Grew up eating golumpki. Yes I'm mostly Polish, but always wanted more sauce on them and didn't like the 'mushiness' of the burger inside. This is the version I came up with and hope you enjoy!

1 head green cabbage, cut into bite-size pieces
1 pound ground beef
1 teaspoon salt
1 teaspoon dried parsley
¼ teaspoon onion powder
⅛ teaspoon ground black pepper
2 cups water
1 cup white rice
1 (10.75 ounce) can condensed tomato soup (such as Campbell's®)
1 (32 ounce) container crushed tomatoes (such as Hunt's®)

Steps:

  • Boil cabbage in a stockpot until tender, 10 to 15 minutes. Drain well.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix salt, parsley, onion powder, and black pepper into ground beef.
  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes. Stir tomato soup and crushed tomatoes together in a bowl.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine cabbage, seasoned ground beef, rice, and tomato mixture together in a bowl; transfer to a 9x13-inch baking dish.
  • Bake in the preheated oven until bubbling, about 45 minutes.

Polish Stuffed Cabbage Rolls (Golabki) in Tomato Sauce image

Polish stuffed cabbage rolls are a traditional dish, equally popular as a family dinner idea as well as party food.

1 medium white cabbage
1.1 pounds ground turkey or pork (approx. 7% fat)
¾ cup rice (4.94oz )
1¼ cups water (for boiling the rice)
1 onion (finely chopped)
2 tablespoons vegetable/olive oil
1 teaspoon fine sea salt (plus plenty of pepper)
3 tablespoons tomato passata
2 tablespoons tomato puree
1¼ cups chicken/vegetable stock (hot)

Steps:

  • Prepare the cabbage by cutting out the tough middle bit (see photo above). Place the cabbage in a large pot filled with about 5-6 cm of water (cut end down), cover and bring to boil. Lower the heat and simmer gently for about 10 minutes, covered, until the outer leaves start separating. Remove the cabbage from the pot (use 2 forks and a knife to help the leaves separate) and carefully place the loose leaves on a plate one by one. Put the cabbage back in the pot, continue simmering, then remove a few more leaves. Repeat this process until you've got about 20 leaves.
  • Whilst the cabbage is simmering rinse the rice thoroughly, combine with 1 and ¼ cup of lightly salted water, cover and bring to the boil. Lower the heat and simmer for about 10 minutes, covered, until all the water has been absorbed. Place in a large bowl and set aside to cool completely.
  • In a frying pan heat up the oil, add the onion and cook over a low heat for about 5-6 minutes until softened and golden. Combine with the rice and set aside.
  • Preheat the oven to 350 F/ 180 C/ gas mark 4. Line a large casserole dish with cabbage leaves (the small ones or ones that have torn) and set aside.
  • Using a sharp knife slice off the thick bit running along the length of the cabbage leaf on the outside (see photo). Be careful not to split the leaf. Do this for each leaf.
  • Combine the rice and onion mixture (once cooled) with the meat, about 1 teaspoon of fine sea salt, add plenty of pepper and stir thoroughly.
  • Make a good size oval shaped meatball and place in the leaf. To make a cabbage roll fold in the longer sides, then wrap the filling starting with the thick end of the leaf. Press the mixture in with your fingers as you are rolling and roll as tightly as possible. Place the cabbage rolls one by one in the casserole dish so they are nice and snug, very close together.
  • Make the sauce by combining the hot stock with the passata and tomato paste and stirring thoroughly. Pour this mixture over the cabbage rolls. Cover with a sheet of non-stick paper cut to fit the shape of your dish (or small leaves if there are any left), then cover with a lid or tin foil and bake in the centre of the oven for 1.5 hours. Remove from the oven and enjoy!

1 tablespoon butter
2 large onions (coarsely chopped)
1 medium head cabbage (coarsely chopped or shredded)
2 apples (red-skinned, cored and sliced 1/2-inch thick, peels can be left on, if desired)
2 large potatoes (russet, peels can be left on if desired, parboiled for 5 minutes, save the cooking water, and coarsely chopped)
1 tablespoon seasoning (Vegeta or Maggi )
Pinch black pepper
1 tablespoon caraway seeds (or to taste)
1 pound smoked Polish sausage (skin removed, if desired, cut into 6 pieces and scored diagonally 3 times)

Steps:

  • In a large, Dutch oven or skillet with a lid, sauté onion in butter over medium heat until translucent. Then, without stirring, add cabbage and sprinkle evenly with Vegeta or Maggi seasoning. Add apples, caraway, and pepper without stirring. Top with sausage and 1 cup of the cooking water from potatoes. Cover. When the water begins to boil, reduce heat and simmer 10 minutes.
  • Uncover and mix all ingredients together. Replace cover and simmer 10 minutes more. Remove the cover and test for doneness of the cabbage. If there are too many juices, cook over low heat until reduced. But the pan juices are delicious when sopped up with rye bread.

