BAKED SKINNY FRIES
A simple side dish of homemade chips isn't always unhealthy - this version coats the potatoes in spices too

Steps:
- Heat oven to 200C/180C fan/gas 6. Pour the oil onto a baking tray and put in the oven for 3 mins. Mix the cornmeal or polenta, paprika and garlic powder together and season. Toss the chips in the mix, then tip onto the tray. Shake well, then cook for 40 mins, shaking halfway through, until crisp and golden.

"SKINNY" FRIES
This recipe comes from The New American Diet Cookbook with some changes by me. The secret here is to soak the potatoes in ice water for 10 to 15 minutes while the oven is preheating.

Steps:
- Scrub the potatoes and cut lengthwise into 3 equal slices; cut each slice into thirds or fourths.
- As the potatoes are cut, place them in a dish of ice water.
- Preheat oven to 425 degrees.
- When oven is hot, drain off the water, remove potatoes and pat dry with a paper towel.
- Return the dried potatoes to the bowl, sprinkle with seasoning and drizzle with oil; evenly distribute the oil and seasoning with your hands.
- Place on a cookie sheet or jelly roll pan that has been sprayed with non-stick cooking spray and bake until golden brown and tender; approximately 30 minutes, turning frequently.
- Sprinkle with additional seasoning if desired or salt and pepper to taste.

- Combine the oil and crushed garlic in a small bowl.
- Preheat the oven to 425°F Lightly coat a baking sheet with cooking spray.
- Cut the potato lengthwise into 1/4-inch thick slices; cut each slice into 1/4-inch thick strips. Place on the baking sheet and toss with the oil and garlic and use your hands to evenly coat. Season with salt and black pepper. Place on a single layer onto the greased baking sheet. Bake uncovered in the center of the oven until tender crisp and golden brown, about 10 minutes on each side. Baking time will vary depending on your baking sheet and your oven.
- Remove from the oven and top with parmesan and parsley, eat hot!

BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

- Preheat oven to 425 degrees F (220 degrees C). Line 2 baking sheets with aluminum foil; spray with cooking spray.
- Mix oil, seafood seasoning, onion powder, hot sauce, and garlic powder together in a bowl.
- Cut potatoes into spirals using a spiralizer fitted with a large shredder blade; snip long spirals into smaller lengths.

- Put a kettle on to boil. Arrange oven rack in bottom most position of the oven and preheat oven to 425ºF. Line a large baking sheet with paper towels.
- Meanwhile, cut potatoes into batons/French fries, about 1/3 to ½-inch thick. Place in a large bowl.
- When water boils, pour over the potatoes and let sit 3 minutes. Drain thoroughly and spread over the towel-lined baking sheet. Blot with more towels. Dry the bowl and return the potatoes to it. Add oil and salt and toss until the potatoes are completely coated.
- Discard paper towels and dry the baking sheet if necessary. Coat the baking sheet with cooking spray. Spread the potatoes out in an even layer on the baking sheet.
