sheet, spacing them 2" apart.
- Bake the cookies, rotating baking sheet front to back halfway through baking, until lightly browned and set, about 14 to 17 minutes.
- Let cool for 5 minutes, and then place in bowl of confectioners' sugar; toss to coat evenly in sugar.

- Calienta el horno a 350°F.
- Bate la mantequilla, 1/2 taza del azúcar y la vainilla en un tazón grande con una batidora hasta obtener una mezcla liviana y esponjosa. Agrega poco a poco la harina, batiéndola bien a velocidad baja cada vez que añadas más. Agrega las pacanas; mezcla bien.
- Forma 48 bolitas de 1 pulg. con la masa. Colócalas, con 1-1/2 pulg. de separación, en charolas (bandejas) para hornear.
- Hornea las bolitas de 14 a 15 min. o hasta que se doren un poco por debajo. Déjalas enfriar en las charolas 5 min. Pasa las galletas mientras estén calientes por el azúcar restante de modo que queden cubiertas de forma pareja; colócalas sobre rejillas de metal. Deja que se enfríen por completo.
