This is the only fruitcake I'll eat. Grandma stopped making this a few years ago when she became too frail and I recently started making it for the family in her place. For me and my family, this is a taste of christmas! Don't forget to save cherries and nuts for the tops of your loaves, it makes it really pretty and festive. You can use green cherries if you want. This recipe originally called for 3 pounds of unshelled brazil nuts

Number Of Ingredients 6

1 lb graham cracker, finely crushed
1 lb candied red cherries
1 lb raisins
1 lb brazil nut, shelled
3/4 cup milk, scalded
1 lb small marshmallow

Steps:

  • Crush graham crackers and mix with raisins and cherries.
  • Add brazil nuts.
  • Scald milk in double boiler and add in marshmallows.
  • Stir until melted.
  • Remove from heat.
  • Add cracker mixture to hot marshmallow mixture and blend thoroughly.
  • Line loaf pans with wax paper or foil.
  • Spoon in mixture, press down firmly.
  • Decorate top with reserved cherries and brazil nuts.
  • Age 1 month in fridge.
  • Wrap cake in foil to keep moist.
  • This freezes very well after the initial aging of cake.
  • If you're lucky, like I am, you can find shelled brazil nuts at a health food store. I find mine at an amish grocery store.

Not your typical fruit cake! We eat this one down South (Florida) and Granmama finally let me have the recipe. No baking, no aging and none of that "whatsit?" fruit!

1 lb graham cracker
1 lb raisins
1/2 lb pecans
1 (16 ounce) jar maraschino cherries
24 big marshmallows
1 (14 ounce) can condensed milk

Steps:

  • Crush the graham crackers into fine crumbs.
  • Granmama's recipe calls for "puffed" raisins. To puff them, soak in hot water for 30 minutes.
  • Chop the nuts; drain and cut cherries in half (if they are whole).
  • Melt marshmallows in milk.
  • Mix all ingredients together.
  • Pack into regular sized loaf pan.
  • Refrigerated overnight and cut with a hot knife.
  • Coconut is an optional ingredient.
  • Cook time is refrigeration time.

14 ounces sweetened condensed milk
16 ounces miniature marshmallows
16 ounces graham crackers, crushed to crumbs
4 cups chopped pecans
1 (3 1/2 ounce) can flaked coconut (1 1/3 cups)
2 (8 ounce) packages chopped dates
16 ounces maraschino cherries, well drained, halved
1/2 cup Bourbon

Steps:

  • Spray 10 mini loaf pans with vegetable oil cooking spray.
  • In a 2-quart saucepan, heat the milk and marshmallow together over low heat.
  • Stir constantly, because condensed milk scorches easily, until the marshmallows are melted.
  • Remove the mixture from the heat.
  • Combine the cracker crumbs, pecans, coconut, dates and cherries in a large bowl.
  • Add the bourbon to the milk mixture and pour over the crumb mixture.
  • Mix well with your hands.
  • Scoop the mixture into the prepared pans and press down firmly to mold into shape.
  • Refrigerate for 2 days.

1/3 cup orange juice concentrate
2 cups miniature marshmallows
1 package (13-1/2 ounces) graham cracker crumbs (4 cups)
1 cup raisins
1 cup chopped mixed candied fruit
1 cup chopped walnuts
3/4 cup chopped dates
1/4 cup halved candied cherries
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves

Steps:

  • Line a 9x5-in. loaf pan with waxed paper; coat the paper with cooking spray; set aside. In a saucepan, combine milk and orange juice concentrate. Add marshmallows; cook and stir until marshmallows are melted and mixture is smooth. Remove from the heat. Stir in remaining ingredients; mix well. Pat into prepared pan. Cover and refrigerate for at least 8 hours.

1 lb miniature marshmallow
14 ounces sweetened condensed milk
1/2 lb butter, melted
1 cup pecans, chopped
1 cup walnuts, chopped

1 cup candied fruit
8 ounces crushed pineapple, drained
2 cups flaked coconut

Steps:

  • Warm the opened can of Sweetened Condensed Milk in a saucepan of boiling water to make it easier to pour. Add the milk to the Melted Butter and Marshmallows stirring to combine well. Combine the wet mixture with the remaining ingredients. Pack into a buttered dish or pan. Let set overnight. Keep in refrigerator. If too dry add more condensed milk.

This is an awesome recipe. Only five ingredients and pretty simple to make (even easier if you have a food processor).

Number Of Ingredients 5

1 lb vanilla wafer, crushed
2 cups dates, minced finely
1 cup candied cherry, minced finely (optional)
1 lb nuts, diced finely (pecans or walnuts)
1 cup sweet Eagle Brand Condensed Milk

Steps:

  • In a large bowl combine wafers, dates, cherries (if using), and nuts.
  • Mix well, then pour Eagle Brand Milk over and continue to mix until all dry ingredients are saturated with the milk. You may have to use your hands to mix as this mixture is quite stiff.
  • You might have to add a little more milk or water- but only a little at a time.
  • Line a loaf pan with waxed paper letting it extend over the sides some.
  • Pack the mixture in the prepared pan, leaving no spaces. Refrigerate 2-3 days before slicing to serve. Slice thinly and refrigerate remaining cake.
