1 cup chicken broth
½ cup grated Parmesan cheese
1 teaspoon ground black pepper
1 dash paprika

Steps:

  • Stir polenta and chicken broth together in a saucepan over medium heat; cook and stir until the polenta is heated through completely, about 5 minutes.
  • Remove pan from heat. Stir Parmesan cheese, black pepper, and paprika with the polenta mixture.

1 cup all-purpose flour
3/4 cup fine yellow polenta or cornmeal
1 1/2 teaspoons freshly ground black pepper
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 stick unsalted butter, at room temperature
1/3 cup granulated sugar
1/2 cup finely grated parmesan cheese (preferably on a Microplane)
1 large egg
3 tablespoons white sanding sugar

Steps:

  • Whisk the flour, polenta, 1 teaspoon pepper, the baking powder and salt in a small bowl.
  • Beat the butter and granulated sugar in a large bowl with a mixer on medium speed until light and fluffy, about 1 minute. Beat in the cheese, then the egg. Mix in the flour mixture until the dough just comes together.
  • Divide the dough between 2 sheets of plastic wrap. Shape each piece into a log and wrap in the plastic. Press the sides of the logs against the counter to form compact square-sided logs, about 7 inches long and 1 inch wide. Freeze the logs until firm, about 45 minutes.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Stir the sanding sugar and remaining 1/2 teaspoon pepper in a small bowl. Trim the ends of the logs. Cut into 1/4-inch-thick slices and arrange 1 inch apart on the prepared pans. Sprinkle with the sugar-pepper mixture.
  • Bake, switching the pans halfway through, until the cookies are crisp and golden on the bottom, 12 to 16 minutes. Let cool completely on the pans.

2 teaspoons minced garlic (2 cloves)
1 cup yellow cornmeal, preferably stone-ground
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan cheese, plus extra for serving
1/4 cup creme fraiche
2 tablespoons (1/4 stick) unsalted butter

Steps:

  • Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.

Steps:

  • In a large saucepan, bring chicken broth and milk to a boil.
  • Gradually whisk in cornmeal.
  • Cover and simmer for approximately 20 minutes until creamy, stirring occasionally to make sure it isn't sticking.
  • Remove from heat and stir in butter and black pepper.
  • Gradually stir in the cheese until melted.
  • Serve immediately.

Nothing fancy or innovative here, well, except for the cippollini onions, but you can substitute yellow onions. Try another type aged cheese such as fontina, asiago, Parmigiano-regianno or a combination of your favorite Italian cheeses. NO pre-grated cheese however! No, No! I used organic San Gennaro polenta in the tube or "chubs" as they call it. This same recipe is printed on the side of the tube, too if you look hard enough. Some day when I have more time, I'll make polenta again from scratch-stir, stir, stir...Until then I'll stick with the tubed variety. 1/2 cup cipollini onion, minced (aka 'cipoline')
1 cup fresh tomato, pureed in blender mixed with 2 tablespoons flour (ok to use canned tomatoes)
2 tablespoons butter
2 tablespoons olive oil
1 garlic clove, minced
1/4 cup dry white wine (I used a white zinf')
salt & pepper
1/2 cup chicken broth or 1/2 cup vegetable broth
3 tablespoons heavy cream
1/2 cup grated parmesan cheese, not pre-grated
3 tablespoons fresh basil, cut into ribbons (NOT dried basil!)

Steps:

  • Sauté onions in butter and olive oil over medium heat. Add garlic. Cook 1 minute but do not burn.
  • Whisk in wine, tomato puree and chicken broth (or vegetable broth). Whisk well to break up any lumps from the flour. Simmer 5 minutes.
  • Remove from heat and stir in cream; add salt and pepper to taste.
  • Arrange ½" thick slices of the polenta in a lightly oiled baking dish. You should have about 12 slices.
  • Spoon tomato sauce over polenta slices and sprinkle with Parmesan.
  • Bake at 350° for 15-20 minutes.

