POACHED RHUBARB AND ASPARAGUS SALAD

- Place a large saucepan of heavily salted water over high heat. In another large saucepan, combine sugar with 3/4 cup water. Place over medium-low heat, and stir until sugar is dissolved. Add wine, rhubarb juice or grenadine, and peppercorns.
- Bring to a simmer, and add rhubarb. Simmer until rhubarb is cooked through but not soft, about 5 minutes. Drain, rinse to remove peppercorns, and drain again.
- Fill a bowl with ice water. Place asparagus in boiling salted water, and blanch until bright green and barely tender, 1 to 2 minutes. Immediately transfer asparagus to ice water. When asparagus is chilled, drain well, and refrigerate.
- In a small bowl, whisk together lemon juice and mustard. Whisk in olive oil to make a smooth vinaigrette.
- Place salad greens and herb mixture in a large serving bowl. Season to taste with salt and pepper. Slice rhubarb vertically into long, thin strips, and set aside. Slice each asparagus stalk into 3-inch pieces, and set aside. To serve, arrange alternating pieces of asparagus and rhubarb to make a rectangle on each of four plates. Place mound of greens near rectangle, and drizzle a small amount of vinaigrette over asparagus and rhubarb.

ROASTED RHUBARB

- Heat oven to 200C/fan 180C/gas 6. Rinse the rhubarb and shake off the excess water. Trim the ends and cut the rhubarb into little finger-sized pieces. Put the rhubarb in a shallow dish or baking sheet with sides, tip the sugar over, toss together, then shuffle the rhubarb so it's in a single layer.
- Cover with foil and roast for 15 mins. Remove the foil. The sugar should have dissolved, so give everything a little shake and roast for another 5 mins or until tender and the juices are syrupy. Test with a sharp knife; the rhubarb should feel tender, not mushy, and still have kept its shape.

- Bring a large pot of generously salted water to a boil. Add peas, and cook until tender but still slightly firm, about 2 minutes. Using a slotted spoon, remove peas to a strainer and cool under cold running water. Let dry. Bring water back to a boil. Add asparagus, and cook until tender but still slightly crisp, about 4 minutes. Drain, and cool under cold running water. Dry on a dish towel, then slice into 3/4-inch pieces (there should be about 1 cup). Set aside.
- In a small bowl, whisk together garlic chives, vinegar, mustard, large pinch salt and pepper. Slowly whisk in oil until emulsified. Taste and adjust seasoning; it should be highly seasoned.
- In a large serving bowl, combine arugula, lollo rosso, peas, asparagus, tarragon and daikon radish. Pour about half the dressing on top, and toss to coat vegetables, adding more dressing if necessary. Let sit for 15 minutes. Taste, and adjust seasoning once more before serving.

ASPARAGUS SALAD WITH A RUNNY POACHED EGG

- Pour the olive oil and vinegar into a small bowl, mix well and add the beetroot. Divide the mixed leaves and cucumber between 2 plates.
- Blanch the asparagus in a pan of simmering water for 2 mins, then remove and set aside. Crack the eggs into the pan and simmer gently for 3 mins until the whites are cooked and the yolks are just beginning to set, but still runny. Remove with a slotted spoon and drain on kitchen paper.
- Meanwhile, add the beetroot to the salad plates, pour over the dressing and lightly toss together. Top each plate with asparagus and a poached egg to serve.

- 1. To make the egg sauce, bring a pot of water to the boil and add eggs. Maintain at a gentle simmer and cook for six minutes. Remove eggs and plunge into ice water. When cool, peel and mash in a bowl with the mustard. Gradually whisk in the oil and when incorporated, stir in the remaining ingredients. Season and place in the fridge until ready to use.
- 2. Trim the woody ends from the asparagus and drop spears into a pot of boiling salted water. Cook for two minutes until barely cooked through. Refresh in ice water, drain and leave to dry on a tea towel for a few minutes before dressing in almond oil and a pinch of salt.
- 3. To serve, spoon half the egg sauce onto a platter. Arrange the asparagus on top and spoon remaining sauce over the spears. Scatter the leaves over the dish and serve immediately.
- For a Sunday spring lunch, serve with my roast chicken and garlic, lemon and parsley salad and poached rhubarb, yoghurt and rose granita with raspberries.

- 1. Bring the sugar, juice, water, zest, vanilla bean and seeds to a simmer in a saucepan. Add rhubarb and stir gently over a high heat for 20 seconds. Cover with a tight-fitting lid, turn the heat off and leave the rhubarb to continue cooking in the residual heat. After half an hour place the pan in the fridge to cool completely.
- 2. When cold carefully lift out the tender rhubarb pieces with a slotted spoon and place on a plate. Return the rhubarb to the fridge until ready to use.
- 3. To make the rose granita, strain the rhubarb poaching liquid and add rosewater. Taste and add a few more drops if needed. Pour the liquid into an enamel baking dish and place in the freezer to freeze overnight.
- 4. Take the frozen syrup out of the freezer and scrape with a fork to create fine crystals. Continue until the granita is mostly shaved to a fine powder without any lumps. Return to the freezer while you finish preparing dessert. (This can be done a few hours ahead.)

- Place the lentils and water in a pot, cover and bring to a boil. Reduce to a simmer and cook for around 20 minutes until the lentils are just tender and have absorbed most of the water. Drain off any leftover water and set aside to cool.
- As the lentils are cooking, prepare the rest of the salad. Slice the cucumber, halve the tomatoes (or quarter, if larger) and cut the avocado into small bite-sized pieces.
- Bring a medium-sized pot of water to a simmer and cook the asparagus for around 2 minutes to gently cook, then remove the asparagus and run under cold water or place in a bowl of cold water to preserve color and stop cooking. Don't discard the water.
- Trim the skin and any fatty or dark areas from the salmon. Cut to even thickness pieces, as far as possible.

- Using a vegetable peeler, shave the asparagus and the peeled cucumber into thin strips. Transfer to a large bowl and add a bit of salt. Let stand for 5 minutes before straining the liquid.
- In a small jar whisk together peanut butter, sesame oil, soy sauce, lemon juice and maple syrup. Add a little water to make the dressing pourable.
- In a medium-sized saucepan, bring water to a boil. Beat an egg into a small ceramic or metal ramekin and place it in the water. Cook for 3 minutes, remove from water and use a tablespoon or a spatula to get the egg out. Done!*
- Strain the liquid from the asparagus cucumber mixture and stir in half of the peanut dressing. Divide into 4 bowls and top each bowl with 1/4 sliced avocado and a poached egg.
