MAN PLEASING CREAMY CHEESE POTATOES
Every time I make these creamy cheese potatoes and serve them whether at home, friends or church the men rave about them and they send their moms, wives or girlfriends over for the recipe. This recipe is very easy and fail proof. I hope you enjoy my recipe.

Steps:
- Butter casserole dish.
- Slice potatoes real thin.
- Cook all other ingredients and 3/4 cup cheddar cheese in sauce pan.
- Layer potatoes and sauce. Sprinkle remaining 1/4 cup cheddar cheese on top.
- Bake @350 degrees 30-40 minutes until hot and bubbly.
CHEESY AND CREAMY PARMESAN MASHED POTATOES

Steps:
- Place potatoes in large saucepan. Add broth; bring to boil on medium heat. Cover; simmer on medium-low heat 15 min., stirring after 8 min. Uncover; simmer 5 to 6 min. or just until potatoes are tender and most of the broth is absorbed.
- Add Neufchatel; mash potatoes on low heat just until Neufchatel is melted and mixture is well blended. Add sour cream and Parmesan; mash and stir until potato mixture is blended and heated through.

EASY CHEESY POTATOES (FUNERAL POTATOES)
Easy Cheesy Potatoes (also known as Funeral Potatoes) are an easy, creamy, comfort food casserole perfect for potlucks, cookouts, family gatherings, or for any everyday meal, for that matter. Loaded with cheesy deliciousness, they're always a crowd-pleasing favorite.

Steps:
- In a large bowl, combine thawed hash brown potatoes, chopped onion, cream of chicken soup, sour cream, shredded cheese, the 1/2 cup melted butter, salt, and pepper. Stir together until well combined.
- Spoon mixture into a lightly greased 9x13-inch baking dish.
- In a small bowl, combine crushed Corn Flakes and the 1/4 melted butter. Toss to coat all the Corn Flakes in butter. Sprinkle evenly over potato mixture.
- Bake at 350℉ for 45 minutes, until heated through and bubbly around the edges.
- For make-ahead prep, assemble potato mixture and refrigerate, leaving off the Corn Flakes topping. At baking time, remove from refrigerator and allow to stand at room temperature for 30 minutes before baking. Top with Corn Flakes topping just before baking, and increase baking time a few minutes, if needed.

I work at a big box store; somehow I ended up having to cook for our Christmas party. The problem? I only had a deep fryer or an oven to cook in! I came up with these potatoes. They were a huge hit.

Steps:
- Spray a large food service pan (12x20-inch) with cooking spray.
- Place 1/3 of the potatoes into pan; sprinkle with salt, pepper, garlic, 1/3 onions, 1/3 bacon, and 1/3 cheese.
- Repeat layers for a total of 3 layers. Leave cheese off last layer (keep for later in cooking).
- Pour cream over top; dot with butter. Cover tightly with foil. Bake at 400°F for 1 hour 15 minutes.
- Uncover; sprinkle with remaining cheese. Return to oven for 15 minutes or until cheese is melted.

- Arrange Tater Tots in a greased 13-in. x 9-in. x 2-in. baking dish. In a bowl, combine the eggs, soup, sour cream, green pepper and onion until blended. Stir in the cheese. Pour over Tater tots. - Butter one side of a large (12x12") square of foil with room-temperature unsalted butter. Line a large rimmed baking sheet with another sheet of foil. Place a rack in upper third of oven; preheat to 400°.

- Scrub 3 lb. russet potatoes (about 6 medium), then peel. - Preheat oven to 400F with rack on lower middle position. In a bowl, mix together all the cheeses until combined. Set aside.
- In a skillet, melt butter on medium high heat. Saute onion and garlic in melted butter until softened, 2-3 min. Add flour and whisk until smooth and not grainy. Add milk and whisk to combine well. Add salt and pepper, whisking to combine.
- In a 9×13 glass baking dish, arrange half of the sliced potatoes, allowing them to overlap a bit. Sprinkle half of the cheese mixture over potatoes. Pour half of the milk mixture over the cheese. Top with remaining potatoes, followed by rest of the milk mixture (hold off on the remaining cheese until later.)
