My Grandma's Dinner Rolls Recipe is practically fool-proof. It is the perfect dinner roll recipe for all your holiday meals.

1/4 cup sugar
2 packets active dry yeast
2 cups milk (scalded and cooled to between 105 and 110 degrees F)
1 stick (8 tbsp) unsalted butter
2 large eggs
6 cups all-purpose flour
3 tsp salt

Steps:

  • Place milk in a microwave-safe glass measuring cup. Microwave for 4 minutes. Place in refrigerator and allow to cool to between 105 - 110 degrees F.
  • Melt butter and set aside to cool.
  • In the bowl of a stand mixer fitted with the dough hook, combine the 6 cups of flour and salt.
  • Remove the milk from the refrigerator and whisk in the yeast and sugar. Allow to rest for 5 minutes.
  • Beat the 2 eggs into the melted butter. Add the yeast, sugar and milk mixture to the flour and salt and knead on low speed until dough begins to come together. Stop mixer and add the eggs and melted butter. Knead the dough, scraping down the sides of the bowl if necessary, for 6 minutes.
  • Remove the dough hook and bowl from the stand mixer. Cover the dough ball in the bowl loosely with a towel.
  • Place the dough bowl in a warm spot and allow to rise for about 60 minutes or until dough is doubled in size.
  • Gently push down on the dough to deflate. Place on clean counter and evenly divide dough into 8 log-shaped pieces, using a bench scraper or sharp knife.
  • Cut each of the eight dough logs into four equal pieces, giving you 32 rolls. Gently cup each roll in your hand to "plump" them up a bit in the center.
  • Place the rolls in well-greased baking dishes, spaced about 1/2-inch apart. Place dishes in a warm spot and cover loosely with a towel. Allow rolls to rise in baking dishes for 60 minutes more.
  • Bake at 375 degrees for 14 - 18 minutes. Watch closely in the last few minutes to make sure tops don't over brown.
  • Brush the tops of the rolls with melted butter when they come out of the oven. Serve warm.

This recipe is one of our family traditions. We don't know how old it is, but it is at least Depression Era (no milk, no eggs). It was handed down from my Grandma Pearl Nash. She never wrote down the recipe, always measured by memory and her hands. She developed breast cancer in the early 60's and shortly before she died. My Daddy asked her to measure out all the ingredients so the recipe would not be lost. He carried her into the kitchen, where she carefully placed the ingredients on newsprint paper. My mama (who my kids called Tutu) shifted the ingredients into measuring cups and spoons to record the amounts.

2 ½ cups warm water
1 ½ tablespoons active dry yeast
½ cup white sugar
1 tablespoon salt
¾ cup shortening (such as Crisco®)
7 cups all-purpose flour, divided, or more as needed
½ cup butter, melted

Steps:

  • Dissolve yeast in warm water in the bowl of a stand mixer fitted with the dough hook. Stir in sugar and salt until you see foam rising. Add 3 cups flour and 3/4 cup shortening; mix with the dough hook until the mixture is the consistency of a thick pancake batter.
  • Fill a pot with hot (not boiling) water.
  • Remove the mixer bowl and cover it with plastic wrap and a towel. Place the bowl over the pot of hot water, making sure the bottom does not touch the water. Let rise until doubled in size, 45 minutes to 1 hour.
  • Place the bowl back on your stand mixer and gradually mix in remaining 4 cups flour until dough is smooth and elastic; you may need to add up to 1 additional cup.
  • Heavily grease two 9x13-inch pans with shortening.
  • Divide dough into 24 balls. Place 12 balls into each of the prepared pans; cover with plastic wrap and a towel. Let rise in a warm area until doubled in size, about 1 hour; balls will start out at about 1 1/2 inches in diameter but will rise and touch the sides of the pans.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bake rolls in the preheated oven until golden brown on top, 25 to 30 minutes. Remove from the oven and brush melted butter over top.

