ROASTED DUCK BREAST WITH PLUM SAUCE

- For the sauce, fry the shallot in the oil for 5 mins or until softened but not coloured. Add the plums and sugar, stirring for a few mins until the sugar has dissolved. Add the red wine and stock, then simmer for about 15 mins, stirring occasionally, until softened and slightly thickened. Keep warm or leave at room temperature for up to a day before reheating to serve.
- Meanwhile, heat the oven to 180C/ 160C fan/gas 4. Score the skin of the duck breasts with a sharp knife and season well with salt and pepper. Heat a non-stick frying pan and place the duck breasts in, skin-side down. Fry for 6-7 mins, then turn and add the thyme, star anise and butter. Allow this to melt, basting the duck with the juices, then transfer everything to a small roasting tin and finish in the oven for 5-6 mins for pink or 10-12 mins for well done.
- When the duck is ready, baste again with the juices, then rest for 5 mins while you finish everything else.
- To serve, thinly slice each duck breast on a chopping board. Arrange on each plate along with a spoon of the Creamed potatoes, some of the plum sauce and the Buttered spinach.

PORK WITH PLUM SAUCE

- Whisk 1 tablespoon wine, the ginger and 2 tablespoons ice water in a large bowl. Whisk in the flour and 1 teaspoon salt. Add the pork, turning to coat; refrigerate while you prepare the sauce.
- Remove the zest from the orange in wide strips using a vegetable peeler. Put the zest in a skillet and squeeze in the juice. Whisk in the vinegar, honey and the remaining 3/4 cup plus 3 tablespoons wine. Add the mint and cook over medium-high heat until syrupy, 10 to 15 minutes. Add the plums and cook until slightly soft, about 4 minutes. Remove from the heat and discard the mint. Swirl in the butter, if desired, and season with salt.
- Heat 1/4 inch peanut oil in a large nonstick skillet over medium-high heat. Fry the pork until golden and crisp, 4 to 5 minutes per side. Transfer to a paper towel-lined plate to drain. Season with salt and serve with the plum sauce.

PLUM SAUCE

- Place a pan on a high heat with a dessert spoon of vegetable oil, when hot add in the plums and cook until coloured and slightly softened (approx 2 minutes).
- Pour in the wine and star anise (if using) and reduce by 1/3.
- Add in the stock and jam, mix in and simmer for 10 mins.
- When the 10 minutes are up, set the sauce aside in a warm place until the duck is ready. If the sauce is too thin, mix a small teaspoon of corn flour with a little cold water and stir into the sauce.

- Place all of the ingredients in a medium saucepan and bring to a boil over medium heat.

- Place all the ingredients except for the spice mixture in a medium-sized pot and bring to a boil. Reduce the heat to medium-low and simmer uncovered for 30 minutes. Use an immersion blender or transfer to a blender to puree until smooth (then return to pot).
- Place the whole spices (skip if using store-bought five spice powder) in a small dry pan and toast over medium-high heat just until fragrant. Be careful not to scorch the spices or they will taste bitter. Let the spices cool and then place the whole spices in a piece of cheesecloth tied shut with string or in a tea sachet. Do the same if using store-bought ground five spice powder.
- Place the spice packet in the pot with the plum sauce and continue to simmer uncovered for 25-45 minutes until the sauce is thickened to the desired consistency. Discard the spice packet. Let the sauce cool. Store in the fridge in an airtight non-reactive container. Will keep for up to 2 weeks.
- CANNING INSTRUCTIONS: Ladle the hot plum sauce into sterilized jars, seal with the lids and process in a boiling water canner for 15 minutes. Turn off the heat and let sit for 5 minutes. Remove the jars and let sit undisturbed for 24 hours then check the seals. Will keep in a dark, cool place for at least a year.

We have a Satsuma plum tree in our backyard that produces loads of plums every year. I'm always trying to come up with new ways to preserve plums. Because I used very purple-red plums, the color of this plum sauce is not what most people are used to when they open a jar of commercial plum sauce. But, I think this one is very yummy!

- Add plums, onions, ginger, garlic and water in a large saucepan and heat until it comes to full boil. Turn down heat to low and cook for additional 30 minutes. Stir occasionally.
- With a food mill press through or blend using a blender in batches.
- If you like your sauce very smooth without the added fiber from the plums, run it through a sieve after using food mill or blender. This is the method I prefer and makes for smoother sauce.
- Clean the saucepan and return the sauce to the pan.
- Add sugar, vinegar, coriander and salt. Bring to boil and reduce to barely simmer and cook for additional (about) 1 hour.
- Fill the sterilized jars and process in boiling water bath for 15 minutes.

- You will need to pit the plums sooner or later. If you are using domestic, freestone plums, cut them in half and pop out the pit. Most plums, however, have fruit that sticks to the pit. In this case, you can do one of three things: Use a cherry pitter to remove the pits; slice and cook, then strain; or freeze the plums whole to soften, then cook and strain. Freezing loosens the fruit's grip on the pit. Either way you will need some way to strain the pulp from the pits. I use a simple food mill.
- I cook the plums in two stages. In the first stage, I put just a little water in the bottom of a heavy pot and add all the plums. Turn the heat to medium and, once they are simmering a little, use a potato masher to squash them as they cook. Keep agitating the plums as you simmer them gently -- you will probably need to turn the heat down at some point -- until most of the flesh comes off the pits. This takes about 20 to 35 minutes.
- Move all the plums to a food mill. Pick out as many pits as you can right off the bat. Mill the plums into a coarse puree, removing pits as you go. This is actually really easy with domestic plums, as both the pit and the plum itself is larger than its wild cousin. Wild plums are only about the size of a large cherry, so this stage will take a bit longer with them.
- Once the cooked plums are free of pits, return them to the pot along with all the other ingredients. Simmer gently for another 30 minutes, until all the flavors are melded and the garlic, shallot and ginger have softened. Pour everything in to a blender and puree until smooth.
