This Polish-American sausage, cabbage, and potato casserole recipe is a one-pot dish that comes together quickly and is perfect for all sorts of parties.

1 tablespoon butter
2 large onions (coarsely chopped)
1 medium head cabbage (coarsely chopped or shredded)
2 apples (red-skinned, cored and sliced 1/2-inch thick, peels can be left on, if desired)
2 large potatoes (russet, peels can be left on if desired, parboiled for 5 minutes, save the cooking water, and coarsely chopped)
1 tablespoon seasoning (Vegeta or Maggi )
Pinch black pepper
1 tablespoon caraway seeds (or to taste)
1 pound smoked Polish sausage (skin removed, if desired, cut into 6 pieces and scored diagonally 3 times)

Steps:

  • In a large, Dutch oven or skillet with a lid, sauté onion in butter over medium heat until translucent. Then, without stirring, add cabbage and sprinkle evenly with Vegeta or Maggi seasoning. Add apples, caraway, and pepper without stirring. Top with sausage and 1 cup of the cooking water from potatoes. Cover. When the water begins to boil, reduce heat and simmer 10 minutes.
  • Uncover and mix all ingredients together. Replace cover and simmer 10 minutes more. Remove the cover and test for doneness of the cabbage. If there are too many juices, cook over low heat until reduced. But the pan juices are delicious when sopped up with rye bread.

1 large cabbage
2 cups brown rice, cooked
1 lb veggie crumbles
1/2 cup onion, minced
1 garlic clove, minced
1 teaspoon ground ginger
1 tablespoon sweet paprika
1 tablespoon parsley, chopped
1 teaspoon black pepper
2 eggs
1/2 cup vegetable broth
2 tablespoons olive oil
1 (12 ounce) can diced tomatoes
1 (12 ounce) can tomato soup

Steps:

  • Core cabbage, place in pot and cover with water. Bring to a boil. Lower heat to medium and cover with a lid. Cook until slightly softened. Remove cabbage and place in a dish to cool.
  • Meanwhile, in a large pot, saute onions and garlic in the olive oil until transparent. Add crumbles, rice, spices, egg, and vegetable broth. Mix well.
  • When cabbage is warm to the touch, peel leaves and place on cutting board. You should have six very large leaves.
  • Preheat oven to 375°F.
  • Divide filling mixture into six equal parts.
  • Fill cabbage leaves and roll. Place filled rolls with folded end down into baking dish.
  • Combine soup and tomatoes along with tomato juice from can in separate bowl. Add half of soup can worth of water to sauce. Mix well.
  • Ladle over rolls. Cover rolls in aluminum foil and bake for 45 minutes or until cabbage is easily poked with a fork.

⅔ cup uncooked white rice
1 ⅓ cups water
1 large head cabbage
2 tablespoons butter
1 onion, finely chopped
1 ½ pounds ground chicken
2 eggs
4 cloves garlic, pressed
salt and ground black pepper to taste
1 pinch dried marjoram
2 (8 ounce) cans tomato sauce

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 baking dish.
  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes. Allow rice to cool slightly.
  • Meanwhile, bring a large pot of water to a boil. Remove the core from the cabbage, and place cabbage in the boiling water. Remove the outer leaves as they soften. Set leaves aside.
  • Heat butter in a skillet over medium heat, and cook and stir the onion until softened and translucent, about 5 minutes. Stir together the cooked onion, ground chicken, cooked rice, eggs, garlic, salt, pepper, and marjoram in a bowl.
  • Place about 1/4 cup of the meat mixture in the center of each cabbage leaf. Roll leaf and tuck ends in to enclose filling. Secure each roll with a toothpick if necessary. Place rolls into prepared baking dish. Pour tomato sauce over the rolls.
  • Bake, covered, in the preheated oven until the meat in the rolls is no longer pink, 45 to 60 minutes. An instant-read thermometer inserted into the center of casserole should read at least 160 degrees F (70 degrees C).

1 head cabbage, cored and chopped
1 large onion, diced
1 (12 ounce) package farfalle (bow tie) pasta
2 tablespoons water
1 ½ cups cooked ham, cut into bite-size pieces
2 pinches white sugar, or to taste

Steps:

  • Melt butter in a large skillet over medium-low heat; cook and stir cabbage and onion until very tender, about 30 minutes.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in bow tie pasta and return to a boil. Cook pasta until tender but still slightly firm, about 12 minutes. Drain well and set aside.
  • Stir water and cooked ham into cabbage mixture; heat through. Thoroughly mix in sugar.
  • Gently stir bow tie pasta into the ham and cabbage and heat through.

My mother often served a delicious Polish dish made with cabbage. We always topped ours with a dollop of sour cream and sometimes served this over mashed potatoes. You can make this just using the cabbage, but I add kielbasa or smoked turkey for additional flavour. Delicious.

1 pound ground beef
1 teaspoon salt
1 teaspoon dried parsley
¼ teaspoon onion powder

1 (10.75 ounce) can condensed tomato soup (such as Campbell's®)
1 (32 ounce) container crushed tomatoes (such as Hunt's®)

Steps:

  • Boil cabbage in a stockpot until tender, 10 to 15 minutes. Drain well.

1 large head of cabbage
1 large onion, chopped
2 cups cooked rice
1 lb lean ground beef
1 lb ground pork
2 eggs
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
2 (10 3/4 ounce) cans campbell's tomato soup
1 (46 ounce) can tomato juice
1 (14 1/2 ounce) can diced tomatoes

Steps:

  • You should try to find the largest head of cabbage possible. The larger the head the more leaves large enough to stuff.
  • Put a large pot of water on to boil.
  • When it comes to a boil place cored cabbage in it to soften leaves.
  • Mix together beef, pork, rice, egg, onion, garlic powder, salt, and pepper.
  • Peel off outer layers of cabbage when they are flexible. Cut out hard vein if needed.
  • Lay leaves out flat put a portion of the meat mixture on the stem side of the leaf.
  • fold leaf over the meat and fold in sides of leaf. Then roll up to the end. Make sure that you do not put so much meat that you can not roll it up.
  • Place that roll into a deep oven safe dish or preferably a roaster with lid. Repeat until you have filled all the leaves large enough to stuff or you run out of meat filling.
  • Mix together the tomato soup, tomato juice, and diced tomatoes.
  • Pour the tomato sauce mixture on top of the rolls.
  • Cover with foil or with roaster lid if available and bake for at least 90 minutes in a 350 degree oven. The longer and slower you cook these the better they are.
  • Note: The cabbage rolls may be filled and rolled then frozen for later use. Thaw the rolls then continue on with the recipe.
  • Note: This can also be made without the work of the traditional rolls. Make meatballs of the desired size, shred the cabbage and place in a layer on the bottom of the pan and then on the top of the meatballs before pouring the sauce over.
  • Note: You may add sauerkraut to this recipe if you like. Just place it in a layer either under or over the cabbage rolls. This may be considered traditional but it is not how my family likes it.