2 cups milk
1/2 cup cornmeal
1/2 cup butter or margarine
1/2 cup sugar
2 teaspoons salt
1/2 cup water
2 teaspoons quick-rise yeast
1/2 cup warm water
2 eggs, well-beaten
3 to 5 cups flour, as needed

Steps:

  • Cook milk, cornmeal, butter or margarine, sugar, and salt in medium saucepan until slightly thickened. Add 1/2 cup water and mix well. Set aside to cool. Soften active dry yeast in warm water (110 degrees F). Combine cornmeal mixture, yeast, and 2 well-beaten eggs. Add enough flour to make a soft dough. Place in greased bowl, turning once to grease surface and cover. When dough has doubled in size, cut and shape dough into dinner rolls. Let rise in warm place, about 1 hour. Preheat the oven to 375 degrees F. Bake rolls for 12 to 15 minutes.

These are a Hill tradition at Thanksgiving - Grandma had these rolls mastered and always made it look easy. However it seems every year someone has a roll failure - no one does it like Grandma I guess. Prep time includes rising time.

3 3/8 active dry yeast (1 1/5 pkgs yeast)
2 tablespoons warm water
3 cups buttermilk
3 cups all-purpose flour
1/2 cup sugar
1/2 melted shortening or 1/2 canola oil
3 eggs, slightly beaten
1 teaspoon baking soda
2 teaspoons salt
5 cups flour
melted butter

Steps:

  • Mix the yeast into the warm water, then slowly add the buttermilk. Stir in 3 cups of flour - set to the side until double in size. Add the remaining ingredients -this is a fairly wet dough.
  • Put the dough into a large greased bowl - make sure to grease the top of the dough (I use cooking spray). Place plastic over the top and set aside until double again. At this stage you can also place in the refrigerator until the next day.
  • Place some flour on the counter and roll the dough out. Melt some butter in a shallow dish. Use a biscuit cutter and cut out the dough. Dip one side into melted butter, use knife to make a crease in the center, fold over pinching slightly and place on a greased jelly roll pan. Continue until pan is full - don't forget to leave a little room to let them rise. This recipe usually takes a large cookie sheet and a medium size sheet. Cover and let rise.
  • Cook for 20 minutes at 350 degrees.

GRANDMA'S NO-KNEAD YEAST ROLLS

These are wonderful rolls, especially when you slather them with butter. Even I can make these and I don't consider making bread as one of my specialities. My aunt and I compete at Christmas dinner to see who can eat the most. I'm not revealing my record. :)

5 cups flour
1 teaspoon salt
1/4 cup sugar
1/2 cup lard or 1/2 cup shortening (my grandma uses lard, I use shortening. I like hers better)
1 1/2 cups lukewarm water
1 (1/4 ounce) package yeast

Steps:

  • Dissolve yeast in the lukewarm water.
  • Sift together flour, salt and sugar.
  • Cut in lard.
  • Add yeast and water.
  • Mix until well blended and keep mixing until dough forms elastic strands.
  • Place dough in a greased bowl.
  • Cover and allow to rise 30 minutes.
  • Place dough on a floured board, smooth gently with your hands and roll out to desired thickness.
  • Cut out (and shape, if desired. I usually cut them out with a drinking glass then fold the dough in half.).
  • Place rolls in a greased pan.
  • Cover and allow to rise in a warm place for 45 minutes.
  • Brush with butter and bake at 450 degrees for 15 minutes.

1/2 cup water
1 teaspoon sugar
3 cups flour (add more or less to make a soft dough)

1 tablespoon cinnamon
1/2 cup brown sugar

Steps:

  • Mix sugar and water together.
  • Sprinkle with yeast.
  • Let stand 10-15 minutes or until dissolved.
  • Add flour, salt, sour cream, vanilla, and 3 tablespoons sugar.
  • Make into soft dough.
  • Roll out on floured surface, to within 3/8 to 1/2 inch thick.
  • Brush dough with melted butter.
  • Sprinkle with cinnamon and sugar (that has been stirred together).
  • Roll up, jelly roll fashion, cut into 12 slices.
  • Place in greased 9x13 pan.
  • Let rise until doubled.
  • Bake 350 degrees until lightly browned.
  • Ice while warm with 3 tablespoons evaporated milk, 1/4 tsp vanilla, 1 c icing sugar, that has been stirred together well.

