2 cups all-purpose flour, or more if needed
1 envelope Fleischmann's® RapidRise Yeast
2 tablespoons sugar
½ teaspoon salt
½ cup milk
¼ cup water
2 tablespoons butter OR margarine

Steps:

  • Combine 3/4 cup flour, undissolved yeast, sugar and salt in a large bowl. Heat milk, water and butter until very warm (120 degrees to 130 degrees F). Add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/4 cup flour; beat 2 minutes at high speed. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
  • Divide dough into 12 equal pieces; shape into balls. Place in greased 8-inch round pan. Cover; let rise in warm, draft-free place until doubled in size, about 30 minutes.
  • Bake in preheated 375 degrees F oven for 20 minutes or until done. Remove from pan; brush with additional melted butter, if desired. Serve warm.

This easy, basic, yeast, sweet-bread recipe uses only eight ingredients and can be made into dinner rolls, cinnamon rolls or sticky buns.

1 cup milk
⅓ cup white sugar
⅓ cup butter
1 tablespoon active dry yeast
4 cups all-purpose flour
½ teaspoon salt
2 eggs
2 tablespoons vegetable oil

Steps:

  • In a small saucepan over medium heat, combine the milk, sugar and butter. Heat until slightly warm to the touch then remove from heat and stir in the yeast. Let stand until foamy, about 10 minutes.
  • In a large bowl, stir together the flour and salt. Mix in the eggs, oil and the yeast mixture. Mix until dough pulls away from the sides of the bowl. Turn dough out onto a floured surface and continue to knead until the dough is smooth and elastic, about 10 minutes. Grease a large bowl with 1 tablespoon of oil. Place the dough into the bowl and turn once to coat. Cover and let stand in a warm place until double in size, about 1 hour.
  • Use remaining oil to grease a cookie sheet or 9x13 inch pan. For plain rolls, punch down dough and divide into 12 equal pieces. Roll the pieces into balls and place them into the greased pan side by side. Let dough rise for 20 to 25 minutes, or until almost double. Preheat oven to 375 degrees F (190 degrees C).
  • Bake for 20 to 25 minutes in the preheated oven, until rolls are golden brown.

Excellent yeast buns that can be used for hamburgers or just plain dinner rolls. They don't take long to make and have never failed for me!

5 cups all-purpose flour
2 (.25 ounce) packages dry yeast
1 cup milk
¾ cup water
½ cup vegetable oil
¼ cup white sugar
1 teaspoon salt

Steps:

  • Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.
  • Mix in enough flour to make a soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes.
  • Shape dough into 12 slightly flat balls, and place on greased baking sheet to rise until doubled in size.
  • Bake in a preheated 400 degrees F (200 degrees C) oven for 12 to 15 minutes.

SHORTCUT PLAIN STEAMED BUNS



Shortcut Plain Steamed Buns image

At Viet parties or special events, Chinese-style roasted meats accompanied by small steamed buns are usually on the menu. Shaped like half-moons, the plain buns are used like rolls: they are split open, a morsel of roast pork, duck, or char siu (barbecued pork) is tucked inside, and if there is a sauce, a little is drizzled over the meat. The resulting tiny sandwich is a great hors d'oeuvre or starter course. Steamed buns made from scratch take time. It is worth the effort to make your own dough for filled buns, such as the ones on page 265\. But when you want the buns only as a small side dish, a shortcut may be in order. I learned a trick from my Chinese American friend Victor Fong, who revealed that his mom always used refrigerated biscuit dough to make the plain steamed buns she served at home. (In their 1976 book The Gourmet Chinese Regional Cookbook, Calvin and Audrey Lee mentioned a similar practice, describing it as a "guiltily traded secret in America's Chinatowns.") The shortcut buns are surprisingly light and spongy, a perfect counterpoint to the rich meats. Serve them with slices of Honey-Roasted Duck Legs (page 94), Char Siu Pork (page 142), or roast pork or duck bought in a Chinese barbecue shop.

