EGGS AND BACON PANCAKES

Eggs and Bacon Pancakes image

Pancakes serve up a helping of bacon and eggs for a filling breakfast that can be on the table in only 30 minutes.

Categories     Breakfast

Time 30m

Yield 4

Number Of Ingredients 6

1 lb sliced bacon
2 cups Original Bisquick™ Mix
1 cup milk
6 eggs
Salt and pepper to taste
Real maple or maple-flavored syrup

Steps:

  • Cut bacon slices into 1/2-inch pieces. Cook in skillet or microwave until desired crispness is reached.
  • Meanwhile, heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
  • In medium bowl, stir together Bisquick® mix, milk and 2 of the eggs until well blended. Stir three-fourths of the cooked bacon into batter.
  • For each pancake, pour about 1/3 cup batter onto hot griddle. Cook until bubbles break on surface and edges just begin to dry. Turn; cook until golden brown.
  • While pancakes are cooking, in 8- to 10-inch skillet, cook remaining 4 eggs and remaining one-fourth of the cooked bacon over medium heat until scrambled. Add salt and pepper to taste.
  • Remove pancakes from griddle. Using biscuit cutter or round cookie cutter, cut a circle in center of every other pancake. Stack cut pancake over whole pancake on serving plate. Fill hole with eggs and bacon. Serve warm with syrup.

Categories     Pancake Recipes

Number Of Ingredients 14

1/2 cup all-purpose flour
1/3 cup whole-wheat flour
5 teaspoons sugar
1 1/2 teaspoons baking powder
Coarse salt
3/4 cup nonfat buttermilk
3 large eggs
1/2 teaspoon pure vanilla extract
1 1/2 teaspoons butter melted, plus 1 teaspoon for skillet
1 tablespoon plus 1 teaspoon vegetable oil
1/2 cup pecans, toasted and coarsely chopped (about 2 ounces)
6 strips thick-cut bacon
Pure maple syrup, warmed, for serving
Toasted Glazed Pecans, for garnish

Steps:

  • Preheat oven to 200 degrees. Whisk flours, sugar, baking powder, and 1/4 teaspoon salt in a large bowl; set aside. Whisk together buttermilk, 1 egg, vanilla, melted butter, and 1 tablespoon oil; whisk into flour mixture. Using a rubber spatula, fold in chopped pecans; set batter aside.
  • Cook bacon in a medium skillet over medium heat, turning once, until crisp, 7 minutes per side. Let drain on paper towels. Transfer bacon to a baking sheet in oven to keep warm.
  • Heat 1 teaspoon butter and remaining teaspoon oil in a medium nonstick skillet over medium heat. Working in batches of 2, pour in 1/4 cup batter for each pancake. Cook until small bubbles form, 2 1/2 to 3 minutes. Flip; cook until golden brown, about 2 minutes. Transfer to baking sheet in oven to keep warm.
  • Fill a small, high-sided skillet with 1 1/2 inches water; heat over medium heat until barely simmering. Break remaining eggs into separate cups; pour eggs into water. Cook, basting tops of eggs with the simmering water, until set, 2 to 3 minutes. Using a slotted spoon, transfer eggs to a paper towel to drain.
  • Place 2 pancakes on each plate; drizzle with warm syrup. Arrange bacon over pancakes, and place poached egg on top. Drizzle with more syrup, if desired, and a sprinkle of salt. Garnish with toasted glazed pecans.

SKILLET POACHED EGGS

Skillet Poached Eggs image

There's a little trick here that makes poaching eggs easy and prevents them from spreading into flat, floppy disks: rolling the eggs in the boiling water in their shells before cracking them into the pan. This technique helps them maintain their shape when they're cracked into the boiling water. Because the whites don't spread, six eggs can fit in a skillet comfortably without running into one another, and you can serve a crowd with little effort. You can use this move to poach fewer eggs, too, of course. No matter how many you cook, you'll end up with silky eggs for toast, a breakfast sandwich or as an accompaniment to bacon, sausage, waffles or pancakes.

Time 10m

Yield 2 to 6 servings

Number Of Ingredients 5

2 to 6 large eggs
1 teaspoon distilled white vinegar
Butter and toast, for serving
Ham and cheese, for serving (optional)
Salt and pepper, for serving

Steps:

  • Fill a large skillet, ideally one with straight, tall sides, with water to a depth of 1 1/2 inches. Bring to a boil over medium-high heat. Using a slotted spoon, carefully place the whole, uncracked eggs in the water and roll them around for 15 to 20 seconds, so they're evenly warm. Take them out of the skillet. Add the vinegar to the boiling water.
  • Crack the eggs into the boiling water one at a time, spacing them apart (if they're too hot to the touch, wait a few seconds until they feel OK to handle). Adjust the heat to keep the water steadily and lightly boiling. Let the eggs poach until the whites are opaque and firm, and the yolks are set to your desired doneness, 3 to 6 minutes. Gently nudge the yolk with the spoon to check for doneness: Very runny yolks will wobble like a water balloon; standard runny yolks will feel soft but set; firm yolks will feel solid.
  • Transfer to paper towels with the slotted spoon and gently pat dry. Butter toast and layer with ham and cheese, if using. Place poached eggs on top, season with salt and pepper, and top with another pat of butter, if you like.

BRIE-STUFFED PANCAKES WITH CRISPY BACON

Brie-stuffed pancakes with crispy bacon image

Enjoy our fluffy American-style pancakes with an oozing cheese filling and crispy bacon topping. They're great for Pancake Day or a weekend brunch

Provided by Liberty Mendez

Categories     Brunch

Time 40m

Yield Serves 5 (2 pancakes per serving)

Number Of Ingredients 10

10 smoked streaky bacon rashers
300g self-raising flour
1 tsp baking powder
pinch of caster sugar
2 medium eggs, lightly beaten
300ml semi-skimmed milk
2 tbsp sunflower oil
25g salted butter, plus extra to serve
150g brie, thinly sliced
50g grated cheddar

Steps:

  • Heat the grill to high and grill the bacon for 5 mins until crisp, turning halfway through. Set aside and keep warm. Tip the flour, baking powder, sugar and a large pinch of salt into a large bowl, then gradually whisk in the eggs and milk until you have a smooth, thick batter.
  • Heat a splash of the oil and small knob of the butter in a non-stick frying pan over a medium heat until sizzling. Spoon in 1 tbsp of the batter and spread out to a rough 10cm circle with the back of the spoon. Top with a few slices of the brie, a pinch of the grated cheddar, and 1½ tbsp more of the pancake batter - the batter should cover all the cheese. Don't worry if the batter starts to spread - you can shape it by pushing the cheese back toward the centre using a spatula. Cook for 2-3 mins until bubbles start to form on the surface, then carefully flip and cook for 2 mins more. Keep warm while repeating the process with the rest of the oil, butter, batter and cheese. Serve topped with some salted butter and the crispy bacon.