This is an old family recipe on my husband's side. The family tradition is to dip these rolls in a cinnamon/sugar mixture. Everyone loves them! The prep time does not include the time you need to let them rise. Also the yield my differ depending on your preferred method of shaping your rolls. Although this may seem to have many steps, this recipe is quick and easy. Trust me! These were the first homemade rolls I've ever made. And the last, nothing else I have tried compares.

3 cups flour
1/4 cup sugar
1/2 cup boiling water
1/2 cup oil
1 egg
1 fresh yeast cakes or 1 dry yeast
2 tablespoons water
1 teaspoon salt
1/2 cup water, cold

Steps:

  • Preheat over to 425F Mix throughly sugar and oil.
  • Add boiling water and let cool.
  • Add egg and yeast (dissolve yeast in 2T water first).
  • Mix well.
  • Add cold water, salt, flour.
  • Do NOT knead.
  • Mix enough to ensure through mixing.
  • Kneading or over mixing will cause the dough to become tough.
  • Cover and refrigerate for at least 1 hour.
  • Can last 5 days.
  • Roll out on a lightly floured surface.
  • You may shape these into Parker House Rolls, Butterhorns or Rosettes, whatever you perfer.
  • Brush with melted butter (and garlic salt if you prefer.) and let rise for 1 hour.
  • (Although they come out better if you allow them to rise in this step, you may skip it.) Bake for 12-15 minutes.

GRANDMA LEE'S PARTY ROLLS

There's only one thing difficult about this recipe... being patient enough to let them rise! It's no wonder there's a party every time these rolls make an appearance.

2 Tbsp active dry yeast or yeast cake
1/4 c warm (to the wrist) water
1-1/4 tsp salt
2 Tbsp sugar
1 c boiling water
2 large eggs, beaten
3 c white all purpose flour, not bread flour
1/4 c Crisco shortening

Steps:

  • 1. Put yeast into 1/4 cup of warm water. Place shortening, salt and sugar in large mixing bowl. Pour boiling water over these, let stand until lukewarm, not hot! Add yeast/water mix. Beat in eggs. Stir in flour gradually using only enough to make a soft dough, barely past sticky stage to smooth. It will be very light dough! Beware of adding too much flour.
  • 2. Place in a large greased bowl. Cover with a plate. Refrigerate overnight (4 to 12 hours) until dough TRIPLES in bulk.
  • 3. Remove bowl from refrigerator. Gently punch down bread. Butter hands with soft butter. Pinch off small pieces of dough, shape into balls for four dozen small rolls or three-inch balls For large rolls, place about two inches apart on greased or sprayed oblong baking pan. Semi-flatten for biscuit shape. Brush lightly with melted butter on tops.
  • 4. Let rolls rise two hours in a warm place without drafts. Bake in a preheated oven at 425 degrees for 20 minutes until very lightly browned on top. Makes 2 to 4 dozen depending on the size you make. These rise very high and are seamless in the pan. They do not last on the table for more than an hour for a large family.

1 1/2 cups boiling water
1/2 cup margerine
1 cup cold milk
1 beaten egg(mix with the cold milk)
2 tsp salt
6 cups bread flour (or half all purpose & half bread flour
1 cup sugar
2 tsp dry yeast

Steps:

  • Add ingredients to the bread maker as listed. Set the bread maker on "dough" setting". Be careful that the water/margerine mix in the bread maker is not too hot or it will cook the egg when added, and also kill the yeast. It should be luke warm. After the dough cycle is done, turn out onto floured surface & roll out, making sweet rolls, or pinch off and make dinner rolls. Sticky caramel pecan rolls: Prepare round cake pan with non stick tin foil, then grease well with margerine. sprinkle with 1/2 cup brown sugar, then drizzle white karo syrup over sugar. Sprinkle with whole or chopped pecans. Roll out dough, spread with softened margerine. Sprinkle with sugar, then cinnamon. Roll into a log, then cut into rolls. Place in round pan, cover, let rise till nice sized. Bake at 350-375 till golden. Invert pan onto foil lined cooling rack. Wrap in saran wrap & tin foil when cooled. YUMMY! Raspberry cream cheese rolls: Roll out dough, spread with8 oz.softened cream cheese mixed with 1/3 or so cup sugar. Then squeeze raspberry or whatever fruit filling you like, cut into rolls. LIne pan with tin foil, non stick, cover & let rise. Bake as above.