Polish cabbage rolls (filled with a mixture of rice, pork, and beef) stewed in tomatoes. This is a dish I remember my Gram making. I've taken the recipe and tweaked it as I've cooked. The dish is hearty and delicious--and known by other names throughout Eastern Europe. I've made it for friends who have never had Polish food before, and they loved it with a fervor that surprised me. It may look very time intensive, but it's a meal unto itself and can be frozen or reheated easily. It also helps to split it into two main phases: 1) making the meat filling and freezing the cabbage the night before; 2) assembling the golabki. For Polish food, it's surprisingly easy (this is coming from someone who makes her own pierogi from scratch). Enjoy!

1 head cabbage
2 lbs ground beef (don't use overly lean meat)
1 lb ground pork (or veal if you do not eat pork, don't use overly lean meat)
2 cups cooked rice
2 eggs
4 garlic cloves
1 large onion
2 tablespoons butter
2 tablespoons marjoram
1 teaspoon marjoram
1 tablespoon thyme (or sage)
1 teaspoon salt
1 teaspoon pepper
2 (14 ounce) cans crushed tomatoes
1 (12 ounce) can tomato sauce

Steps:

  • Chop onion.
  • Mince garlic.
  • Saute garlic and onion in 2 T butter over medium heat until onions are caramelized. Remove from heat and let cool to near room temperature.
  • Beat 2 eggs thoroughly with 2 T marjoram, 1 T thyme/sage, salt, and pepper.
  • In bowl, add ground beef, pork (or veal), rice, onion, garlic, and eggs.
  • Mix thoroughly with your hands.
  • Cover and let rest in the fridge. (You can let it sit overnight, it will just let the flavors permeate more.).
  • Core cabbage.
  • Blanche cabbage leaves in boiling water, peeling them off as they become limp. (Alternatively, after coring the cabbage, you can put it in the freezer and after it's frozen, let it thaw and the leaves will be limp--you can just pull them off. **If you choose to freeze, freeze the cabbage the night before and keep in mind it will take a few hours for it to thaw**).
  • Once you've separated all the leaves, take a paring knife and cut off any thick stems preventing the limp leaf from bending/rolling.
  • Put about 2 T of meat filling in the center of each leaf. Fold the sides of the leaf in and roll it up into a little package. Put each golabki seam-down into a casserole dish. (At this point, if you like, you can freeze them and thaw them later. Once thawed, continue with the recipe steps below.).
  • Once you've used up all the cabbage leaves or meat filling, take your cans of tomatoes and pour them over the golabki.
  • Sprinkle the remaining teaspoons of marjoram into the tomato sauce before pouring it over the golabki and tomatoes.
  • Bake covered at 350 for 2 hours.

Golumpki or Gołąbki are Polish cabbage rolls that are stuffed with a mixture of beef, pork, rice, and seasoning. This recipe serves 12 and costs just $11.32 to make or $0.95 per serving!

1 large green cabbage
1 pound lean ground beef
½ pound ground pork
½ small yellow onion (grated)
4 large garlic cloves (grated)
1 teaspoon grated lemon peel (from 1 lemon)
1 large egg (beaten)
2 cups cooked rice
1 Tablespoon extra virgin olive oil
½ small yellow onion (grated)
3 large garlic cloves (grated)
28 ounces crushed tomatoes
½ cup water
1 teaspoon salt
¼ teaspoon black pepper
Chopped fresh dill (optional)

Steps:

