POACHED EGGS WITH CHIPOTLE DRESSING AND AVOCADO RELISH AND ANDOUILLE HOLLANDAISE

Steps:
- In a deep saucepan (at least 6 to 8 inches deep), bring water, vinegar and salt to a gentle simmer. Crack 1 egg and drop it into the water right above where the bubbles are coming up. Then, using a chopstick, try to swirl the water around the egg to help shape it. Drop another egg in, always onto the bubbles. Try not to do more than 4 eggs at the same time. Poach for 3 to 5 minutes, or until cooked to desired doneness of poached eggs. Remove carefully with a slotted spoon to a clean towel to soak up the excess water.
- To serve, top each poached egg with a ring of Avocado Relish and pour Andouille Hollandaise around egg.
- Place all ingredients in a medium mixing bowl and carefully fold together with a rubber spatula or wooden spoon. Toss with some of the Chipotle Dressing, and season, to taste, with salt and pepper. Set aside for serving with the poached eggs.
- Place the first 7 ingredients in a blender and blend on high for 1 minute. With the blender running, slowly drizzle in oil, and blend until emulsified. Reserve until needed.
- In a medium saute pan over medium heat, add 2 ounces butter. Add shallots and cook for 2 minutes. Add seasonings and cook for 2 more minutes. Add sausage and cook for 3 to 5 minutes or until golden brown; drain any fat and set aside.
- In a small saucepan, combine peppercorns, bay leaf, wine, vermouth, and vinegar and reduce over high heat until 1/4 cup remains. Strain mixture through a fine strainer into a medium-sized stainless steel bowl. Add egg yolks to bowl and place over a warm water bath; beat mixture until thick and mixture holds a ribbon for 7 seconds. Turn heat off and slowly whisk in the remaining butter. Add sausage mixture, and season, to taste, with the lemon juice, hot sauce, Worcestershire, salt, and pepper.
POACHED EGGS IN CHILE BROTH
Steps:
- In blender place tomatoes and 1 cup chicken stock. Puree until smooth. Reserve. In large skillet heat olive oil over medium-high heat. Add onions and saute with salt and pepper until golden brown, about 10 - 12 minutes. Add garlic and cook for a few minutes. Add red peppers, poblanos, tomato puree and remaining stock. Bring to a boil then reduce to a simmer and cook for 5 minutes. Poach eggs in broth and cook 4 -6 minutes, basting the tops occasionally with hot broth. With slotted spoon remove eggs and place in soup bowl. Ladle broth over eggs and garnish with grated cheese and sour cream.

I just whipped this up and thought it turned out quite delicious. It is a healthy, filling breakfast option that I know I will make again and again. Plus, it's so easy!

- In a small saucepan, heat olive oil over medium heat.
- Add onion. Saute 1-2 minutes or until soft.
- Add beans, green chilies, chicken stock, garlic powder, cumin, and pepper-stir until combined.
- With a potato masher, mash the mixture until most of the beans are in pieces. Its okay to leave them chunky, but mashing them helps make the beans thicker in the end.
- Once mashed, bring bean mixture to a boil, then reduce heat to medium-low.
- Simmer, stirring every 3-5 minutes, about 20-25 minutes, or until they are the consistency that you desire.
- The beans will thicken a bit after cooling, so keep this in mind.
- Top each portion of beans with an egg, and enjoy!
- You may also serve this with cheese, avacado, and/or tortillas.
- Delicious!
- Note: Fresh garlic can be used in place of garlic powder.

Steps:
- Combine and simmer all ingredients except eggs and tortillas in a frying pan. Cook until onions and peppers are tender and sauce has thickened.
- Warm tortillas and 4 plates, keep warm.
- Break an egg in small bowl, stir small circle in sauce and slip the egg in this spot. Repeat with remainder of eggs.
- Place egg on each tortilla and cover with sauce.
- Variations include cheese as a garnish, 1/2lb of cooked chorizo, or sliced avocado as a garnish.
