Don't know what to do with all that leftover ham from Easter? Try this fast and easy ham salad with tangy mustard and crunchy celery. Enjoy it in a sandwich or just on its own.

Number Of Ingredients 6

1/2 cup mayonnaise, plus more if needed
2 tablespoons whole-grain mustard
1 pound leftover baked ham, cut into 1-inch chunks
1 1/4 cups drained bread-and-butter pickle chips and 1 tablespoon pickle juice, plus more if needed
2 inner ribs celery, finely chopped, plus 2 tablespoons coarsely chopped leaves from the inner ribs
1/2 small red onion, finely chopped

Steps:

  • Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.

  • Mix first 8 ingredients. Stir in ham. Refrigerate, covered, until serving., Stir in pecans before serving. If desired, serve on buns.

I have been making this salad for years and recently traveled from NJ to Oklahoma to make a batch for one of my friends. I have also Overnighted this salad to a friend in Dallas who simply loves it. Of course, I pack it in dry ice. It's fast, simple and great for a cocktail party on party rye, on toast or a bagel for breakfast, on rye with lettuce, thinly sliced onions and dill (or sweet)pickles and mayo for lunch or with pea soup and sandwich for dinner. It's down right Yummy!!! And make no changes to the ingredients because the salad will not taste the same.

1 ½ pounds cooked ham, chopped
¾ cup mayonnaise, or as needed
⅓ cup dried minced onion
⅓ cup dill pickle relish
¼ cup brown mustard

Steps:

  • Process the ham in a food processor until finely chopped but not pasty, about 6 or 7 pulses. You may need to do this in batches. Place the finely chopped ham in a large bowl and continue processing the remaining ham.
  • Add the mayonnaise, onions, relish, and mustard to the processed ham. Mix well and, if the mixture is too dry, add more mayonnaise. Refrigerate until serving. The dried onions absorb some of the moisture from the mayonnaise and relish so you may need to add more mayonnaise before serving.

  • Add ham to a food processor and pulse until it is in small pieces but not a paste, more like crumbs.
  • Add all the ingredients together in a large bowl and stir well.

When I was growing up, my Grandmother would make wonderful things on a very tight budget. A really great cook can take the cheapest ingredients and make astonishing things with them. I never knew she was using Bologna for this Ham Salad until I was older. I make this now for a group of friends and they call often to let me know they need more.

3 package(s) chicken-pork bologna
1~1 1/2 cup(s) real mayonaise
2 tablespoon(s) yellow mustard
1/2 bottle(s) sweet pickles
1 small white onion, diced (optional)
2 small jalapeno peppers, chopped (optional)

Steps:

  • You'll need a grinder for this. The old crank type or electric, it you have one. Grind the Bologna through a coarse grind plate.
  • Grind the Sweet Pickles into the ground Bologna, adding some of the juice to make moist. (You certainly can use Sweet Pickle Relish if you like) I've also used "Bread n' Butter" pickles when I was out of Sweet.
  • My figures for the Mayo, Mustard etc. are approximate as I make a much larger batch and do it all by sight and taste. Mix the Mayo in first, then Mustard.
  • I don't add the diced onion, because although it adds texture and taste, you can't hold this long w/ raw onion in it. Instead, I use a Jalapeno Relish that has pickled onion in it. It's available at Mexgrocer.com I add this after finishing for those whom desire a little kick, leave the main batch without.
  • When it's all mixed and to your taste, pack in clean jars or Tupperware. It'll hold in the refrigerator for two weeks and better. If it begins to get a bit dry, just mix a little more Mayo into it.
  • This is great on sandwiches and also works well as a canape or cracker topper, just sprinkle a little Paprika on it to look pretty.
  • My first time to post anything here, so I hope I've been clear and haven't broached any protocols...LOL

I learned how to make this from a sweet woman Margorie Siem, of McAllen, Texas. She has since passed on, but she generously passed along her wonderful recipes to me and others in our American Legion Auxiliary in McAllen. Marge was a gem of a lady and could she cook!!! I was blessed that she passed to me many of her best dishes! If you are making sandwiches for a group of people, this recipe is a MUST HAVE! It's like a "faux" ham salad, tasting like a deviled ham spread. It's delicious and so easy to make! This has fed many a hungry person at our American Legion Conventions!

2 pound(s) deli bologna (buy in bulk from the butcher-get the least expensive one!)
3/4 cup(s) salad dressing (like miracle whip, but try to find the least expensive brand. they are just as good!) can use more if needed.
2/3 cup(s) finely minced celery
2/3 cup(s) finely minced sweet onion
1/2 cup(s) sweet pickle relish (may use more--to your taste)
1 small jar chopped, drained pimientos (optional...that's my own addition... wasn't marge's idea.)

Steps:

  • Remove the red plastic sheath from around the bologna. Run through a chopper or food processor. Don't process it too much, just enough to make it a salad or spread-type consistency. Run the celery and onion through the chopper as well to achieve a fine minced consistency.
  • Add salad dressing and the rest of the ingredients. Mix together very well to blend the flavors. Refrigerate in a plastic container with a tight fitting lid until you are ready to use it. (If you refrigerate it overnight before using it, it will taste even better!!)
  • This makes a lot of sandwiches for an occasion or for your own use at home. It really does taste like a deviled ham spread, but is made with bologna! And the cost per serving is nominal, as opposed to buying a prepared ham spread! Bon Apetit' Y'all!