  • Remove the stalk from the bottom of the cabbage head.
  • Place the cabbage in a large pot filled with 12 cups of water. Cover and place over high heat.
  • Bring to a boil and then reduce the heat to medium. Continue to cook until the cabbage leaves become bright green and pliable, about 3-5 minutes. The leaves should not be limp, they should hold their shape.
  • Remove cabbage from water and place on a cutting board until it's cool enough to handle.
  • In a large bowl combine ground beef, pork, onion, garlic, grated lemon peel, egg, and rice. Place in refrigerator until ready to use.
  • In a medium pot over medium heat add oil. Once simmering, stir in grated onion and cook, stirring frequently, for 2 minutes. Then, add garlic and cook until fragrant, about 30-60 seconds. Pour in crushed tomatoes, water, salt, and pepper and increase heat to high. Once bubbling, reduce heat to low and simmer tomatoes for 15 minutes.
  • Once the cabbage has cooled, remove the leaves from the cabbage head.
  • Using a paring knife, cut the thick stem or membrane from the back of each leaf. Be careful not to cut through the leaf.
  • Move oven racks to upper-middle and lower-middle positions. Preheat oven to 350 degrees F.
  • You will need a 9x13-inch baking dish and a smaller, 2-quart baking dish for this recipe. Spread ¾ cup of sauce in the bottom of a 9x13-inch dish and ½ cup sauce in the bottom of the 2-quart baking dish.
  • Place 2 tablespoons of filling on the bottom half of a cabbage leaf.
  • Fold up the bottom part of the cabbage leaf.
  • Then, fold in the sides.
  • Next, roll forward until the cabbage leaf completely covers the filling. Repeat with remaining cabbage leaves and filling.
  • Place the stuffed cabbage leaves into prepared pans in neat rows. Pour the remaining sauce evenly over the cabbage rolls.
  • Bake for 50-60 minutes, rotating pans halfway through baking.
  • Place pans on a wire rack and cool for 10 minutes. Sprinkle with chopped fresh dill (optional) and serve.

½ head of cabbage (roughly shredded or chopped (about 8 cups))
2 cups uncooked long grain white rice
1 cup frozen diced onion (or about 1 small onion, finely chopped)
1 lb. extra lean ground turkey breast (ground chicken breast, or extra lean ground beef*)
1 teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
4 ¼ cups condensed tomato soup
2 cups beef broth
1 cup shredded mozzarella cheese
6 slices cooked bacon (chopped)

Steps:

  • Preheat oven to 375F (190C). Spray a large 9 x 13-inch baking dish with cooking spray.
  • Place half of the shredded cabbage in the bottom of the prepared baking dish.
  • Top with half of the uncooked rice, half of the onions, and half of the uncooked meat. You'll want to break the meat up into small pieces with your fingers as you add it to the dish to make sure that it cooks in an even layer.
  • Season with half of the salt, half of the pepper, and half of the garlic powder. Repeat layers once more, starting with the shredded cabbage.
  • Sprinkle top of the casserole with remaining salt, pepper, and garlic powder.
  • In a separate bowl, whisk together condensed tomato soup and beef broth. Pour soup mixture over the top of the casserole.
  • Cover tightly with foil and bake for 45 minutes. Remove foil, stir everything, and cover with foil again. Return dish (covered) to the oven for an additional 15 minutes, or until rice and vegetables are fully cooked and tender.
  • Remove foil. Sprinkle top of casserole with shredded cheese and chopped cooked bacon. Place in the oven uncovered for about 5 more minutes, or just until the cheese melts.

2 pounds ground beef
1 large onion, diced
2 large eggs
2 cup white rice, cooked
salt & pepper, to taste
3 ounces tomato paste
46 ounces V8 tomato juice

Steps:

  • Preheat the oven to 350°F. Spray a 13×9×3-inch baking dish with cooking spray.
  • Bring a large pot of salted water to a boil. Add the thickly shredded cabbage and boil for 5 minutes. Drain and set aside.
  • In a medium saucepan, combine V8 juice and tomato paste, bring to a boil. Reduce heat and simmer for 5 minutes.
  • In a large bowl, mix the ground beef, diced onions, eggs, cooked rice and salt and pepper. *Over mixing will cause the meat to be tough.
  • Place half of the shredded cabbage in the bottom of the prepared baking dish. Pour 2 cups of the tomato sauce over the cabbage.
  • Add the meat mixture to the top of the cabbage and lightly press into place.
  • Add the remaining cabbage to the top of the meat mixture. Reserve 1 cup of the tomato sauce and pour the remaining sauce on top and cover with aluminum foil.
  • Place the baking dish on a cookie sheet and place on the middle rack in a preheated oven.
  • Bake for 90 minutes, remove foil, add the reserved tomato sauce and bake uncovered for an additional 30 minutes. Remove from oven and let sit for 10 minutes before serving.

2 tablespoons olive oil
1 pound kielbasa, sliced, or sausage of your choice
4 tablespoons butter
1 large onion, chopped
1 in large head of cabbage, chopped and divided half
2 cloves garlic, minced
1 cup frozen peas
Salt and fresh ground black pepper to taste

Steps:

  • Cook egg noodles in boiling water for 2 minutes less than the package directions say. Drain and set aside.
  • Brown the sausage slices in olive oil.
