POLISH SWEET BREAD
This beautiful golden brown, sweet bread, is exactly how I remember it growing up with my polish grandma!

Steps:
- Melt the butter and milk together in the microwave, cool to lukewarm
- Pour the mixture into a stand mixer fitted with the paddle attachment, stir in the yeast and 1 cup of the flour, cover, and allow to rise for 15 minutes
- Beat in the eggs. Add the salt, sugar, and vanilla, beat well.
- Switch to the dough hook. Add the remaining flour, and knead well, until soft, smooth, and shiny. (about 5-7 minutes on medium-high speed)
- Cover and let rise for 2-4 hours, until it doubles in size.
- Knead again, shape the dough, and place in a bread pan that has been greased well.
- Cover, rise again until doubled in size.
- Preheat the oven to 325°
- To make the glaze, whisk together the sugar and egg
- Brush the glaze on top of the risen dough, and bake for 45-50 minutes, until it's a deep golden brown.
- Remove from the oven and cool for about 5 minutes before slicing into it. Enjoy!

This is a traditional sweet Christmas bread made both in Poland and Austria. This is the Polish version. I have posted the austrian version seperately as well ;-)

Steps:
- Sweet Dough preparation: Combine warm milk, sugar, salt, softened butter, and beaten eggs.
- Dissolve yeast in warm water and add to other ingredients.
- Add half of flour, mix well until smooth.
- Add flour to handle easily.
- Knead dough on lightly floured board.
- Put dough in greased bowl, cover and place in warm, draft free place until doubled in size.
- Punch down and let double again.
- Divide dough in three parts.
- Roll each part until very thin in rectangular shape.
- Spread filling, roll and twist in circular shape like a snail or cinnamon roll.
- Place in greased 8 or 9 cake pans.
- Cover, put in warm place and let rise.
- Bake at 350 degrees for 30 45 minutes.
- Makes three loaves.
- Filling preparation: In heavy pan, over medium heat, combine sugar, milk and margarine and heat.
- Add nuts, then beaten eggs and mix well.
- Boil one minutes stirring constantly.
- Remove from heat, add pinch of salt, cocoa and cinnamon and mix well.
- Let cool till just warm enough to spread.
CHALKA -- POLISH EGG BREAD
This recipe for Polish chałka is a braided egg bread, raisins optional. Akin to Bohemian-Czech hoska, Jewish challah and French brioche, chalka is served year-round, but especially during the holidays. Steps:
- Heat the milk to lukewarm; add melted butter, sugar and salt.
- Stir to combine and let cool to about 110°F
- Add yeast and warm water in mixing bowl and stir until dissolved.
- Add lukewarm milk mixture and 2 eggs and stir to combine.
- Add 3 cups flour and beat until smooth.
- Add the raisins and remaining flour and mix, 3 to 5 minutes until smooth. (Dough will be sticky)
- Place dough in greased bowl.
- Turn over and cover with plastic wrap and let rise until double, about 1 hour.
- Punch down dough and turn out onto lightly floured board.
- If making 1 large loaf, divide dough into 3 equal pieces.
- Roll each piece into a strip about 14 inches long, and braid together the 3 strips on a parchment-lined baking pan. (Note: If making 2 loaves, divide dough into 2 equal pieces and then divide each half into 3 equal pieces, for a total of 6 pieces.)
- Loosely cover bread and let rise again until double, about 30 minutes.
- While bread is rising, preheat oven to 350°F.
- Brush remaining beaten egg lightly on bread.
- Bake 30 minutes or until golden brown.
- Let cool completely before serving.
- Store, covered, at room temperature or slice and freeze.

GRANDMA'S PLACEK
Placek (plah-sek) in Polish just means cake, but placek around back home (and probably other cities with a high Polish population) refers to a sweet yeast bread topped with sugary crumble, with golden raisins served on Easter. You hardly see placek, which is a shame! This bread can also be wrapped well and frozen, then taken out as necessary for eating and giving away, meaning it can be made ahead of time! Placek is the kind of bread that begs to be spread with butter - it's not like a moist sour cream coffee cake. It has a drier crumb, making it an even better partner to coffee or tea.

- Warm milk over low heat until scalded (soft bubbles form around edge of pot) but not boiling.
- Add butter and remove from heat.
- Mix in sugar, salt, nutmeg and vanilla. Let cool.
- Meanwhile, sprinkle yeast into water in 2 cup measure,
- stir in 1/2 teaspoon sugar.
- Let stand undisturbed to "proof" about 10 minutes.
- Add eggs to milk mixture, one at a time, beating well.
- Add yeast-in-water mixture.
- Add flour with raisins.
- Knead dough 5 minutes, adding extra flour as needed.
- Placed kneaded dough into greased pan and grease top of dough to prevent it from drying out. Keep warm to rise until double, about 1 to 2 hours.
- Knead dough again (for 5 minutes) and put into greased loaf pans. Let rise 1 to 2 hours again.
- This recipe makes approximately 1 bunt, 2 large and 2 small loaf pans.
- Crumble topping ingredients together.
- Add topping to bread in loaf pans.
- Preheat oven and bake at 350 for 30-40 minutes.
- Bread is done when tester comes out clean.