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the cornmeal, butter, and salt along with 4 cups of water in an ovenproof casserole dish and stir to mix well. (The butter will melt as it cooks)
  • Bake for 45 minutes, then stir well, and bake another 10 to 15 minutes or until creamy and smooth.
  • Remove from the heat and stir in the cheese.
  • Let stand 5 minutes to slightly firm, then serve as desired.

2 cups cornmeal
8 cups boiling water
2 teaspoons salt
5 1/2-6 ounces unsalted butter
5 ounces parmesan cheese, grated
1 pinch nutmeg

Steps:

  • Gradually add cornmeal to the salted boiling water, stirring frequently so there are no lumps.
  • When it comes to a boil reduce heat to medium, cook stirring frequently for 40 minutes.
  • Stir in 5 oz of butter, 4oz grated parmesan and nutmeg.
  • Pour polenta in an oven-proof pan cover with waxed paper and set aside to cool.
  • Heat oven to 400°F.
  • Dot with remaining butter and parmesan.
  • Bake for 30 minutes until top is brown and crispy.

1-ounce organic butter
2 shallots, thinly sliced
1 clove garlic, thinly sliced
2 ounces fresh peas
2 ounces sliced salami, coarsely chopped
Black pepper and Celtic sea salt
16 ounces water
4 ounces white cornmeal
2 ounces grated Parmigiano-Reggiano
1-ounce organic butter
Black pepper and Celtic sea salt

Steps:

  • Saute about 1/4 of the mushrooms in butter over high heat until browned. Add shallots, reduce heat to keep from burning, and continue sauteing until soft. Add garlic and saute for 1 minute more. Add peas and salami, and season, to taste, with salt and pepper. Set aside in a sealed plastic container to keep warm. Reserve pot for polenta.
  • Polenta: Bring water to a boil, then slowly stir in cornmeal with a fork. Reduce heat as low as possible. Continue to cook for 5 to 10 minutes, stirring often. Turn heat off and add cheese and butter, and season, to taste, with salt and pepper. Top with ragout and serve.

3 cups chicken stock, veal stock or 3 cups water
2 teaspoons fresh rosemary, finly chopped (optional)
1 cup yellow cornmeal
3/4 cup parmesan cheese, shredded
2 tablespoons olive oil (use olive oil with stock and butter with water) or 2 tablespoons butter (use olive oil with stock and butter with water)

Steps:

  • Bring stock or water (pinch of salt if using water) to boiling in a 2 quart sauce pan. Add rosemary if using. Slowly whisk in the cornmeal to the boiling stock / water, whisking constantly. Cook and whisk until mixture returns to boiling. Reduce heat to very low. Cover and simmer for 15 minutes, stirring occasionally. Add Parmesan cheese and olive oil / butter.
  • Pour into a greased 8x4x2-inch loaf pan. Cool 1 hour. Cover and chill several hours or over night. Polenta may be kept in the refrigerator for up to 3 days before serving. To serve, remove polenta from pan and cut into 1/2-inch-thick slices.
  • **To bake, place slices in a single layer on a greased baking sheet. Bake, covered, in a 400 degree F oven for 10 to 12 minutes or until heated through.
  • **To fry, heat 2 teaspoons olive oil in a large nonstick skillet or on a griddle over medium heat. Add polenta slices and cook about 6 minutes or until golden brown, turning once during cooking time.
  • **To toast, lightly brush slices with olive oil and arrange on a lightly oiled baking sheet. Place under broiler, 4 to 5 inches away from the heat source, for 4 to 5 minutes per side or until golden brown and crisp.

Steps:

  • Gather the ingredients.
  • In a saucier or saucepan , combine water and milk. Bring to a simmer over medium-low heat. When it simmers, sprinkle the polenta gradually into the pot, stirring briskly with a whisk to prevent lumps from forming. Add a pinch of salt, and continue simmering over medium-low heat, stirring frequently with a whisk.
  • Cook for about 20 minutes, until polenta does not have a gritty mouthfeel when tasted. Stir in 1/4 cup ricotta cheese and Parmesan cheese, and stir with a whisk or wooden spoon until cheese is melted.