Yield makes ten 3-inch buns, to serve 3 or 4 as an accompaniment to roasted meats

1 package (7 1/2 ounces) refrigerated buttermilk biscuit dough (use regular, not jumbo size)

Steps:

  • Fill the steamer pan halfway with water and bring to a rolling boil over high heat. Line the steamer tray with parchment paper, leaving a few holes uncovered for heat circulation.
  • Unwrap the package of biscuit dough. Take 1 round of dough and use your fingers to stretch it gently until the center is about half of its original thickness. Fold the dough in half and place in the steamer tray. It will look like giant smiling lips. Repeat with the remaining dough rounds, spacing them a generous 1/2 inch apart and 1 inch away from the edge of the tray where condensation collects.
  • Place the tray in the steamer, cover, and steam the buns for 10 minutes, or until they have nearly doubled in size and look dry. Turn off the heat and wait for the steam to subside before lifting the lid, and then lift it away from you carefully to avoid condensation dripping onto the buns. Remove the tray and use a metal spatula to transfer the buns to a wire rack. If the buns are left to cool completely, transfer them to a plate and cover with plastic wrap to prevent them from drying out. (The buns may be steamed up to 4 hours in advance of serving and kept at room temperature. To serve warm, reheat in the steamer or microwave oven.)
  • Serve the buns warm or at room temperature. They are not served hot because the meats that they accompany are not served hot.

EASY ICED BUNS

500g white bread mix (we used Wright's)
100g caster sugar
1 egg
350g icing sugar
sprinkles (plus food colouring, if you like)

Steps:

  • Pulse together the bread mix and sugar in a food processor or table-top mixer. While the motor is running, add the egg and about 250-300ml lukewarm water, until a soft dough is formed. Knead on a lightly floured surface until smooth, about 5-10 mins. Leave in an oiled bowl, covered with oiled cling film, in a warm place until doubled in size - about 1 hr.
  • Knock back dough by squashing with your fist, and divide into 20 even-sized pieces - keep covered with a clean tea towel so they don't dry out. Shape each into a sausage and place on an oiled baking tray. Cover with oiled cling film and rise until doubled in size again.
  • Heat oven to 200C/180C fan/gas 6. Remove film and cook buns on top shelf for 8-10 mins, until golden. Cool on a wire rack. To decorate, mix icing sugar with a little water until stiff but spreadable - add food colouring, if you like. Dip in the top of each bun and scatter with sprinkles.

I attend a mom's group at my church and one Tuesday morning our "craft" was making buns. The experienced bun makers of the previous generation taught all of us young moms the craft of bun making. Now I am proud of my bun making and I am glad that I had a chance to acquire this new skill. (Thank you Mavis!) Prep time does not include rising time. Sometimes I will make a big batch of this recipe and then make breadsticks, hoagie rolls, small buns for kid's lunches, and even a batch of cinnamon rolls but adding cinnamon and sugar and rolling up the dough. All of these can be tucked into the freezer until you need them.

2 tablespoons yeast
2 tablespoons sugar
1 cup water
1/4 cup sugar
1 1/2 tablespoons salt
4 cups water
1 cup oil
1 1/2 teaspoons vinegar
13 -15 cups flour (white, whole wheat or a mix of each)
1/2 cup wheat germ (optional)

Steps:

  • Mix Yeast items and let stand in a large bowl (I like my tupperware thatsa bowl!).
  • Knead out until dough is soft and does not stick to your hands.
  • Cover and let rise 45 minutes.
  • Punch down and let rise 30 minutes.
  • Shape into buns and let rise for 2 hours.
  • Bake at 375 for 15-17 minutes or until golden brown.

EASY QUICK BUNS

These are super easy, super quick buns. I get requests to take them everywhere we go. They are great for those last minute dinner guests, or a nice surprise for breakfast. They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

  • Mix in enough flour to make a soft dough (2 - 2 1/2 Cups).

  • Shape dough into 12-15 small balls and place on greased baking sheet to rise until doubled in size. (approx 45 Mins).
  • Bake in preheated 400 degree oven 12-15 minutes.
