CHILLED POACHED SALMON WITH ASIAN SLAW AND WASABI AIOLI



Chilled Poached Salmon with Asian Slaw and Wasabi Aioli image

6 (4-ounce) czar-cut salmon fillets
Salt and freshly ground black pepper
1 cup sake
2 shallot cloves, minced
2 garlic cloves, lightly crushed with the side of a knife blade and minced
1 tablespoon toasted sesame seeds
1 tablespoon minced fresh cilantro leaves
1 cup sesame oil
1/2 head napa cabbage, sliced chiffonade
1/4 cup dried seaweed
1 pint bean sprouts
1 (6-ounce) can bamboo shoots, drained, rinsed and cut chiffonade
2 leeks, white and tender green parts only, soaked in salt water to remove grit, and very thinly sliced
1 lime, juiced
1 orange, juiced
Freshly ground black pepper
1/3 cup mayonnaise
1 teaspoon wasabi powder
1/2 teaspoon garlic powder
1 teaspoon fresh lime juice

Steps:

  • Marinate salmon: Season salmon with salt and pepper and place in a nonreactive container. Combine sake, shallot, garlic, sesame seed, and cilantro and pour over fish. Cover and marinate for 2 hours in the refrigerator.
  • Make Asian slaw: Combine cabbage, seaweed, bean sprouts, bamboo shoots, leeks, lime juice, and orange juice in a nonreactive bowl and season with black pepper. Cover and refrigerate for 1 hour.
  • Prepare wasabi aioli by combining mayonnaise, wasabi powder, garlic powder, and lime juice and chill.
  • Heat sesame oil over low heat and poach salmon fillets until fish is just opaque. Drain on paper towels and bring to room temperature.
  • Arrange a bed of Asian slaw on serving plate, top with poached salmon and spoon a quenelle of wasabi aioli on fish.

SAFFRON AIOLI

Since this aioli will keep in the fridge for several days, it is good to have around when you plan on eating fried food. I also like it with very simply poached meats, especially any breast from an upland game bird: turkey, pheasant, partridge, etc. It also works well with chicken or any white fish.

1 or 2 minced garlic cloves
1 or 2 egg yolks
2 teaspoons lemon juice or white wine vinegar
1/2 teaspoon salt
2 tablespoons hot water
Large pinch of saffron threads
3/4 cup olive oil

Steps:

  • Crumble the saffron threads into the hot water in a small bowl. Let them steep 10 minutes.
  • In the bowl of a blender, briefly buzz the garlic, lemon juice, salt and egg yolks to combine. Add the saffron and the water and buzz until smooth.
  • With the motor running, drizzle in the olive oil until the whole thing emulsifies into a mayonnaise-like consistency. Taste for salt and acid, adding a little lemon juice and salt if needed.
  • Serve the aioli cold. It should last in the fridge for several days.

2 lbs salmon fillets (skin off and bones removed)
2 cups white wine, for poaching
1 head garlic, roasted
1 tablespoon Dijon mustard
1 egg yolk
1 tablespoon white wine vinegar
1 1/2 cups light olive oil
1 nice pinch saffron threads infused in 1 tablespoon warm water
1 pinch salt
fresh ground white pepper
6 -8 cups mixed salad greens
1/2 red onion, sliced thinly
olive oil, as needed
fresh lemon juice, just a squeeze
salt & freshly ground black pepper

Steps:

  • Use a pot big enough to hold the salmon and add enough water to cover the fish. Add the white wine and heat the mixture until vapors rise from its surface, but not to a boil. Slip the fish into the liquid and cook until done. Salmon is done when there is the first sign of a white substance forming on the surface of the fish. Remove the fish from the liquid, and let cool to room temperature; then cover and refrigerate.
  • To make the aioli, roast the garlic head in a 350-degree oven until soft- about 45 minutes. Squeeze the pulp from the roasted garlic into a food processor. Add mustard, egg and vinegar. With the motor running slowly, add the oil 1 drop at a time and then in a gentle stream once an emulsion has started. When the oil is used up, add the saffron infusion and season with salt and pepper. If the aioli is too thick, add more water.
  • Dress the greens and onion in olive oil to coat, adding a squeeze of lemon juice to taste. Season with salt and pepper. Serve the fish on top of the greens on a platter and serve the aioli on the side. .

1/8 teaspoon crumbled saffron threads
1 tablespoon hot water
1 garlic clove, chopped
1 teaspoon finely grated fresh orange zest
1/4 cup fresh orange juice
1 tablespoon fresh lemon juice
3/4 teaspoon salt
1/4 teaspoon black pepper
1 large egg yolk
3/4 cup olive oil

Steps:

  • Stir together saffron and water in a small bowl until saffron begins to dissolve (threads will still be intact). Transfer saffron mixture to a food processor along with remaining ingredients except oil, then pulse until combined. With motor running, add oil in a thin, steady stream until aïoli is thickened and emulsified. Transfer to a bowl and chill, covered, until ready to use.

SAFFRON AIOLI

Saffron aioli can elevate even the most basic of dishes. Serve this alongside roasted potatoes for a deliciously flavorful side.

Number Of Ingredients 7

Pinch of saffron
1 tablespoon warm water
3 small garlic cloves
Coarse salt
1/2 teaspoon Dijon mustard
2 large egg yolks
1 cup extra-virgin olive oil

Steps:

  • Place saffron in a small bowl with water; set aside.
  • Use a mortar and pestle to mash garlic and a pinch of salt to a fine paste. Add mustard and incorporate. Add egg yolks and mix well. Add saffron-water mixture and stir to incorporate. Slowly add half the oil, drop by drop at first, and then in a slow steady stream, while mixing with the pestle. (Thin with about a tablespoon of warm water if mixture is too thick.) Continue incorporating oil until all of it is absorbed. Thin with additional water if needed, and season with salt to taste.

1/4 cup red wine vinegar
1 tablespoon honey
1 pinch saffron thread
1 cup mayonnaise
2 cloves garlic, minced
2 lbs asparagus, trimmed
3 tablespoons olive oil
1 small red bell pepper, finely chopped

Steps:

  • For Aioli: Whisk vinegar, honey, and saffron threads in heavy small saucepan over medium-high heat.
  • Bring to a boil and remove from heat.
  • Cool completely.
  • Mix mayonnaise and garlic in medium bowl to blend.
  • Mix in cooled vinegar mixture.
  • Season aioli to taste with salt and pepper.
  • (Can be made 1 day ahead. Cover and refrigerate.).
  • For Asparagus: Prepare barbecue (medium-high heat.) Toss asparagus with oil on rimmed baking sheet.
  • Sprinkle with salt and pepper.
  • Grill asparagus until crisp-tender, turning occasionally, about 5 minutes.
  • Transfer to platter.
  • Drizzle aioli over asparagus.
  • Sprinkle with bell pepper.

  • Make the aïoli: Combine lemon juice and saffron in a small bowl. Let stand 15 minutes. Using flat side of a knife, mash garlic to a paste with 1/2 teaspoon salt on a cutting board. Place lemon juice mixture, garlic paste, remaining 1 teaspoon salt, Dijon, and egg yolks in the bowl of a food processor. With machine running, slowly drizzle canola oil and olive oil, alternating with splashes of cold water, into food processor until all oil is added. Spoon aïoli into a bowl and chill until ready to serve.
  • Make the vegetables and shrimp: In a large pot, bring 6 quarts of water, 2 tablespoons salt, and potatoes to a boil over moderately high heat. Reduce heat and simmer until potatoes are tender, about 20 minutes. Remove potatoes with a mesh skimmer and cool on a baking sheet.
  • Increase heat to high and add remaining 2 tablespoons salt. When water is rapidly boiling, add asparagus and haricots verts, and cook until bright green and crisp-tender, about 3 minutes. Remove with a mesh skimmer to a bowl of ice water. Let stand until cool; drain.
  • Add wine to water in pot and return to a boil. Add shrimp and cook until just opaque, 3 to 4 minutes. Remove with a mesh skimmer and rinse shrimp under cold water.
